How to Make Low Carb Gingerbread Cookies

Almond Flour (-superfine blanched)

½ tsp Baking Powder

½ tsp Xanthan Gum

½ tsp Ground Cinnamon

tbsp. Ground Ginger

Nutmeg

½ tsp Ground Cloves

Butter (-softened to room temperature.)

Splenda (- see post for alternatives)

tsp Vanilla Extract

In a medium bowl, use a whisk or a fork to mix together the flour, baking powder, xanthan gum, cinnamon, ginger, nutmeg and cloves.

Next, in a large mixing bowl, blend together the butter and the sugar alternative. Once this in blended you can stir in the egg and the vanilla extract.

Add the dry ingredients from the first bowl to the ingredients in the mixing bowl. Stir until just blended. Cover the dough with plastic wrap and refrigerate for at least 45 minutes (three to four hours or overnight works best).

When you are ready to bake the cookies remove the dough from the refrigerator. Preheat the oven to 325 and prep at least two rimmed cookie sheets for nonstick. I use parchment paper. You can roll out you dough (¼-1/3&quot; thick), cut out the cookie shapes, and bake them on the same parchment lined cookie sheets.

Bake your cookies for 10-12 minutes or until they begin to &#039;puff&#039;. Allow the cookies to sit on the baking sheet for a few minutes before transferring them to a cooling rack for cooling before decorating.

Egg Whites

Preheat your oven to 250. Prep two rimmed baking sheets with parchment paper

In a clean mixing bowl, combine together the egg whites, cream of tartar dash of salt and the extract. Beat this on high until the mixture appears foamy. You can add optional food coloring at this point as well.

Next, you can add the sugar alternative. Do this one tablespoon at a time, continuing to beat the ingredients. Continue to beat the ingredients until stiff peaks form. The batter should appear to be stiff enough to hold its own if it were to be dropped

Use a tablespoon, piping bag outfitted with a star tip, or a plastic zip top bag with a cut corner to from the cookies on the prepped cookie sheets. Make sure that you leave room between the cookies. Bake these cookies for an hour and a half or until the cookies begin to brown. Then, leave the oven door closed, turn off the oven (use the oven light to check on the cookies) and allow the cookies to set. This can take from one hour to up to eight hours depending on how crisp you like your meringue cookies to be.

Prep your candy molds with a bit of nonstick to make for easier removal and clean up. In a small saucepan stir or whisk together the gelatin and the water. Then place the saucepan on medium heat and heat until liquefied. You will need to stir the mixture often. It will take a bit of a while to get to that liquefied stage.

Once the mixture has become liquefied your can stir in the remaining ingredients and then remove the saucepan from the stove. Pour the mixture into the prepared molds and allow them to cool slightly. Transfer to the freezer (takes about 15 minutes) or the refrigerator (a bit longer) to become solid enough to enjoy.

Make the fathead dough as described. Place the fathead dough on a large piece of parchment paper on a rimmed sheet pan. Then place another piece of parchment paper on top of the dough. Use a rolling pin to roll the dough out between the two pieces of parchment paper. The use a fork to poke holes in the dough so the dough doesn’t rise. Bake in a preheated oven on 350° for 6-8 minutes or golden brown.

Next, take the crust out of the oven and add on your favorite pizza toppings and seasonings. Return the pizza to the oven and bake for about 8-10 minutes until the cheese is golden brown. Serve warm or cool. Store in an airtight container or zip top bag.

Sesame oil

(50 grams) Onion

(14 grams) Garlic cloves

Breast (500 grams) Chicken

Prepare Ingredients

Prepare all of your ingredients. Cut chicken into small pieces and all of the vegetables into slices. Clean and cut broccoli into small florets and the rest of the stem into small cubes. 

Chicken and onion

Heat your skillet and add sesame oil. Once that is heated, add onion and garlic and caramelize both.  Add the chicken pieces into the pan and stir all together. Cook the chicken on a medium-high for about 10 minutes, depending on the size while mixing regularly. 

Spices and sauces

Once your chicken is cooked halfway, season it with salt and pepper. Add soy sauce, broth, and xanthan gum. Mix and cook for another 5 minutes or until the chicken is golden brown. 

Vegetables and Toppings

When your chicken is fully cooked, we add all the fresh veggies. First goes all of the colorful peppers which we mix. Followed comes broccoli. Combine stir fry together and let veggies soften slightly.  As last, add chopped green onions and sesame seeds.
