This creamy Vegan Potato Kale Soup is the ultimate veggie loaded comfort food. It's filled with simple ingredients and is an easy make ahead dinner which makes it ideal for busy weeknights!

Vegan Kale and Potato Soup

olive oil

yellow onion, diced

carrot

celery

garlic,

oregano

thyme

sage

baby red potatoes, diced

vegetable broth

(13.5 oz.) can full-fat coconut milk

kale

white wine vinegar

Kosher salt

cracked pepper

parsley

croutons

Parmesan cheese

Heat olive oil a large pot over medium-high heat.

Add onion, carrots, and celery along with a couple large pinches of salt and pepper.

Cook for 8 minutes, stirring occasionally.

Add garlic, oregano, thyme, and sage. Cook for another minute, stirring frequently.

Add potatoes, veggie broth, and coconut milk along with a couple pinches of salt and pepper.

Reduce heat to low and gently simmer, covered, for about 10-12 minutes, or until the potatoes are cooked through and fork-tender, stirring occasionally. 

Stir in fresh kale and white wine vinegar. Season to taste with salt and pepper and enjoy!

We add veggie sausage and my kids like to eat it with rice. It’s SOOOO good. Very easy to make and super comforting.

I made this last night for dinner, I substituted the Kale with Escarole, easier on my digestive track. While I'm not a Vegan, this was fantastic for a snowy night dinner. Such great tasting comfort food. So quick and easy to make. With fresh baked harvest Bread from our local bakery. Wonderful, I'll next try some sliced Kielbasa with. Thanks for sharing.?

My first time using coconut milk, although I love it in restaurant recipes. When it was solid in the can, I thought it was bad. Had to Google what it was supposed to look like.  All good.  I used the mixed baby potatoes and one sweet potato. At the end added a dollop of plain yogurt for tang and extra creaminess. (Not vegan) We really like it.  Your photos are beautiful. Vegan husband LOVED this soup. Didn't have kale on hand so we used spinach.  did blend half of soup as I wanted it thicker. the aroma was fantastic. May add vegan sausage next time as suggested by another reviewer. Just curious what the vinegar does at the end?

Vegan White Bean and Kale Soup

White Onion (same

Carrots (same as 1/4 lb or 1 cup diced)

rib(s) Celery (same

Garlic (finely chopped)

28 oz can Diced Tomatoes

Vegetable Broth (or any broth)

tsp Sea Salt

tsp Italian Seasoning

tsp Crushed Red Pepper (optional)

Kale (or Spinach) (fresh or frozen)

Select &quot;Sauté&quot; on the Instant Pot and add the OLIVE OIL.

When the display reads &quot;Hot&quot;, add ONIONS, CARROTS, CELERY, and GARLIC; sauté a few minutes until slightly tender, stirring as needed.

Stir in TOMATOES, WHITE BEANS, VEGETABLE BROTH, ITALIAN SEASONING, CRUSHED RED PEPPER, and SALT.

Secure the lid and turn the pressure release valve to the &quot;Sealing&quot; position.

Press &quot;Cancel&quot; on the Instant Pot. Select &quot;Manual&quot; or &quot;Pressure Cook&quot; and set the Instant Pot on &quot;High&quot; pressure for 1 minute.Note: In real time, the pot takes about 15 minutes to pressurize and pressure cook the soup for 1 minute.

When the cycle completes, allow the Instant Pot to sit for 10-15 minutes, undisturbed, for a natural pressure release (NPR).

Turn the pressure release valve to the &quot;Venting&quot; position to release any remaining steam. Unlock and remove the lid.

Stir in KALE (or other greens); close lid and rest for 5 minutes to wilt the kale (keep pressure valve open to prevent pressure building again)

Press &quot;Cancel&quot; or allow the cooker to stay in &quot;Keep Warm&quot; mode.

White Bean and Kale Soup Instant Pot Instructions

In a 3 qt soup pot on medium-high heat, heat OLIVE OIL until it shimmers (about 2 minutes).

Add ONIONS, CARROTS, CELERY, and GARLIC; sauté a few minutes until slightly tender, stirring as needed.

Stir in TOMATOES, VEGETABLE STOCK, BEANS, SALT, ITALIAN SEASONING, and (optional) CRUSHED RED PEPPER.

Bring the bean soup just to a boil; then lower heat and simmer 10 minutes, stirring as needed.

Add KALE (or SPINACH) to the pot and continue simmering until kale is wilted.

White Bean and Kale Soup Stove Instructions

Serve warm. Garnish options: lemon zest, fresh parsley, croutons, or grated Parmesan cheese.

Refrigerate in an airtight container up to 5 days

To freeze, store in freezer-safe containers for up to 3 months.

Kale Soup

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrot, celery, garlic, rosemary, salt, thyme, and several grinds of pepper. Cook for 8 minutes, stirring occasionally, or until softened. Add the beans and broth. Simmer for 20 minutes.

Transfer half the soup to a blender and blend until smooth. Stir the puree back into the pot and add the kale and lemon juice. Cook, stirring, until the kale is wilted, about 5 minutes. If the soup is too thick, stir in water, ½ cup at a time, until it reaches your desired consistency. Season to taste (I usually add another ¼ teaspoon salt at this point) and serve with a drizzle of olive oil, croutons, and fresh parsley for garnish.
