Katsudon is a fried, panko-breaded pork cutlet with egg over rice and a favorite of Japanese restaurant-goers. Our Katsudon recipe is easy to make at home!

Katsudon Japanese Pork Cutlet and Egg Rice Bowl

pork

dashi stock or chicken stock

Season the pounded pork chops with salt and pepper, and dust with a light, even coating of flour. In one shallow bowl, beat the egg. Put the panko into another shallow bowl.

Add thin, even layer of oil to a cast iron pan or skillet over medium heat. The oil is ready when you throw a panko breadcrumb into the oil and it sizzles. Dip the pork into the egg to coat. Transfer the pork to the panko and press it evenly into the meat to get a good coating.

Carefully lay the pork chops in the hot oil and cook for 5-6 minutes on one side, until golden brown. Flip and cook the other side for another 5-6 minutes. Drain on a plate lined with a paper towel.

While the pork is resting, add the stock, sugar, soy sauce, and Mirin to a small bowl. In another bowl, lightly beat 2 eggs. Add a tablespoon of oil to a pan over medium heat, and add the sliced onion. Fry the onions until they’re translucent and slightly caramelized.

Pour the stock mixture over the onions. Slice your tonkatsu into pieces and place on top of the onions. Drizzle the egg over everything. Cook over medium low heat until the egg is just set. Serve over bowls of steamed rice, and garnish with scallions.

Katsudon is a dlicious Japanese dish made with rice topped with Tonkatsu and a sweet and tasty sauce. It's easy to make and is perfect for lunch or dinner.

Katsudon (Deep Fried Pork Cutlets Rice Bowl)

Dashi stock

Tonkatsu

tbsp green topping

Thinly slice the onion and cut the Tonkatsu into 1.5 cm (0.6inch) wide slices.

Lightly beat the eggs in a bowl and set aside.

Pour Dashi stock in a shallow frying pan and bring it to boil over medium heat.

Add sliced onion and cook till the onion softens.

Add Mirin, Sugar and Soy sauce and cook it for a few minutes.

Place the sliced Tonkatsu in the saucepan and pour the eggs over the Tonaktsu.

Cook for a further couple of minutes until the eggs are half cooked and slightly runny.

Serve rice in a large rice bowl.

Slide the Tonkatsu and egg and sauce over the rice.

Topp with chopped green shallots(scallions) or Mitsuba.

(210 grams) steamed rice

tsp hondashi (Japanese bonito soup stock powder)

Slice the onion into thin strips. Thinly slice the green onion (if using).

Crack the eggs into a small container. Lightly beat the eggs. Do NOT overstir it.

Slice up your chicken cutlet. Set aside.

Prep Ingredients

Mix together hondashi and water.

Add the soy sauce, mirin, and sugar. Stir to combine.

Make Sauce

Add the sauce and the onion into a small pan. Bring it to a boil over medium heat. Once the onions get softened, place your chicken cutlet into the sauce. Pour the eggs all around the chicken cutlet.  

Sprinkle on the green onion (if using). Cover and let it steam for about 1 minute. When the eggs are slightly set, slide everything over the rice. Enjoy~!
