jeon

Pajeon, which literally translates to green onion/scallion pancakes, are Korean pancakes that can easily be customised to your liking. For my version, I drew inspiration from Haemul Pajeon which are Seafood and Green Onion Pancakes. But of course since this is a vegan pajeon, I used king oyster mushrooms to mimic the texture of squid since it has a rubbery texture. I also added some extra vegetables such as carrot and onion for that extra crunch.  I also made my own dipping sauce to pair with this vegan jeon or pancake.

Vegan Pajeon 파전 (Korean Scallion/Green Onion Pancakes)

all purpose flour (, 130 grams)

tbsp baking powder

tbsp corn starch (or potato starch, 27 grams)

salt

turmeric powder (optional

water

tbsp sesame oil

onion

carrot

scallions onions

oyster mushrooms (halved then thinly sliced (see notes))

green chiles

Neutral oil (for cooking)

sauce

Vegan kimchi

Sundubu Jjigae (or Korean Soft Tofu Stew)

In a large mixing bowl, add in all the dry ingredient. Mix well.

Slowly pour in the water while mixing. Mix until you’ve reached a batter consistency. Add the sesame oil and then mix. If the batter is still too thick, you can add 2-4 tbsp more water.

Another option for the batter is to mix in the veggies into the batter and mix evenly to coat. If doing so, you&#039;ll just need to evenly spread the batter with the veggies later on when cooking.

Preparing the pancake batter

Heat a medium/large non-stick pan over medium high heat. Note that the size of your pancake will depend on the size of your pan.IMPORTANT: I highly recomment using a non-stick pan for the best results and so that your pancakes do not stick to your pan.It&#039;s also important that your pan has been preheated well and is hot before you add in the oil and the veggies/batter.

Add enough oil to add to coat the surface of the pan. Once hot, add in the sliced onions,  carrots, scallions, chiles, and mushrooms—basically enough veggies to almost cover the pan. Leave to cook to a tender crisp for 1-2 minutes.Skip this step if you mixed the veggies into the batter.

Scoop around half of batter into the pan and carefully spread to cover the vegetables. Note that the amount you add will depend on the size of your pan.

Place more veggies on the top of the pancake and carefully press down onto the batter. Lower the heat to medium. You can cover the pan to allow the inside of the pancake to cook especially if you’re making a thicker pancake. Cook for 4-5 minutes over medium heat.

Once the sides start to dry up, carefully scrape the sides and the underneath of the pancake with a spatula to ensure it hasn’t stuck to the pan. Once it’s golden brown underneath and crisp to your liking, carefully flip the pancake with a spatula. Cook the other side until golden brown and crisp. Repeat this for the rest of the batter.

Slice your pancakes into small squares or bite-sized pieces. This is best enjoyed with a good dipping sauce but you can enjoy it plain too! See dipping sauce recipe here.I also find it a lot easier to cut the pancakes using a pair of scissors.

How to enjoy your jeon? I love mine with a hearty Sundubu Jjigae (Korean Soft Tofu Stew) or Jjajangmyeon. Best enjoyed with some Vegan Kimchi, too!

Cooking the pancake

Store in an air-tight container and refrigerate. Pan fry the pancakes or pajeon on a pan for 2-3 minutes on each side until crisp.

Chive pancake (Buchujeon: 부추전)

all-purpose flour

Asian chives (buchu in Korean), chopped (about 1½ cups)

¼ cup onion, chopped

vegetable oil

This way, I used up some left-over kkaennip once - I hadn&#039;t the time to prepare jangajji then and just tossed the leaves in the freezer for soup (maeuntang). Some time later, we had Korean guests (friends from Busan), and no buchu or chives for haemul-pajeon - but we needed some anju ... ;o) Bye, Sanne.

The Korean grocery near my work makes these with a flour that has a consistency very much like tteokbukki: kinda chewy, a little translucent, definitely not wheat flour. I like them, except they use too much oil and I was going to try to make some at home. Thanks! Also, I love to add dandelion greens chopped up to your recipe. They are very good in combo with the buchu. And I usually use half white flour, half wheat flour. I don&#039;t eat meat, so I eat more whole grain stuff, and the bonus is that I think wheat flour makes them brown better. Both changes work very well with your wonderful versatile recipe!

Make batter

Combine the flour, ¾ cup water, and fish sauce in a medium sized bowl and mix well. Stir in the chives and onion.

Cook pancake

Heat a large nonstick skillet over medium-high heat. Add 1 or 2 tablespoons of the oil to the hot skillet and swirl it around to coat. Scrape all the chive batter into a mound in the center of the skillet and spread it evenly so that it forms a thin, round pancake, about 11 to 12 inches in diameter. Cook until lightly browned and crisp on the bottom, 3 to 5 minutes. If your skillet is small, divide the batter in half and cook 2 pancakes one, at a time.

