These kaju katli are the way they are actually meant to be - thin, smooth, melt in the mouth slices of cashew goodness.

Kaju Katli

cashews (- 160 grams)

sugar (- 100 grams sugar)

water

ghee (or coconut oil oil

Powder the cashew in a coffee grinder, blender or a dry grinder.

The cashews should be in powdered form and not become pasty or oily.

Grinding cashews

On a low flame heat sugar and water in a thick bottomed or non stick pan or kadai.

Meanwhile grease a plate or a tray and keep aside or keep butter papers ready.

When all the sugar has dissolved in the water, add the cashew powder. There is no consistency in the sugar syrup required like one string or two string. Just let the sugar dissolve in the water and then proceed with the next step.

Mix and keep on stirring the cashew mixture non-stop on a low flame.

The cashew mixture would start thickening.

Cook the kaju mixture for approx 7 to 9 minutes until the whole dough starts to come together.

Making dough

Remove the whole lump of the kaju dough from the pan and place it on your work surface or in a bowl or plate.

Add the rose petals and ghee or oil to the cashew mixture.

When the heat in the dough is hot enough to handle, then knead the cashew mixture lightly.

Flatten the dough and place it on a butter paper or on a greased plate or tray.

Place a butter paper on top and then using a rolling pin, roll gently the dough from all sides till you reach a thickness of 3 to 5 mm in the dough.

Remove the butter paper and let the rolled dough cool.

When completely cooled, using a sharp knife cut the cashew dough giving square or diamond shapes.

Gently remove the kaju katli with a butter knife.

Serve the kaju katli straight away or keep in an airtight container.

Kneading

Rose Barfi or Rose Milk Powder Burfi or Rose Pista Barfi is a delicious and flavorful, easy to make milk-based Indian sweet or mithai or no-bake fudge recipe prepared in less than 30 minutes using just 6 ingredients from your kitchen. 

Rose Barfi | Rose Milk Powder Burfi | No Bake Rose Pistachio Fudge

tbsp Ghee (or Brown butter)

Milk powder

Sugar (Fine variety)

tbsp Pistachios (roughly chopped)

Heat ghee in a pan. If you are using butter, heat till it melts and becomes light golden in color.

Add whole milk and bring it to boil on low flame. Keep stirring to prevent it from burning at the bottom.

Once you see the milk start bubbling add the milk powder in increments and keep whisking while adding so that there are no lumps. 

Continue stirring this on low flame for 2 to 3 minutes.

Step I

Add sugar, rose syrup and mix everything together. Continuously keep stirring on low flame for 8 to 10 minutes till the mixture forms like a ball or dough and ghee starts separating from the pan.  (Check tips)

Step II

Transfer this mixture to a greased plate or pan. spread and smooth with back of spoon or spatula. 

Garnish with nuts and press gently with a spatula. Let this set for about 1.5 to 2 hours. Once it sets, cut them into the desired shape and size.

Rose Pista Burfi or Rose Milk Powder Barfi is now ready. Store in air tight container for 5 days or in refrigerator upto 2 weeks. 

Step III

Kaju barfi is a simple fudge made of cashews and sugar. This recipe will help you to make thin kaju katli with a delicious melt-in-the-mouth texture. Recipe can be easily halved and made with ¾ cup cashews.

Kaju Katli Recipe (Kaju Barfi)

cashew nuts ((kaju - 200 grams))

water ((6 tablespoons, refer notes))

sugar

rose water (or 1/8 teaspoon cardamom powder

ghee (for cooking)

ghee (for greasing)

Add 1½ cups cashews to a blender jar and pulse a few times until it turns to a powder.

Do not run the blender for long time as the cashews begin to release oil and turn lumpy.

To ensure the powder is not very grainy sieve it and blend the coarse particles again.

The cashew powder will be slightly grainy.

Preparation

Add ¾ cup sugar and 90 ml water to a non stick pan. Heat &amp; dissolve it well. 

When the sugar melts off completely and begins to boil rapidly, add the cashew powder. Lower the heat.

Mix well to blend the sugar syrup and cashew powder.

The mixture must be smooth without any lumps.

Keep stirring and cook on a medium heat until slightly thick.

Then pour 1 teaspoon rosewater and one teaspoon ghee.

You can also add 1/8 teaspoon cardamom powder.

Cook till the kaju katli mixture turns thick and begins to leave the sides of the pan.

If it doesn&#x27;t then drizzle few drops of ghee again and mix.

At this stage the mixture should not look dry but has to be moist and sticky. 

How to Make Kaju Katli

To check if the mixture is ready. Turn off the stove and set the pan aside.

Take ¼ teaspoon of this kaju katli mixture and cool down a bit.

Roll it to a ball with greased fingers. You must get a ball that isn&#x27;t sticky.

Upon cooling completely this has to get the texture of the katli or fudge.

Next transfer the cooked kaju katli mixture immediately to a greased plate or parchment paper (butter paper).

Let the temperature come down to warm or slightly hot.

While the mixture is still slightly hot or warm, grease your palms and knead it for 2 to 3 minutes to a smooth crack free dough.  (refer video or picture below)

Another method is to place the mixture on parchment paper and cover it. Then knead it well with the paper over the mixture. Covering the mixture with parchment paper protects your palm from extreme heat.

( To fix ) If your kaju katli mixture tends to stick a lot, it means it is still underdone. So continue to cook the mixture for a little longer. If your mixture looks dry, sprinkle some boiled and cooled water and knead.

Place the ball on a greased aluminum foil or a butter paper and cover it. 

With the help of a rolling pin, roll it evenly to ¼ inch thickness.

Cool completely and cut to desired shapes. Store kaju katli in an airtight box.
