Fall in love with this crispy and tangy low-calorie Vegan Pad Thai Recipe prepared with kelp noodles, cruciferous vegetables, and tofu. 

Vegan Pad Thai Recipe

avocado oil

red bell pepper, chopped

broccoli florets, raw

cauliflower florets, raw

water

red cabbage, shredded

mushrooms, sliced

(14 ounces) firm tofu, cut into 1" cubes

almond butter

coconut aminos

lime juice

sesame oil

ginger, powdered

turmeric powder

nutritional yeast

cayenne pepper

To prepare pad thai sauce, whisk all ingredients together in a bowl.

Heat a large nonstick skillet or wok over medium-high heat, add oil.

Add broccoli, mushrooms, cauliflower florets, and raw tofu if you are not using air-fried tofu. Saute for 4-5 minutes over high heat, browning the Tofu and Vegetables.

Carefully add 1/3 cup of water, and allow veggies and tofu to steam for 2 minutes.

Add cabbage and kelp noodles. Stir-fry for 2 minutes.

Add Sauce and Stir-fry for 2-4 additional minutes, or until sauce is evenly distributed.

Plate and serve with sliced green onion, fresh herbs such as cilantro and basil, toasted cashews, and lime wedges.

1L (4 cups) chicken stock

coriander, leaves

ginger,

tbs fish sauce

chicken breast

tbs each white (shiro) miso paste, brown rice vinegar and mirin (all from Asian food stores)

tbs coconut oil

lime

noodles

(100 grams) bean sprouts

spring onions, thinly sliced on an angle

telegraph cucumber, halved, seeds removed,

Thai basil, leaves picked

This pesto kelp noodles recipe is easy to make, delicious, &amp; low calorie.  Learn how to prepare and serve these noodles for a 10-minute lunch or dinner.

Pesto Kelp Noodles (Ready in 10 Minutes)

oz kelp noodles

juice of lemon

tbsp baking soda

water (enough

pesto sauce (see recipe below)

basil ((large stems removed))

tbsp pine nuts

garlic ((peeled))

juice of ½ lemon

yeast

tsp sea salt ((plus more to taste))

grapeseed oil ((plus more if needed))

tbsp water

black pepper and garlic powder (optional) (to taste)

First, soak the kelp noodles in a large bowl with warm water. Add the juice of 1 lemon and baking soda. Let stand for 10 to 15 minutes, or until the noodles are soft. Then drain and set aside to make the basil pesto sauce. 

Add fresh basil, pine nuts, garlic (I roasted my garlic but feel free to use unroasted garlic), lemon juice, nutritional yeast, sea salt to a food processor or small blender and pulse/blend on high until the mixture forms a paste. 

Add *grapeseed oil (sub for oil of your choice) a little at a time (pour in while the food processor is on, if possible)  and just scrape the sides down as needed. Following that, feel free to add 1 Tbsp of water or lemon juice until you reach your desired consistency. You should have a thick but pourable pesto sauce. (If avoiding oil, sub the oil with veggie broth or just use all water.)

Do a taste test and adjust the flavor as needed, add more nuts for nuttiness, garlic for more garlic flavor, nutritional yeast for that cheesy flavor, lemon juice for that lemony flavor, and sea salt for overall flavor. 

Pour the basil pesto over the kelp noodles and combine until everything is well coated. Enjoy!!

These gluten-free and vegan spicy sesame kelp noodles with stir-fried snow peas and broccolini make an easy and flavorful weeknight meal. 

Sesame Kelp Noodle Stir-Fry (Paleo, Vegan)

½ Tablespoon/22 milliliters coconut aminos

Tablespoon/ 15 milliliters toasted sesame oil

maple syrup

red pepper flakes

lemon juice

fine sea salt

broccolini, bottom of stems trimmed

Tablespoon/ coconut oil

snow peas, trimmed and strings removed

Tablespoon/9 g black sesame seeds

Tablespoon/ 14 grams cashews, chopped

In a small bowl whisk together sesame sauce...

In a small bowl whisk together sesame sauce ingredients until well combined.  Set aside.

Rinse kelp noodles and place in a large bowl. Fill bowl with enough filtered water to just cover the noodles and add the lemon juice and salt. Stir gently to combine and set aside for 10 minutes until noodles are soft. Rinse softened noodles again and drain well.

Heat the coconut oil in a large skillet over medium heat. Add the snow peas, broccolini, season with a pinch of salt and cook stirring often until bright green and tender (about 2 minutes).  Add rinsed and drained noodles, along with sauce and toss to combine.  Remove from heat top with sesame seeds and cashews and serve warm.

Prepare ingredients

Rinse your Shirataki under a warm water fully.

Roast shirataki

Roast the Shirataki noodles on medium heat in a pan or dutch oven.

Prepare your protein

Take a few pieces of fresh chicken and cook them in a pan as you would typically for other dishes.

Boil your veggies

Place all the veggies you plan to use into the boiling water and let it simmer for 1-2 minutes.

Rinse all under cold water

Once your veggies are softer, place them into a strainer and quickly run through with cold water. That will retain the color, and the veggies will stop cooking immediately.

Assemble

Ensure all ingredients (except avocado) are warm and your broth is boiling. Add the noodles into a ramen bowl first. Layer all other ingredients and add the chicken broth or soup stock as last.

Super simple kelp noodle salad with toothsome shiitake mushrooms and crunchy sesame covered in creamy, homemade peanut sauce is a satisfying meal that&#39;s a snap to make!

kelp noodles (cut

carrots

green onions (chopped (green parts only))

peanut butter

soy sauce

rice vinegar

juice of 1 lime

Sriracha sauce (optional. Or more, to taste, if you

ginger (coarsely chopped)

shiitake mushrooms (sliced)

sea salt

sesame seeds

Toss the noodles, carrots, and green onions together in a large bowl, separating the noodles as much as you can.

Combine the peanut butter, soy sauce, vinegar, lemon juice, water, hot sauce, and ginger in a blender or food processor and puree until smooth. Taste and add extra Sriracha, if you feel like it’s not hot enough for your taste.

Toss the noodles in the dressing and set them in the fridge to chill until you’re ready to serve.

Heat the sesame oil in a large pan on medium heat. Add the mushrooms and salt, and cook, stirring frequently, until they soften, about 5-7 minutes. You may need to add a little bit of extra oil by the teaspoon, if things get dry. Transfer to a plate with a clean dish towel or napkin on it, so any extra oil can drain off.
