These keto nutter butters combine two chewy and slightly crispy peanut butter cookies with a delightfully smooth peanut butter filling in the middle. If you love peanut butter, these keto peanut butter cookie sandwiches will become your new best friend. And you can eat as many as you want since each cookie has just around 3 NET CARBS!

Keto Nutter Butters | The Best Keto Peanut Butter Cookies

Dough:

Just less than ⅔ cups (160 grams) no sugar added peanut butter

(28 grams) blanched almond flour

(4 grams) vanilla extract

(80 grams) Confectioners Swerve

Filling:

(32 grams) no sugar added peanut butter

- 1 Tablespoon unsweetened almond milk

Add egg yolks and no sugar added peanut butter to a large bowl.

Then add in the blanched almond flour, vanilla extract, and confectioners swerve. 

Next mix together all of your ingredients with a spatula until a thick peanut butter dough starts to form. Once it forms, use your hands to shape a ball of dough out of it.

Use a tablespoon-sized cookie scoop to scoop out some dough. Then use your hands to shape the dough into cookies. 

Add all of your cookies to a baking sheet lined with parchment paper and put them in the oven for around 7 to 10 minutes tops.

After you take them out, let them set and cool down on the tray that you baked them in for about an hour so they can firm up. 

Once the cookies set, in a small bowl you're going to add your filling ingredients, starting with the peanut butter and Confectioners Swerve. 

Then, add the almond milk half a tablespoon at a time, and stir until the filling is a creamy smooth consistency - this should take around 1/2 to 1 tablespoons.

Once the peanut butter filling is ready to go, pair each cookie up with a cookie similar in size.

Add a teaspoon of the peanut butter filling to the bottom of one cookie and sandwich it to the bottom of another cookie. 

Repeat this process until you've made nutter butter sandwiches out of all of your cookies and then you're all set to eat them!

Keto Peanut Butter Cookie NUTTER BUTTERS Just 3 Net Carbs

A single serving for a soft, chewy keto chocolate chip cookie that you can make in minutes. Instructions for air fryer, oven and microwave baking to give a delicious eggless low carb cookie for one.

Keto Chocolate Chip Cookie for One

almond flour

coconut flour

monk fruit

unsalted butter, softened

vanilla

salt

keto approved chocolate chips

In a small bowl, add all the ingredients listed above. Mix together using a fork until combined.

Mold into 1 or 2 cookies. Place in the refrigerator for 5-10 minutes to allow the flavors to meld together and to keep the cookie from spreading while baking.

Place cookie on a parchment lined baking tray and bake at a 350 degrees for 6 minutes or until the edges start to brown. Remove from oven and let cool completely before handling.

Place cookie on a piece of parchment paper and microwave at 100% or high for 45 seconds. Let cookie cool completely before handling.

Place cookie on the pre-greased air fryer grilling tray. Bake at 350-360 degrees for 6 minutes. Let cookie cool completely before handling.

How to make Keto Chocolate Chip Cookie for One.

Everyone loves BACON! Especially on the keto diet, so I created a cookie with the flavor of maple paired with maple syrup. This keto cookie will surprise you by how good it is! Plus, it's dairy free!

Keto Maple Bacon Cookies

erythritol

golden monk fruit

baking powder

baking soda

rendered bacon fat (from cooking 1.5 pounds of bacon)

ChocZero Maple Syrup

Preheat

Pulse it

In a food processor, add dry ingredients and pulse until combined.

Make the dough

Add remaining ingredients and pulse until a smooth, stiff dough ball forms.  

Optional: Refrigerate 

Wrap in plastic wrap and refrigerate for 2 hours.

Make dough balls

Take a piece of dough and roll into a 1 inch ball and place on a parchment lined baking tray. Space each dough ball about 1.5 inches apart. Flatten each ball down with a spoon. 

Bake it

Cool down

Cool on the baking tray for 2 minutes before transferring to a wire rack.

Keto Sugar Cookies

cream of tartar

unsalted butter, softened to room temperature

powdered erythritol (as sweetener)

vanilla extract

almond extract (optional)

Sift dry ingredients

Sift together our dry ingredients: almond flour, coconut flour, baking soda, cream of tartar and salt. This creates a finer texture for keto cookies. I highly recommend you don't skip this step.

Mix wet ingredients

In large bowl, cream together the butter and powdered erythritol until fluffy (about 2 minutes). Beat in vanilla extract along with the almond extract if using. Then beat in eggs.

Refrigerate dough

Add flour mixture and beat until just combined. Place dough into between two pieces of parchment paper and flatten down to a small disc shape. Refrigerate for at least 2 hours. May store in freezer in a Ziploc bag for later use too.

Roll it out

Keeping the dough between the parchment paper. Lay down a wet paper towel and place the dough and parchment paper on top. Using a rolling pin, roll out dough to about 1/8 to 1/4 inch thickness between the two sheets of parchment paper. Refrigerate for additional 20 minutes.

Preheat oven

Punch out shapes and bake

Remove the top piece of parchment paper and cut out shapes. Place on a parchment lined baking tray about 1.5 inches apart. Bake until starting to get golden brown around the edges, about 8-9 minutes. Remove from the oven, let cool on baking tray for 5 minutes before transferring to a wire rack. Decorate with keto royal icing once completely cooled.

Decorate

To make keto royal icing, combine 1 cup powdered erythritol sweetener, egg whites, cream of tartar, and salt in a small bowl. Whisk until smooth. Remove 1/3 of the icing into a smaller bowl and add remaining 1/4 cup powdered erythritol. Whisk until slightly thicker than original icing mixture. Use the first batch of icing to flood the inside of the cookies with icing and the second thicker batch to outline the cookie. Add icing batches to two separate piping bags. Using the thicker icing, pipe the borders of your cutout cookie. Then using the thinner icing, flood the inside of the outline.
