This Kale and Avocado Salad recipe is made by massaging kale with ripe avocados and flavoring it with tangy lemon.  Sprinkled with a handful of toasted pine nuts, it is a nutritious green salad perfect for any day of the week.

Kale Avocado Salad Recipe

ripe avocado (plus more as garnish)

lemon juice (freshly squeezed)

olive oil

garlic

salt

black pepper

kale (destemmed and chopped (5-6 cups of kale))

Place avocado, lemon juice, olive oil, garlic, salt, and black pepper in a large salad bowl. Using the back of a fork mash the avocado and mix it with the rest of the ingredients.

Add the chopped kale into the bowl and using clean hands massage the kale with the avocado lemon dressing until leaves are covered with the dressing and softened. Give it a taste for seasoning and add in if necessary. Set it aside to rest.

Place your choice of nuts in an empty skillet and toast over medium heat, stirring frequently, until lightly browned. This happens really quickly so be sure to keep a close eye on it.

Sprinkle the kale and avocado salad with the now-toasted nuts (while they are still warm). Give it a big toss. Taste for seasoning and add more if necessary.

Serve.

Kale Avocado Salad with Sesame Dressing

tuscan kale, stem removed (about 6 cups shredded kale)

avocado, sliced

red onion, thinly sliced

grape tomatoes,

almonds

sesame seeds

tbsp tahini paste

tsp sesame oil

soy sauce or coconut aminos

tsp honey

tbsp rice vinegar

water

Heat a small pan on medium heat and add the sliced almonds. Toast the almonds for about 2-3 minutes total until they begin to brown, tossing them every 30 seconds.

Prepare the sesame dressing by whisking together all of the ingredients. Start with 1 tbsp of water and add an additional tbsp if needed if the dressing is too thick. Set aside.

Chop the kale and add it to a large salad bowl with the sliced onions. Pour most of the dressing over the kale and onions and massage it into the kale using your hands or salad tongs.

Top the salad with the avocado, tomatoes, sesame seeds and toasted almonds and pour the remaining dressing over the top.

Mix together and serve with your favorite sides.

Kale Avocado Salad is loaded with creamy, crispy, crunchy, and cold health foods that will make your tastebuds sing.

Kale Avocado Salad

chicken breasts

cumin

chili powder

garlic salt

cinnamon

balsamic vinegar

garlic (smashed)

cilantro

agave

limes

salt (to taste)

kale lettuce mix

corn

garbanzo beans

avocado (sliced)

chopped cilantro

red onion

tortilla chips

Preheat oven to 400 degrees. Lightly spray baking sheet with non stick cooking spray and set aside. Toss chicken pieces in oil and seasonings. Spread evenly onto baking sheet and bake 15 minutes, turning once. Cool slightly.

While chicken is cooking, place all ingredients for dressing into high powdered blender. Blitz until garlic is fully incorporated. Pour into serving bowl.

Arrange each bowl with kale and other greens, corn, garbanzo beans, avocado, cilantro, onion, tortilla strips, etc. Top with chicken pieces and drizzle with dressing.

Love this idea!! Kale is my favorite but my fiancé doesn’t like it. I’m excited to sneak it in to this bomb salad! This style dressing is a staple in my life can’t wait to try this recipe out :)

Balsamic and cilantro dressing?  Count me in!  I never thought of using balsamic in a southwest style salad, but that sounds amazing and so different!  I'm currently obsessed with a prepackaged salad with am addictive balsamic dressing from Costco, so I'm excited to try this one!  I'm a vegetarian, so I'm going to sub some diced and cornstarch covered cooked tofu!
