keto apple crisp

Easy and delicious Low Carb “Apple Crisp” while not using apples. Zucchini mixed with apple pie spices and fresh lemon juice, and you can’t tell the difference. I dare you to try!

Healthy Keto Apple Crisp Recipe

zucchini

lemon juice

tbsp butter

golden monk fruit

½ tsp xanthan gum

cinnamon

tsp nutmeg

butter

pecans

almond flour

Peel and cut the zucchini. If the zucchini is on the larger side, then make sure to take out some of the seeds. 

In a dutch oven, turn heat onto medium-high and add the butter. Once butter is melted let it start to brown, but don’t burn it. Now that the butter is browned add the zucchini to the pan. 

Add cinnamon, nutmeg, and sweetener to the zucchini and stir well. Then pour in lemon juice, and add xanthan gum. 

Cook on medium heat for at least 20 minutes. Keep stirring mixture to make sure it doesn’t stick to the bottom of the pan. 

While the squash is cooking, start making the topping. In a food processor, chop the pecans. You can chop them by hand, but I find it way easier to use the food processor. 

In a small bowl combine the softened butter, chopped pecans, almond flour, and cinnamon together. To really mix it in well, you might need to use your hands. 

Once the squash is cooked, transfer it to a baking dish. Sprinkle the topping over the squash, you should have enough to completely cover it. 

Bake in the oven for about 30 minutes or until the top is crispy and the fruit is bubbling.

Wow, this is just like regular apple crisp, love it! Thank you for this recipe, so good. The only alterations I made was to double the amount of pecans for the topping as well as reduce the monk fruit by half, because the first batch was a little too sweet for my taste. Lastly, monk fruit bothers my stomach a little so I split the monk fruit in half with a couple squirts of liquid stevia. If you like apple crisp, MAKE THIS RECIPE!

This was delicious! And my husband - whom I have been doing Keto with for more than three years now, kept trying to guess what the fruit was... lol I refused to tell him. I did make a couple of substitutions- I wound up using about just a little over 1/2 cup of low carb almond granola (Natures Path grain-free) in the topping instead of pecans, (I'm allergic.) It only has about 6 net carbs per 1/2 cup so it didn't change carb count too much per serving and it was delicious. I'll be making this again! ( I'm also dairy-free right now so subbed plant-based butter- worked beautifully)  Yummy!!!

I do like it, but I don't love it because although the texture was really good like an apple crisp the apple taste was not there.  Maybe next time I will add an apple extract.  Thank you for the recipe.

Just tried this recipe. I used Swerve granulated sweetener. Next time I’ll use a little less it was a bit sweet. I’d also like to try the crust with brown Swerve sweetener. Thank you. It was delicious with a dollop of whipped cream. I finally have an low carb apple recipe I like.
