Low Carb Breakfast Pizza

If you love leftover pizza for breakfast, you love this keto breakfast pizza with fresh crumbled bacon, basil and a creamy garlic sauce. Even a few eggs are cracked on the top for the ultimate slice of heaven first thing in the morning!

Keto Breakfast Pizza

mozzarella cheese, plus ½ cup for topping

baking powder

xanthan gum

salt

full fat ricotta cheese

garlic

mozzarella cheese

bacon,

red pepper flakes

parmesan cheese

basil leaves, sliced

Preheat oven

Melt the cheese

Place 3 cups of mozzarella in a microwave-safe glass bowl. Microwave until cheese is melted - about 2 minutes. Remove from microwave and let the mixture cool while combining the remaining ingredients. If you don't want to melt the cheese in a microwave, you can add it to a non-stick skillet and melt over the stovetop over medium heat.

Food process it

To a food processor, add almond flour, one egg, baking powder, xanthan gum, and salt. Scoop in melted mozzarella cheese. Pulse until a dough ball forms. If you don't own a food processor, you can mix the ingredients using an electric mixer or knead by hand until a dough is formed.

Flatten it

Place the dough in between two pieces of parchment paper. Using a rolling pin, roll out dough to desired thickness - about 1/8 to 1/4 inch thick. Remove top parchment layer and place the pizza dough and bottom parchment paper on top of a baking sheet or pizza stone.

You will need a small bowl

In a small bowl, combine ricotta cheese, garlic and 1/4 teaspoon of salt. Set aside.

Sprinkle evenly

Sprinkle 1 cup shredded mozzarella cheese and crumbled bacon evenly over the rolled out keto pizza dough.

Dollop and bake

Add dollops of garlic ricotta cheese mixture evenly over the pizza. Sprinkle red pepper flakes and grated parmesan cheese over the pizza. Bake at 400 degrees for 4 minutes.

Create some divots

Remove from oven. Use the back of a large spoon to make 4 divots on the pizza and crack remaining eggs into each divot. Return pizza to oven and bake for an additional 6-8 minutes or until egg white are almost set. Set oven to broil and broil pizza until eggs are cooked but yolks are still runny (about 30 seconds to 1 minute).

Finish with basil

Remove pizza from oven. Sprinkle basil over pizza.

Sheet Pan Keto Breakfast Pizza

cream cheese (softened)

Preheat the oven to 325F and line a 15x11 inch rimmed baking sheet with parchment paper. Grease the paper.

Prepare the focaccia dough according to the recipe and directions, leaving out the rosemary.

Using wet hands, press and spread the dough out on the pan to the edges. (Wet your hand frequently as you press out the dough). Smooth out the top as best you can.

Bake about 15 minutes, until the crust is firm to the touch. Remove and set aside while preparing the toppings.

Crust

In a medium bowl, stir together the cream cheese and cream until well combined. Stir in the garlic, and season to taste.

Spread the sauce over the crust, leaving a 1/2 inch border.

Cream Sauce

In a large bowl, whisk the eggs with the cream until well combined.

Set a large skillet over medium-low heat and add the butter. Once the butter is melted, add the egg mixture. Use a spatula to lift and turn the eggs until nicely scrambled but not dry.

Spread the eggs evenly over the crust. Top the eggs with the crumbled bacon and sprinkle on the cheese.

Increase the oven heat to 375F. Return the pizza to the oven and bake another 5 to 7 minutes, until the cheese is melted.

Toppings

Our household thought the focacia with almond flour is too grainy, not at all like true crust.  Is there a way to make a smoother crust?

Made this for brunch for a group of non-keto friends and it was DEVOURED!!! Hint: read the whole recipe and don't cook the focaccia fully as the focaccia recipe says! Also hint...spread the focaccia out enough...I ended up with too thick of a crust but it was still amazing!!! THANK YOU!!!
