Almond Flour

Coconut Flour

tsp Xanthan Gum

tbsp Baking Powder

tsp Natural Ancient Sea Salt

Granular Monk Fruit Erythritol

Butter (melted)

Eggs

tsp Vanilla Extract

Unsweetened Almond Milk

Powdered Monk Fruit Erythritol

Butter (softened)

oz Cream Cheese (softened)

natural yellow food coloring (optional)

Preheat the oven to 350 degrees.

Whisk all of the dry ingredients for the cake and set it aside.

Add the wet ingredients to your stand-mixer and combine on high (1-2 minutes). The goal is to combine the wet ingredients well to reduce the amount of stirring once the dry ingredients are added in the future step.

Turn the stand-mixer to stir. Add 1/2 of the dry ingredients and allow to combine (~30 seconds).

Add the remaining half of the dry ingredients. Mix on low for an additional 30 seconds.

Scoop with an ice cream scooper into muffin cups

Bake for 18-22 minutes (until a toothpick of a fork comes out clean). Allow to cool completely before adding icing.

Add all ingredients for the icing into your stand mixer. Mix on medium until light and fluffy (~2 minutes). You may need to scrape down the sides in the middle of mixing. I usually put the icing in the refrigerator for ~5 minutes before putting it into my frosting bags.

How to Make The Best Keto Cupcakes

The texture of these low carb gluten free coconut cupcakes is nice and airy. Top with a sweet sugar-free buttercream frosting and a sprinkling of coconut.

Low Carb Coconut Flour Keto Cupcakes

coconut flour (sifted)

Tablespoons unsweetened shredded coconut

baking powder

salt

butter

Swerve Confectioners Powdered Sweetener (or erythritol powder)

stevia concentrated powder

eggs

sugar free vanilla extract

coconut extract

Tablespoons almond milk (or coconut milk beverage.)

whipping cream

SweetLeaf stevia drops (or stevia gycerite)

vanilla

xanthan gum

cream cheese

Tablespoons Swerve Confectioners Powdered Sweetener

Line cupcake pan with six liners, set aside.

Combine coconut flour, coconut, baking powder and salt in small bowl. In large bowl, whisk together eggs, Swerve, stevia, melted butter, extracts, and almond milk until well combined.

Blend in dry mixture. Spoon batter evenly into cupcake liners.

Bake at 400 degrees F for 15-20 minutes until done.

Cupcakes:

Heat whipping cream, liquid sweetener and butter in saucepan until boiling point reached. Remove from heat.

Stir in vanilla extract, and xanthan gum. Chill for two hours.

Add cream cheese and Swerve. Beat with electric mixer until smooth and at frosting consistency.

Preheat the oven to 350ºF and line a muffin tin with parchment or silicone liners

In a large bowl, whisk together the coconut flour, sweetener, cocoa powder, protein powder, baking powder, and salt. Stir in the eggs, butter, and vanilla extract until well combined.

Stir in the coffee about 1/4 cup at a time until the batter is thick but easily scoopable.

Divide the batter evenly among the prepared muffin cups. Bake 20 to 25 minutes or until the tops are just firm to the touch.

Remove from the oven and let cool completely in the pan.

In a small bowl, stir together the hot water and espresso until coffee dissolves. Set aside.

With an electric mixer, whip the cream until it forms stiff peaks. Set aside.

In a medium bowl, beat the butter, cream cheese, and sweetener together until creamy. Add the coffee mixture and beat until combined. With a rubber spatula, fold in the whipped cream carefully until well combined.

Spread the frosting on cooled cupcakes with a knife or offset spatula, or pipe on with a decorating bag.