Turn over pancake

Shake the skillet to check its crispness. You should be able to hear the crispy pancake swish around in the nonstick pan. Turn the pancake over with a spatula and drizzle the remaining 1 or 2 tablespoons of oil around the edge of the skillet so that it runs under the pancake.buchujeon Cook for 2 to 3 minutes, pressing the pancake down occasionally with the spatula until the other side is crisp. Turn the pancake again and cook for another 2 to 3 minutes, until it’s crisp on both sides.

Finish

If you want to make both sides of this pancake crunchy, cook it over high or medium high heat and use a generous amount of cooking oil. And be sure to cook it in a non-stick skillet so that the pancake won&#039;t stick to the pan. Ingredients: Serves 2 &frac34; cup all-purpose flour. 2 teaspoons fish sauce or 1&frac12; teaspoons kosher salt 4 ounces Asian chives (buchu in Korean), chopped (about 1&frac12; cups) &frac14; cup onion, chopped. 2 to 4 tablespoons vegetable oil. I have been making these kimchi pancakes and veggie pancakes for my family for months now. My family ask for them regularly. My only concern about making them so much was the oil...they are basically fried. We try to limit oil in our diet, and we are vegetarians, very health-conscious. So I am always modifying recipes, trying out ways to make them just a little healthier. Yesterday I decided to try baking kimchi and veggie pancakes. I thought they would probably be ok..edible, but not crunchy like they are when fried. Well, I was totally shocked! They came out of the oven crunchy, and tasted pretty much the same as when fried in the skillet. This is how we will make them from now on, and I think they may become an almost daily food for us, since we don&rsquo;t need to worry about the oil. I baked them at 400 degrees on a cookie sheet lined with parchment paper. I made them into 6&rdquo; diameter pancakes. So individual size. I don&rsquo;t know how long I baked them. It was probably nearly an hour.

We add eggs to this. It adds a softer more custard texture. Very tasty

Combine the kimchi, kimchi brine, scallions, sugar, flour, and water in a medium bowl and mix well with a spoon

Heat skillet

Heat a 12-inch nonstick skillet over medium heat. (If you don’t have a 12-inch skillet, use a smaller skillet to make 2 pancakes.)

Add vegetable oil

Add 2 tablespoons of the vegetable oil and swirl to coat the bottom of the pan.

Add batter

Pour the batter into the pan and spread it with the back of a spoon or a spatula to make a large circle.

Cook

Cook until the bottom is golden brown and crisp, 3 to 5 minutes.

Flip the pancake

Carefully turn the pancake over. Drizzle the remaining 2 tablespoons oil around the edges of the skillet, then lift the pancake with a thin spatula to allow the oil to run underneath and tilt the pan to spread it evenly.

Cook the other side

Cook until the bottom of the pancake is light golden brown and crisp, 3 to 5 minutes.

Flip again

Flip it one more time and cook for another minute.

Serve

Slide onto a large serving platter and serve immediately.

On a rainy day on the weekend, when a Korean family wants something special and cozy to eat, this is something anyone can make using the ingredients we have at home. Then mom will say: &quot;You want me to make kimchijeon?&quot; and everybody will say: &quot;Yayyy!!&quot; When kimchi is fermented, it tastes sour and pungent with a deeper flavor. All Koreans have well-fermented cabbage kimchi at home, it&#039;s pretty much a staple! We Koreans will always make more kimchi before the current batch runs out, so that means we often have both fresh kimchi and fermented kimchi on hand. Kimchi is available all the time for Koreans. I made a video for kimchi pancakes ten years ago (including my grandma&#039;s style of kimchijeon), and I decided it was time to update the recipe, remake the video in HD, and include all the tips from the questions that some of you have asked me over the years. The number one question was: &quot;How come my pancake isn&#039;t crispy in the middle?&quot; That&#039;s because you need to use a generous amount of oil, and make sure it gets under the pancake like I show you in the video and explain in the recipe below. Enjoy the recipe and show me some photos of your kimchi pancake day! : ) Ingredients. &frac12; pound well-fermented napa cabbage kimchi, chopped into small pieces, plus 2 tablespoons of the brine. 3 scallions, chopped. &frac12; teaspoon sugar. &frac12; cup all-purpose flour. &frac12; cup water. 4 tablespoons vegetable oil. Directions. Combine the kimchi, kimchi brine, scallions, sugar, flour, and water in a medium bowl and mix well with a spoon. Heat a 12-inch nonstick skillet over medium heat. (If you don&rsquo;t have a 12-inch skillet, use a smaller skillet to make 2 pancakes.) Add 2 tablespoons of the vegetable oil and swirl to coat the bottom of the pan. Pour the batter into the pan and spread it with the back of a spoon or a spatula to make a large circle. Cook until the bottom is golden brown and crisp, 3 to 5 minutes. Carefully turn the pancake over. Drizzle the remaining 2 tablespoons oil around the edges of the skillet, then lift the pancake with a thin spatula to allow the oil to run underneath and tilt the pan to spread it evenly. Cook until the bottom of the pancake is light golden brown and crisp, 3 to 5 minutes. Flip it one more time and cook for another minute. Slide onto a large serving platter and serve immediately.
