Keto friendly Loaded Cauliflower Casserole is a combination of steamed cauliflower, cream cheese, sour cream, sharp cheddar, Monterey Jack, bacon and chives.

Loaded Cauliflower Casserole

lbs cauliflower florets

box (8 ounces) cream cheese

sour cream

cheddar

Monterey Jack cheese

garlic powder

onion powder

bacon

chives (reserve one tablespoon

Salt and Pepper to taste

Steam cauliflower until fork tender; approximately 10 minutes. Drain well in colander.

Preheat oven to 425 degrees. Grease 9 x 13 inch baking dish.

In a large bowl combine cream cheese, sour cream, cheddar cheese, Monterey Jack, garlic powder and onion powder. Mix until creamy and smooth. Gently stir in cauliflower, 1/2 of the bacon and chives. Season with salt and pepper to taste.

Spoon into casserole dish and top with remaining bacon. Bake uncovered for 20-25 minutes or until the cheese is melted. Top with remaining chives and serve.

Fantastic! Only change I made was using French Onion sour cream dip because it was on sale :) Hubby, kids, and mother in-law were wowed by this. Hubby even said it was in the top 5 of his favorite dishes I have ever made! (He is a type 1 diabetic and this recipe was perfect for low carb)

Made this for thanksgiving and it was so so so good!!! I initially made this side for my dad who has to watch his carbs so I cut the recipe in half. I’m kicking myself now because it was all gone and now I don’t have leftovers. Definitely will be making it again!! Thanks!

Made this recipe twice so far. Second time I got distracted and forgot to add the sour cream. Both versions were a big hit. It's one of my family's new favorites. My husband asks for it often &amp; is even willing to go get any of the ingredients I may need.

I made this tonight and it is awesome! I am a single person so I cut the recipe in half. I used onion and chive cream cheese spread in place of the cream cheese block, and turkey bacon pieces. Yummy!

So yummy.   I added sautéed onions, mushrooms, and celery.  Then, I  replaced the bacon with Browned ground turkey.  This will be something that I will make again, as my husband said, “Please, do not forget what you did to make this recipe”.  It’s a great comfort food casserole and I served with a simple tomato, cucumber onion side salad.  Healthy alternative with all the flavor as an unhealthy dish that’s so tempting in this quarantined uncertainty.  Thanks for the inspiration!

This WAS like a fully loaded baked potato! The cheesiness of the casserole was so creamy and the bacon put it over the top. Plus I felt so much better eating this lower carb side than I would have with the potato alternative. Thanks for the delicious recipe that I will be making again and again!

This tasted great!  I left the cream cheese out over an hour - but maybe it needed longer?  When I put the cheeses, etc. together it seemed like it was the consistency of a cheese ball - and mixing it with the cauliflower was impossible.  I even put it in the mixer and mixed hard - but it still would have smashed up the cauliflower. So I put the cauliflower in the pan and gently spooned the cheese mixture over in small spoonfuls.  I almost added milk - but glad I did not - it was really good.

I did modify the recipe by reducing the cream cheese to 1/2 of a block and reduced the cheese to roughly a cup and used bacon bits (because Im lazy) instead of bacon and it was  still excellent and I also roasted my cauliflower.

Begin by removing all the stems from a head of cauliflower. Place the cauliflower florets in an 11x7 baking dish lightly greased with olive oil. Roast the cauliflower for 15 minutes at 400 degrees F.

While the cauliflower is roasting, prepare the cheese...

While the cauliflower is roasting, prepare the cheese sauce. In a small pan combine the butter, garlic, milk, heavy cream, and cream cheese over medium heat. Whisk until the mixture is smooth.

Stir in 1 cup of the cheddar until completely melted. Bring the mixture to a slight simmer until it has thickened.

Pour the cheese sauce over the roasted cauliflower, top with the remaining shredded cheese. Bake 20-25 minutes.

Loaded Keto Cauliflower Casserole Recipe

cauliflower head,

Monterey Jack Cheese, shredded

sharp cheddar cheese, shredded

bacon,

cream cheese, room temperature

brown mustard

tbsp fresh parsley, finely chopped

tsp fresh chives, finely chopped

tsp pink salt

tsp black pepper

green onions,

Preheat oven to 375 degrees F. Spray a 9x13 casserole dish with non-stick cooking spray.

Place cauliflower florets and 3 tablespoons of water in a large microwave safe bowl. Cover with damp paper towels and microwave 7-8 minutes, steaming until tender. (Steps shown in video above)

Meanwhile, in another large bowl, combine half of each cheese, half of the bacon, half of the green onions sour cream, cream cheese, mustard, herbs and spices, mixing well. Add the steamed cauliflower florets and the water from the bowl, tossing gently until coated.

Transfer mixture to prepared baking dish and top with remaining cheese, green onions and bacon.

Cover with foil and bake for 20 minutes. Remove foil and bake another 5-10 minutes or until cheese is bubbly and beginning to brown. If desired broil for 1-2 minutes at the end for browned crispy cheese topping!

Garnish with green onion and serve immediately.

Best stored in an air tight container in the fridge up to 5 days.

Thanks for the great recipe.  I made this for a family BBQ and everyone from the grands to the kids loved it.  I especially appreciated the tips that it can be made with frozen cauliflower and can be assembled ahead of time.  This recipe is very easy and definitely a repeater for my family.

We made this last night. Delish! I steamed the cauliflower in my Ninja Foodi. Mixed the cheeses. Didn't have bacon, so I used ham slices. Fried them in the Foodi and added smoked paprika. Then we added smoked paprika to the cheese. Delicious. The next time we will use chopped onion and garlic. And, of course, my husband added chili pepper and hot sauce to his bowl! I made this for a potluck earlier in the year.  It was a big hit. No one guessed it was cauliflower. One person asked for the recipe and was so surprised it wasn’t potatoes. I’m making this again tomorrow for Christmas. It will be yummy. Great recipe.

I made this for dinner tonight. It was delicious, but the cauliflower became mush like mashed potatoes. I used raw cauliflower pieces purchased from the produce department. I steamed them for 10 minutes and they seem firmed when I added them to the recipe but then dissolved into the cheese sauce when I baked the casserole for 20 minutes.

I’ve made this before!
Try using whole head of cauliflower cut into good size chunks!
Just blanch!
Fold in with the other ingredients “carefully”
This will help it from getting mushy

I made this for dinner tonight. It’s very good, but I made some changes. I sautéed some onion and garlic and added that to the mixture. I think 3 cups of cheese is too much so I would use only 2 next time. Also, I only added 3 strips of bacon, which seemed like enough to get the flavor.

Thanks for another wonderful recipe.  I have made this many times, and always a hit.  I cook the cauliflower in the microwave for 10 minutes and drain any liquid before adding the rest of the ingredients.  I sometimes add chopped white onion to the cauliflower, sub mayonaise for the cream cheese and smoked sausage for the bacon.  Smoked paprika also gives it a nice flavor.

I used Neufchâtel cheese and low fat sour cream and added panko bread crumbs with melter butter and parsley as a topping and it was ah-mazing! 
Served with a mini spiral sliced ham. Great meal. Thank you!

My husband loved this asked why I don't make this more often (because it's not super healthy.)  But it was good enough he raved to his mom about it so I had to send your recipe to her as well.
I do reduce the cheeses to one cup and have used precooked bacon pieces if I don't feel like cooking bacon in addition to the casserole. Still turns out delicious.
