This easy Keto Korean Beef is so full of flavor, your tastebuds will sing. It&#039;s a delicious way to serve zucchini noodles, and using ground beef makes it extra fast and easy.

Keto Korean Beef Recipe

lb zucchini ((you will end up with about 18 to 20 ounces))

tsp salt

tamari

tbsp Swerve Brown

tbsp allulose ((or BochaSweet

tbsp sesame oil

tsp sriracha (optional)

tsp grated ginger

garlic (minced)

tsp red pepper flakes

coconut oil

beef

green onion, thinly sliced

sesame seeds

Cut the ends off of the zucchini. Use the spiral cutter plate with larger holes to make zucchini noodles. Chop them slightly a few times to break up the long noodles.

Place the noodles in a colander and sprinkle with salt. Toss to combine and drain for 1 hour, then pat them dry between tea towels (do not squeeze them out). Set aside.

Zucchini Noodles

In a glass measuring cup, whisk together all of the sauce ingredients. Set aside.

Sauce

In a large skillet over medium heat, melt the coconut oil. Once hot, add the beef and stir fry until no pink remains, about 7 minutes. Break up the clumps with the back of a wooden spoon as you cook.

Stir in the sauce and green onion and cook until the sauce has reduced and thickenend, another 2 to 3 minutes.

Add the zucchini noodles, toss to combine, and cook 2 to 3 minutes to heat through.

Garnish with sesame seeds before serving.

rice wine vinegar

liquid aminos or soy sauce

Make sugar free Korean marinade

In a small bowl, whisk together the rice wine vinegar, liquid aminos, sweetener, sesame oil, pepper, onion powder, ginger powder and cayenne pepper. 

Marinate the short ribs

Add short ribs to a baking dish or large pan. Pour marinade over short ribs. Refrigerate to marinate for 6-12 hours. 

Air fry short ribs

Preheat the air fryer at 400 degrees for 4-5 minutes. Remove short ribs from the marinade and place on air fryer tray or basket. Air fry at 400 degrees for 6 minutes, turning over halfway through cooking.
