Keto Frittata

bacon

mushrooms (sliced)

baby spinach

Cheddar Cheese (shredded)

Preheat your oven to 180C/355F.

Place a cast iron frying pan over high heat.

Dice the bacon and add to the pan. Saute for 4 minutes then add the butter.

Add the mushrooms and saute for another 3 minutes.

Add the spinach and cook for another 2 minutes, until it has just wilted. Turn off the heat.

Sprinkle the cheddar over the sauteed ingredients.

In a mixing bowl, add the eggs, cream, salt and pepper. Whisk until combined.

Pour the egg mix into the pan and place the pan into the oven.

Bake for 20 minutes, or until the egg no longer jiggles.

Remove from the oven, slice into 4 pieces and serve.

This creamy keto ham and cheese frittata is easy to whip up for your next brunch. Enjoy in the morning or on nights when you want to have breakfast for dinner. 

Keto Ham Frittata

Get a large bowl

In a large bowl, mix together eggs, cream cheese, salt and pepper. 

Add the cheese

Heat the skillet

Heat a medium skillet to medium heat and add avocado oil. 

Saute

Add ham and green onions and saute for 2 - 3 minutes or until ham starts to brown. 

Add egg mixture

Add egg mixture to skillet and cook. Use a spatula to stir and scrape the bottom of the skillet until large curds begin to form and the spatula starts to leave wakes but the egg remains wet (2 minutes). Shake the skillet to evenly distribute the eggs. Cook without stirring for 30 seconds to set on the bottom. 

Finish in the oven

Place skillet in the oven and broil until frittata has puffed up and starts to brown on top, about 3 - 4 minutes. Remove from oven and let stand for 5 minutes to finish cooking. Loosen frittata from the skillet and cut into wedges to serve.

Keto Frittata with Brie and Bacon

Cook the chopped bacon in a 10-inch oven-proof skillet over medium heat until crisp. Remove the bacon with a slotted spoon and let drain on a paper towel lined plate. Leave at least 2 tbsp of bacon grease in the skillet (if you are using cast iron, you may want to leave more) and remove from heat. Let the skillet cool before proceeding.

In a large bowl, whisk the eggs with the cream, garlic, salt and pepper and about two thirds of the cooked bacon. Set the skillet over medium low heat and swirl remaining bacon grease to coat bottom and sides.

Pour the egg mixture into skillet and cook undisturbed until edges are set up center is still somewhat loose, 7 to 10. Layer the sliced brie overtop. Sprinkle with the remaining bacon.

Preheat the broiler to high and set an oven rack on the second highest setting in the oven. Broil until puffed and golden brown,2 to 5 minutes, watching carefully to make sure it doesn&#039;t burn.

Remove and let cool a few minutes before serving.

I am not a fan of brie, and I had ham, so I made a ham and cheddar version of this - those were the only two things I changed. I have an electric glass top stove and my skillet was ceramic. It took way longer than I expected to reach the correct level of doneness prior to putting in the oven, and even though I had it at 275F (that pan is only oven safe to 300F), it ended up burned on the bottom...... it looks amazing though. Any ideas why it would have behaved that way? I did make sure to distribute the ham evenly and the sliced cheddar went over top, like you suggested for the Brie. For my version I would have added more garlic, but that is entirely a personal preference.  Let me say here that as someone in the process of reversing T2, and maintaining remission for life, I adore your recipes and they have been lifesavers and bright spots when everything in my life otherwise went dark. Thanks to you I'm actually recovering some of my 'excited and curious' about food again.

Made ours today with items that needed to be eaten up: red, green peppers and onions, dried curly kale, a couple of slices of Black Forest ham chopped and an 8 oz bag of uncured bacon bits all sautéed in hickory bacon fat, plus a rather hard 1/2 wheel of Brie. In my cast iron pan. Oh my was this tasty! Perfect instructions! Will definitely make again…

Add butter to an oven-proof skillet over medium heat on the stovetop. Once it melts, sauté minced garlic for 1 minute, then add the spinach and stir until it begins to wilt. 

Remove the spinach from heat and combine it with the eggs in a bowl. Crumble the feta cheese with your hands into the egg mixture and stir until combined.

Pour

Add more butter to your pan, if needed, so nothing sticks. Pour the egg and spinach into the skillet. Use a fork or spatula and move the spinach around until it&#39;s distributed evenly throughout the frittata. 

Bake

Bake for 15-20 minutes until the top turns golden brown and the edges set.

Like this overall. Subbed a shallot for green onion since I didn’t have one. Only had about 1/4 c feta so I swapped in some kalamata goat cheese I had. Flavor is good I just want some more slight bite/crunch so I’d maybe add blanched broccoli or asparagus next time to make it more textural since I’m particular about food texture but this was a great recipe find!
