Make the xawaash: In a medium bowl, combine the cumin, coriander, turmeric, cardamom, black pepper, cloves, and nutmeg. Set aside.

Heat a medium oven-safe pan over medium-high heat. Add the vegetable oil, onion, tomato, garlic, and cinnamon stick. Cook until the onions have softened slightly, 5-6 minutes.

Season with salt, then add the vegetable stock cube and cilantro. Cook for 1 minute, breaking up the stock cube.

Reduce the heat to medium, then stir in the xawaash and soaked rice. Cook for about 3 minutes so rice grains lightly toast.

Pour in the hot water and increase the heat to high to bring to a boil. Cover the pot, transfer to the oven, and bake for 20 minutes. Check periodically to be sure the rice has enough water.

Remove the cooked rice from the oven and drizzle the red and orange food colorings on top. Gently mix so there are different colored grains.

Sprinkle the raisins over the hot rice, cover, and set aside.

To prepare the topping, mix the potatoes with the orange food coloring in a medium bowl (wear gloves to avoid stained fingers!).

Heat about 1 inch ( 2 cm) of oil in a large heavy-bottomed saucepan. Add the potatoes and cook for 5-6 minutes, then transfer to a baking sheet lined with paper towels to drain the excess oil.

In the same oil, fry the onion slices until browned and crispy, 2-3 minutes. Add the red peppers cooking for an additional minute. Drain on paper towels.

To assemble the rice, transfer the pilaf to a large serving platter. Top with the fried potatoes, crispy onions, and red bell peppers.

red bell pepper, stemmed, seeded and quartered

scotch bonnet pepper,

vegetable oil,

lb boneless chicken thighs, cubed

curry powder

parboiled long grain rice, washed

Add the tomatoes, red bell pepper, quartered onion, and pepper to a blender and blend until smooth.

In a pot over medium heat, add 2 tablespoons oil, diced red onion, chicken, and curry powder. Cook until onions are soft and chicken has browned, about 8-10 minutes. Remove chicken from pot and set aside.

Raise heat to medium-high, and using the same pot, add pureed tomato mixture, cooking until reduced by half.

Add in remaining oil, and fry sauce for 8-10 minutes.

Stir in chicken, along with rice, stock and thyme leaves.

Cover pot tightly with foil. Cover with lid and reduce heat to low, cooking for 30 minutes.

Once rice is cooked, fluff up before serving.

tsp garlic/onion powder

tsp ginger

Blend tomatoes, red bell peppers, habanero peppers, large red onions until consistency is smooth and set aside

Wash the rice thoroughly to rid off starch and set aside.

To a medium-sized pot on medium heat, heat canola oil and butter 

Throw in chopped onions and allow to fry for about 5 mins or until redness starts to fade

Pour in tomato paste and allow to fry for about 10-15 minutes, stirring continuously to avoid burning.&nbsp;

Add in your blended mixture, crayfish, Maggi, cayenne &amp; black pepper, white pepper, bay leaves, curry powder, garlic, thyme. Mix and fry for about 30 minutes, continuously stirring to avoid burning.

Add chicken stock and salt. Mix and allow cook for an additional 10 mins

Add in washed rice and a bit of water (if necessary), and reduce heat to low.

Cover pot with aluminum foil, to avoid heat from escaping through lid

Cook rice on low heat for about 30 mins&nbsp;

Once cooked, mix thoroughly to combine ingredients&nbsp;

Cover and let cook for an additional 10 mins.

To get the party Jollof flavor, turn up the heat and let the rice burn for about 3 mins. (Be careful with this step, so you don't burn the whole rice)&nbsp;

Jellof Rice (Oven and Stovetop Method)

(42 milliliters-56 milliliters) vegetable oil

onion (, diced, (red or white onions))

(1.6 grams) fresh thyme

(8 grams) minced garlic garlic

(4 grams) chicken bouillon

salt and pepper

Preheat oven to 350 degrees F. Rinse rice through water. In a half sheet baking pan

In a half sheet pan (12-13/16&quot; l. x 10-7/16&quot; w. x 2-1/2”) combine all ingredients and stir so that everything is fully combined.

Cover tightly with aluminum foil paper. Double if you can, it helps cook faster.

Gently place in oven and let it cook for about 70-80 minutes. Carefully remove from the oven and check after 70 minutes.  Since posting, I have retried recipes several times and it works best for my oven after 75 minutes. 

Remove carefully from the oven and let it rest for about 5 minutes. Then carefully remove the aluminum paper. Fluff rice with a fork, thrown in your add-ins and mix evenly. Serve warm.

Baking Method

Heat oil in a medium saucepan over medium-high heat.

