Keto Donut Holes

Cup Almond Flour ((80 grams))

tbsp Psyllium Husk Powder ((15 grams))

tsp Baking powder ((4 grams))

tbsp Erythritol ((24 grams))

tsp Xanthan Gum ((optional) (2 grams))

salt

Large Eggs

tbsp Melted Butter ((14 grams))

tsp Vanilla Extract ((5 milliliters))

In a bowl, whisk together the wet ingredients well. Using another bowl, mix together all the dry ingredients.

Add the dry ingredients to the wet ingredients. Whisk together until combined. Place the mixture in the fridge for 5-10 minutes to allow the mixture to firm up.

Meanwhile, heat the frying oil on medium low. Take the bowl out of the fridge, and use a mini scoop or a tablespoon to divide the dough into around 12 donut holes. You can divide the dough by weighing the balls. Each ball should be 15-17 grams.

Wet your hands, and roll out each piece into a uniform ball. Check the oil’s temperature before frying. Try to maintain a temperature between 270F -290 F.

Gently place the donut holes into the oil. Fry them in 2- 3 batches to maintain the oil temperature. They should be fried for 2 minutes on each side, or until golden. Around 5 minutes in total. Take them out and place them on kitchen towels to drain the excess oil. Repeat until all the donut holes are fried.

Sprinkle powdered erythritol as a garnish. You can serve It with sugar free ganache, or roll the donuts in a mixture of granulated erythritol and cinnamon.

Preheat

Add almond flour, protein powder, baking powder, xanthan gum, cinnamon, salt, melted butter, sour cream and hot water to a small bowl. Mix until combined. 

Roll into balls

Roll dough into 1/2 to 1 inch balls and place on a parchment lined baking tray, spacing about 1 inch apart. 

Bake it

Bake at 325 degrees Fahrenheit for 6 minutes.

Dip in butter

Once doughnut bites have cooled to the touch, dip each one in the melted butter. Then dip in a mixture of monk fruit and cinnamon.

Water

Almond Flour (unblanched)

Eggs (lightly beaten)

tbsp Avocado Oil (or extra virgin olive oil)

tbsp Erythritol

tbsp Coconut Flour

tbsp Psyllium Husk (ground)

tsp Xanthan Gum

tsp Pure Vanilla Extract

tsp Baking Powder

Sea Salt (to taste)

Butter

Low Carb Sugar Substitute (Granulated)

tbsp Erythritol (powdered)

Cinnamon (ground)

Preheat the oven to 425°F/220°C and line a baking pan with baking paper.

In a large mixing bowl, combine the almond flour, coconut flour, baking powder, psyllium husk, and xanthan gum.

In a small saucepan, bring the water to a boil, reduce the heat to medium-low, and add the vegetable oil and Erythritol. Add a tiny pinch of salt and whisk.

Gradually add the flour mixture, constantly stirring until a sticky dough is created.

Remove from the heat and allow to cool for 5 minutes.

Gradually add the beaten eggs into the dough, whisking to create an elastic dough.

Finally, fold in the pure vanilla extract.

Set the dough aside and allow it to rest for about 15-20 minutes.

Roll the dough into 1-inch balls and place them on the prepared baking pan, leaving room between them to expand. Dust the dough and your hands with almond flour if the dough is too sticky.

Bake in the preheated oven for 15 minutes and lower the temperature to 350°F/180°C.

Keep baking for 10-15 more minutes until the donut holes are golden.

If possible, let the donut holes cool in the pan for 10 minutes.

Mix the granulated Erythritol with the ground cinnamon on a shallow plate.

Place the powdered Erythritol in another bowl or plate.

Brush the donut holes with the melted butter and roll into the powdered Erythritol, then into the cinnamon-sugar mixture to coat all sides evenly and serve.
