Before you think it's not possible to enjoy a low carb version of banana pudding, I've got news for you, it is totally possible with just a few adjustments to the classic many of us loved.

This easy keto banana pudding is a taste sensation! It is silky, creamy and just on the right side of sweet. Unlike other low carb banana pudding recipes, I&#039;ve found a way to use REAL banana and still keep the carb count low.

Low Carb Keto Banana Pudding

almond milk (or coconut milk)

heavy cream / double cream

tbsp powdered sweetener

tsp vanilla extract (optional)

xanthan gum

nutmeg

Mash the banana and set aside.

Put the cream, almond milk and powdered sweetener in a saucepan. Bring to a simmer over medium heat. Stir in the vanilla extract and take off the heat.

In a separate bowl, whisk the egg yolks until fluffy using an electric mixer. Add the mashed banana and blend until combined.

Slowly pour half the cream mixture into the egg yolks while whisking continuously. Then pour the warm cream and egg yolk mixture back into the saucepan with the remaining cream, whisking continuously with a balloon whisk or the electric mixer.

Slowly heat the pudding mix over a low heat while whisking continuously, about 5-7 minutes. The whisking ensures that the egg yolks don&#39;t cook and curdle.

Turn off the heat and sprinkle xanthan gum over the surface. Whisk vigorously one more time until well-combined.

Divide the mix between 4 dessert cups and chill in the fridge for about 1 hour. The pudding thickens further as it cools. Serve with a sprinkle of nutmeg or cinnamon and optional whipped cream.

In a medium saucepan over medium heat, combine the whipping cream and almond milk. Bring to just a simmer. In a medium bowl, whisk the egg yolks with the sweetener and salt until well combined.

Slowly whisk about half of the hot cream mixture into the yolks, whisking continuously. Then slowly whisk the yolk/cream mixture back into the saucepan and cook until thickened, 4 to 5 more minutes, whisking continuously.

Remove from heat and whisk in the butter and the extracts. Sprinkle the surface with xanthan gum or glucomannan and whisk vigorously to combine.

Divide between two small dessert cups and refrigerate 1 hour. Top with lightly sweetened whipped cream, if desired.

Add a few mini HighKey Snickerdoodle cookies and a slice of banana for presentation!

Awesome recipe!  I had a dozen left over egg yolks so I made the recipe x6.  Worked out perfectly!  This will be my new go-to recipe.  I may even try it with different flavors.  I am imagining Maple with some glazed nuts on top...

I made the banana pudding for guests yesterday. They all said they loved it. To me the flavour was lovely but the pudding was not smooth. I followed all of your instructions to the letter and didn’t alter a thing. I even dressed it up with slices of banana. I’m not sure if it’s supposed to be like that or not.

Delicious!  Doubled the recipe to fill four, 1/2-cup ramekins.  Easy and fast way to use up leftover egg yolks.  Mine tasted great, but turned out a little grainy.  So I must’ve added the hot cream to the eggs too quickly, and they curdled a little.  Didn’t affect how tasty it was though!  Nice to have that banana flavor again.

Or grass fed gelatin in place of xanthan gum.  There are no bloggers who will put in this info in recipes.

Oh my goodness this is so delish!  Even my husband Mr. Non-Keto loved it. What’s not to love about Carolyn’s recipes!!! 
I was short an ingredient so I had to change the almond milk. I used coconut cream. 
BONUS: I had baked Carolyn’s Cinnamon Crunch Cereal and served a chunk with the pudding. That was like eating pie crust and took me back to a childhood memory.
