This Hot Brown is an open-faced sandwich layered with turkey, crisp bacon, sun-ripened tomatoes and creamy cheese sauce. Quick, satisfying, and delicious, this classic diner-style sandwich is a great dinner.

Hot Brown Sandwich

lb deli smoked turkey sliced

Melt butter in medium saucepan over medium low heat. Whisk in flour; whisking continuously for 2-3 minutes. Slowly add milk; whisking continuously. Cook over low heat until thickened; stirring frequently. Whisk in ground cayenne pepper. Reduce heat and add cheddar and Parmesan slowly. Continue stirring until cheese is completely melted. Salt and pepper to taste.

Toast bread, microwave the deli meat for 10-15 seconds to get the chill off. Assemble sandwich by dividing the turkey over the four slices of toast. Add several tablespoons of the sauce to each sandwich. Top with tomato slices and 2 slices of bacon.  Divide the rest of the sauce between the sandwiches. Sprinkle with a little bit of grated Parmesan and a sprinkle of paprika.  Place under the broiler for 1-2 minutes or until lightly browned.  Make sure you keep an eye on the sandwiches under the broiler as I have always found broilers unpredictable.

How have I never had this sandwich? It looks amazing. I just love all the ingredients in it. Ooey gooey cheesey goodness.

A southern classic, the Kentucky Hot Brown Sandwich is loaded with a cheesy sauce, bacon and slow roasted turkey.

Kentucky Hot Brown Sandwich

salted butter

all-purpose flour

half and half

Pecorino Romano cheese (plus extra for garnish)

nutmeg

turkey breast

Texas toast (thick slices of bread, toasted with crusts trimmed)

Parsley

In a large, heavy bottomed saucepan, melt the butter and slowly whisk in the flour until a thick paste or roux forms.

Continue to cook roux for 2 minutes over medium-low heat, stirring frequently. Add the half and half to the pan and whisk until smooth.

Cook over medium heat until the mixture begins to simmer, about 2-3 minutes. Remove the sauce from the heat and slowly stir in the cheese until the sauce is smooth. Stir in the nutmeg, salt and pepper to taste.

For each sandwich, place one slice of toast in an oven safe dish and cover with half the turkey. Top with two slices of Roma tomato and cover with half of the sauce. Sprinkle the top with additional cheese and place under a broiler until the cheese begins to brown and bubble.

Remove fromn the oven and top with two pieces of crispy bacon. Sprinkle with parsley and serve immediately.

Kentucky Hot Brown Dip

onion

cream cheese,

garlic powder

cumin

mozzarella

turkey breast,

cherry tomatoes, halved

parsley, roughly chopped for garnish

Preheat oven to 400°F. Grease an 8-x-8-inch baking pan with spray, set aside.

In a saucepan, melt butter. Once melted, sauté onions until soft and slightly translucent, about 2 to 3 minutes.

Once the onions are soft, whisk in flour, forming a paste. Whisk for 1 to 2 minutes to cook off the rawness of the flour.

Add milk gradually, whisking continuously until the mixture thickens into a sauce, about 4 to 5 minutes.

Off of the heat add cream cheese, sour cream, nutmeg, garlic powder, cumin, paprika, and 1 cup of the cheese. Season with salt and pepper.

Pour the dip into the prepared pan. Topping with remaining 1 cup shredded cheese followed by the bacon and cherry tomatoes.

Bake for 20 to 25 minutes until bubbling and golden. To get the dip even more golden and crispy on top, broil the dip on high for 1 minute. Garnish with parsley, serve, and enjoy!