Next add onions, thyme, and garlic, cook for about 2 minutes or until onion becomes soft and translucent.

Add rice, season with paprika, bouillon, salt, and pepper.

 Cook stirring often until fragrant, for about 30 seconds. and brown stirring occasionally, for about 2-3 minutes.

Pour tomatoes sauce, chicken broth, and hot pepper, if using any into saucepan.

Bring to a boil stirring once or twice. Reduce heat to low, cover saucepan and simmer until rice is tender and liquid is absorbed, for 15-18 minutes.

Remove pan from heat, let it sit covered for 5 minutes then fluff rice with a fork or serving spoon. Then throw in sauteed veggies and/or beef, chicken and shrimp and mix, if desired

Garnish with parsley and serve.

Stovetop Method

oz diced tomato, 2 cans

½ cups long grain rice, rinsed

Add onions and 2 tablespoons of oil to a blender and pulse until smooth. Transfer to a medium bowl.

Add the diced tomatoes, tomato paste, and habanero pepper to the blender, and pulse until smooth. Transfer to a separate medium bowl.

Heat the remaining ⅓ cup (80 ml) of oil in a large, heavy-bottomed pot over medium heat.

Once the oil is shimmering, add the onion puree and cook until the water has cooked out and the puree is starting to brown, about 10 minutes.

Stir in the tomato puree and add the curry powder, garlic powder, ginger, dried herbs,  and crushed bouillon cubes. Cook for 20-30 minutes, stirring occasionally, until the stew has reduced by half and is deep red in color.

Add the rice, mixed vegetables, and water. Bring to a boil, then reduce the heat to low and cover the pot with foil and a lid. Simmer for another 30 minutes, until the rice is cooked through and the liquid is absorbed.

Enjoy a version of the West African staple, jollof rice. It's a great partner to chicken, fish or salad and you can use a ready-made sauce if you prefer

Baked jollof rice

Heat the oven to 200C/180C fan/gas 6. Tip the rice in a sieve, rinse under cold water, drain and set aside. Put the peppers, onion, garlic, ginger and chilli, if using, in a food processor and blitz until chopped.

Heat the oil in an ovenproof casserole over a medium heat and fry the tomato purée for 2-3 mins, stirring often. Add the blitzed pepper mixture and fry for 5 mins more, then add the herbs, spices and 1 tsp salt. Fry for a further 1-2 mins, then stir in the rice to coat. Pour in the stock, stir, cover and bake for 45 mins until the rice is tender.

Jollof Rice is probably Nigeria’s most famous dish. This one pot meal is a staple in many West African households and has made its way to the West. Whether you want a simple mid-week dinner or a flavorful contribution to the potluck, you can’t go wrong with Jollof!

Nigerian Jollof Rice Recipe

tomatoes (chopped, or 16-oz canned tomatoes)

To a blender, add the tomatoes, bell pepper, red onion and chili pepper. Blend until smooth.

Place a heavy 6-quart pot on medium-high heat. Add the oil and sliced yellow onion. Sauté for 2 to 3 minutes stirring regularly until browned on the edges.

Add the tomato puree to the pot along with the tomato paste, curry powder, thyme and bay leaves. Bring it to a boil.

In the meantime, rinse the rice. Then drain through a sieve.

Add the rice and broth mixture to the pot and bring to a boil.

Reduce the heat to low and cover the pot with a tight-fitting lid. Simmer covered for 10 minutes. Stir the pot to prevent sticking. Simmer 10 minutes more and check whether the rice is tender. Repeat this process until the rice is tender (note that different rice varieties cook at different speeds).

Optional: For crispy rice on the bottom, raise the heat to medium-high for 1 to 2 minutes.

Remove the pot from the heat. Serve the rice hot garnished with thinly sliced onion for garnish.

Add 1 can of plum tomatoes, 2 red bell peppers, 1 large onion and 1 scotch bonnet to blender and blend until smooth.

Add vegetable oil to cover the base of a large saucepan. Once the oil is hot pour in the blended mixture and cook on a medium heat for 10 minutes.

Add salt to taste, 1 tsp of thyme, 3 knorr cubes, 2 tsp of curry powder (optional),  4 tbsp or 1/4 cup of tomato paste (purée) and 1-2 cups of chicken stock. Stir and cook for another 15 minutes (see notes).

Add the rinsed white rice to the saucepan and stir. Then add 3 cups of water to cover the rice and leave to cook on a low/medium heat for 10-15 minutes (you may need to check the rice, add one more cup of water and turn the rice every 7 minutes to prevent burning).

Finally add bay leaves and 1/2 a thinly sliced onion (optional), stir and leave to cook on a low heat until done.
