kale pomegranate salad

This kale pomegranate salad (aka Christmas Salad) is super easy to whip up and makes for a festive and healthy option for the holidays.

Kale Pomegranate Salad with Goat Cheese (Christmas Salad)

kale,

oz goat cheese, crumbled

pomegranate seeds (about 1 large pomegranate)

walnuts

sea salt and pepper,

olive oil

balsamic vinegar

maple syrup

dijon mustard

garlic

sea salt

herbs (optional)

Make dressing: add all ingredients into a blender and blend until combined or add all ingredients to a mason jar and shake to combine. Dressing can be made up to 3 days in advance. Make it and store in the fridge until ready to prep the full salad.

In a large mixing bowl, combine kale with about 1/2 of the dressing and use your hands to massage the dressing into the kale. Add more dressing as needed (you may not need all of it). Reserve any leftover dressing for another use.

Add pomegranate seeds and goat cheese to the salad bowl (saving a little of each for topping), toss together and season with sea salt and pepper to taste. Add more dressing if needed. Transfer to a serving bowl, sprinkle with candied nuts, additional pomegranate seeds and goat cheese.

Wow! Amazing recipe. And I think this is both delicious and healthy. Definitely will try to make this recipe.

Delicious, easy salad!! And it’s beautiful and healthy too! I made this for Christmas Day dinner and it was a big hit with my family! Only modification I made was replacing the candied walnuts with toasted raw walnuts.

Love this salad. Everything about it is wonderful--taste, texture, appearance.I used a creamy feta (not too dry and crumbly).

I made the salad yesterday for Christmas Eve - it was delicious and easy to make! And it looks so festive too!

This salad is my new absolute favorite. The combination of flavors is perfection. I made this for Christmas dinner and it was loved by everyone! It will definitely be made many years to come (not to mention many times in between). Highly recommend!

Hearty kale, crunchy pomegranate seeds, and candied pecans combine to make the perfect winter kale salad with a pomegranate balsamic dressing. Naturally vegan and gluten-free!

Winter Kale Salad with Pomegranate Vinaigrette

(120 ml) pomegranate juice*

(60 ml) balsamic vinegar

extra virgin olive oil

Black pepper,

(147 g) pomegranate seeds

shallot,

(15 g) fresh parsley, chopped

(64 g) Stovetop Candied Pecans

Salt and black pepper,

Make the vinaigrette

add all ingredients to a small mason jar with a lid and shake vigorously until well-combined. Or, add all ingredients to a bowl and whisk well.

Make the

salad: add the kale to a large bowl and pour 1/4 cup (60 ml) of the dressing over it, then massage with your hands until darkened, tender, and reduced in size. Fold the pomegranate, shallot, and parsley into the salad, then add extra dressing, salt, and pepper to taste.

Serve

the salad on small plates, then top with candied pecans and an extra pinch of black pepper

This was SO GOOD! I'm a bad vegan and terrible at eating salads, especially kale based ones, but this is a new staple recipe for sure! I did leave out the parsley because I don't like the taste, but even without it was so flavorful and delicious. I might try it with a little quinoa added next time. Thanks for this recipe!

Pomegranate salad combines arugula, avocado, and pomegranate seeds with a sweet and tangy honey lemon dressing. Done in just 10 minutes!

Pomegranate salad

Avocado ((sliced thinly))

Red onion ((optional; sliced thinly))

Pomegranate seeds

Pecans

Goat cheese ((crumbled; or feta cheese))

Olive oil

tbsp Honey ((or natural sugar-free honey))

Lemon juice

Dijon mustard ((optional))

Sea salt

tsp Black pepper

In a large bowl or on a serving platter, combine the arugula, avocado, red onion, pomegranate seeds, pecans, and goat cheese.

In a small bowl, whisk together the honey vinaigrette: olive oil, honey, lemon juice, Dijon mustard (if using), salt, and pepper.

Pour the dressing over the salad and toss to combine.

I usually buy a salad from the deli to take to a group dinner but decided today to take something with pomegranates. Your recipe came up first so I made it. The guests loved it. One person wanted the recipe. I said look up pomegranate salad.

Super delicious! Thank you! All the flavors blend perfectly.

Swapped the goats cheese with chunky cottage cheese. Delicious.

Served this at Thanksgiving and all the guests loved it! The sweet and tangy flavors blend perfectly and the colors are so vibrant and festive! So excited to make this for our Christmas dinner.

The mix of sweet and tangy flavors was perfect in this salad! The addition of pecans to this salad was absolutely delish!

This salad was tasty and made a gorgeous presentation at the dinner party I hosted last weekend. All of my guests raved. Thanks for sharing.

I absolutely love pomegranate, but never know how to eat them other than tossed in a winter fruit salad. This is such a great winter salad with peppery arugula, creamy goat cheese, and just the right amount of sweetness from the pomegranates and dressing. I'm making it again as a side dish when my family is here for the holidays.

I had a few friends over last night for a little holiday celebration, and this salad was the perfect start to the meal. The pomegranate made it so beautiful, and that dressing was delicious. Definitely a big hit!

I loved this salad so much and I think the pomegranates were such a great addition to this dish! Thank you so much for sharing this amazing recipe.

Absolutely delicious. Will definitely be making again during the holidays.

This is so good! So many different flavors, but they all work so well together - absolutely loved it!
