Ultimate Vegan Just Egg Scramble

Preheat

Preheat a heavy-bottomed, non-stick pan over medium heat. Cook the onion and peppers for 4 to 5 minutes or until slightly softened.

Cook

Reduce heat to medium-low. Pour the Just Egg into the pan, and let stand for a few seconds. Using a silicone spatula, begin to scrape the egg away from the edges of the pan toward the center, similar to scrambling chicken eggs.

Serve

When the JUST Egg is almost fully set and curdled, add the cheese and chopped baby spinach. Toss and cook for 1 to 2 minutes until the spinach is wilted and cheese melted. Season with salt and pepper if desired. Serve hot.

Wow! I just made this recipe and it was so good!! Since becoming vegan, this was my first time trying JUST Egg, and it tastes better than real eggs by a long shot (I never liked eggs). Vegan Fried Rice

neutral oil, such as grapeseed or sunflower

garlic,

carrot,

peas edamame

vegetables

green onions, chopped

soy sauce or tamari (for GF)

Cooking happens quickly, so it&#39;s helpful to have all of the ingredients prepared and ready to go. Heat 1 tablespoon of oil in a wok or cast iron skillet over medium-high heat. Add the rice. Stirring occasionally, cook until the rice is toasted and has a lightly chewy texture, about 4 minutes. Transfer rice to a plate.

Saute

Add 2 teaspoons oil to the pan. Cook the vegetables, excluding green onion, until lightly softened, 2 to 3 minutes. Create a hole in the center, and pour the soy sauce, toasted sesame oil, and red pepper flakes directly onto the hot surface. Stir into the vegetables.

Scramble

If using ½ cup or less of JUST Egg, you should have enough room to scramble it by pushing the veggies to the side. If you would rather make an egg-heavy fried rice, transfer the veggies to a plate so that you&#39;ll have more room (JUST egg is very liquid and will spread). Add the vegan egg to the skillet/wok and cook for about 1 minute, tossing and scrambling.

Combine

Mix the scrambled JUST Egg into the veggies. Return the rice to the pan, and add the green onion. Stir to incorporate. Taste and season with salt, pepper, or additional soy sauce, if desired. Serve immediately.
