Making your own Keto granola bars is not only super simple, it&#x27;s also much cheaper than buying them in the shops. These tasty bars are low in carbs and easy to customise. Ready in 30 minutes!

Low Carb Keto Granola Bars

pumpkin seeds

sunflower seeds

ground flaxseed

almond butter

egg white (whisked)

granulated sweetener

sugar free chocolate chips (or chopped dark chocolate, minimum 85% cocoa solids)

tsp vanilla extract

Preheat the oven to 180C - 350 F electric. Line a 6x9 inch baking tray with parchment paper.

Pulse the nuts and seeds in a food processor until you have some smaller and some larger pieces.

Mix all dry ingredients in a bowl, leaving a few chocolate chips to decorate on top. Then add the whisked egg white, vanilla extract and almond butter and stir until combined. Check and adjust sweetener if necessary.

Pour the granola bar mix into the tray and press down well to compact the dough. Press the remaining chocolate chips on top.

Bake for circa 20-25 minutes or until lightly browned. Remove from the oven and let cool completely before cutting into 12 bars.

pecans

ChocZero Vanilla Syrup

ChocZero Dark Chocolate Chips

Line a 1-quart rectangular pan (about 7x4-inch) baking pan with parchment paper.

Coarsely chop the almonds and pecans by pulsing in a food processor (about 40-50 pulses). Stir in coconut, sunflower seeds, chia seeds, syrup, and chocolate chips.

Spread out into the prepared pan with a rubber spatula pressing the mixture down into the pan. If desired, sprinkle a few extra chocolate chips on top and press them into the mixture.

Freeze for 30 minutes or refrigerate for at least an hour. Lift the parchment paper out of the pan. Cut the granola bars into six bars using a sharp knife.

Vanilla extract is a solution containing the flavor compound vanillin as the primary ingredient. Pure vanilla extract is made by macerating and percolating vanilla pods in a solution of ethyl alcohol and water. Preheat the oven to 300F and line an 8x8 inch metal pan with parchment paper (with a little of the parchment overhanging the sides for easy removal).

In a food processor, combine the coconut, almonds, pecans, and pumpkin seeds. Process on high until the mixture resembles coarse crumbs in texture.

Add the collagen and salt, and pulse a few times to combine, then transfer the mixture to a large mixing bowl.

In a medium saucepan over low heat, melt the butter with the sweeteners, whisking until they dissolve. Stir in the vanilla extract.

Stir the butter mixture into the nut mixture until thoroughly combined, then stir in the chocolate chips, if using. Transfer to the prepared baking pan.

Press evenly into the bottom of the prepared baking pan. Use a flat-bottomed glass or measuring cup to really press it down and compact it as much as possible.

Bake 20 to 25 minutes, or until the edges are turning golden brown. Let cool completely in the pan and then lift them out by the parchment. Use a very sharp knife and cut them into bars (cutting straight down works much better than sawing away at them).

Oh my gosh! These granola bars are absolutely delicious! I made as directed except I didn't have any collagen so I used PB Fit Peanut Powder. ❤️ I can't wait for the rest of the family to try them in the morning.

Love the update and it makes the granola even better. Just as an FYI, I do freeze mine in wax paper individually, then pop into a quart size ziplock bag. They defrost quickly, so if you take one with you, it will defrost after 5-8 minutes. I will usually put one in a snack size ziplock to take with me for any crumbles. (I wash &amp; re-use the ziplocks many times.)

I’m not a fan of most granola bars. But I must say these are awesome. Really good flavor.  Sweetness factor just right. I think this is my new favorite. Perfect for when you need a grab and go snack. Very satisfying!

These bars are fantastic.  Wonderful taste and crunch.  It is hard not to eat all of them at one time.  Will definitely make these often.
