These keto-friendly cookies with sugar-free chocolate chips and chopped walnuts are seriously magical. They are super easy to make and without any flour, you can feel good about eating way more than just one.

Magic Keto Cookies

c. coconut oil

butter,

granulated Swerve sweetener

kosher salt

c. sugar-free dark chocolate chips,

c. coconut flakes

c. walnuts

These are very good and I have made them several times now.  However, I have modified this recipe slightly.  I do not use the entire amt of sweetener that this recipe calls for but only 2 T.   But personally, I rarely ever use the amt of sweetener a recipe calls for (I use swerve or erythritol)   ALSO, and most importantly, I have found that by adding 1 T of coconut flour, bonds the mixture together better without the cookies sometimes spreading on the cookie sheet.  There is a large amt of oil in this to which causes the cookies to seem greasy on the sheet and the floor lessens this.   I get 20 cookies.

I used 2 large eggs instead of 4 yolks and added a bit of extra coconut & chocolate because I didn’t have walnuts, turned out super good!

Oh way! These little guys turned out delicious!

I subbed Swerve brown sugar and added cinnamon. They come out very oily but set up beautifully on a cooling rack.

A couple of baking best practices should also be mentioned. Mix wet ingredients together. Sugar and salt (in this recipe) are wet ingredients. Mix dry ingredients together and THEN combine the two.

Also don’t over crowd your on when baking. Even with a large cookie sheet I still baked this in 2 batches.

These are amazing!  So quick and easy to make.  Yes they do ooze coconut oil at the end of the bake.  I just placed them on a double paper towel to soak up the extra, same as bacon.  They came out perfect!

Turned out better than I expected, they are especially good the next day for some reason, maybe because they're a little more set-up. I had to use real sugar and regular semi-sweet chocolate chips but I wasn't going for low sugar or keto. I was happy they came out great. Really enjoy these and they were extremely easy (my favorite part).

I followed the recipe exactly. They turned out pretty good, don’t expect super sweet and you definitely have to wait for them to cool. It seems like a lot of coconut oil melts but it doesn’t impact the end result. The pic is from when cooled. Would make them again.

Totally delicious. Put in parchment   Paper muffin cups and baked in the muffin pan. Made 18 as I made a bit bigger. Followed the recipe exactly. I will definitely make this again and again!

Turned out great! After reading other comments I decided to do 2 whole eggs instead of the yolks and I added 2 tbsp coconut flour. Ended up with 18 cookies :)

They are perfect and taste so good! The only difference is I only had 1/2 cup of walnuts, besides that I followed the recipe!

Based on other comments, I:
-creamed the oil and butter
-used 2 egg yolks and 1 whole egg
-added 1 tablespoon of flax meal
-cooked in a mini muffin pan

Based on personal preference and what I had in the cupboard, I:
-used 1 teaspoon of granulated Truvia

They are absolute perfection!! I would absolutely make them again, share the recipe, or take them to a social gathering... If I do repeat, I may the cut sugar and chocolate chips down even more, but that's just a function of how much my tastes have changed eating low-carb.

Delicious! I used Sukrin Gold as my sweetener. The oil settles once the cool. Did i mention they were delicious?

Use 1/8 cup coconut oil and it turns out way better!

These definitely are magical!  I followed the directions exactly.  When I took them out of the oven there was quite a bit of coconut oil in the pan, so I put them on a couple paper towels and let them sit for about 20 minutes to soak up excess oil and to cool completely.  They were amazing!  Better yet, they are even better after being stored in the fridge for a few hours; adds a little more texture and really brings out every ingredient.  Soooo easy to make and even the non Keto members of my family love them.  I recommend doubling the recipe because they go very quickly!!

These cookies are excellent! The whole family loves them. I have made this recipe a dozen times. I have sent a batch of these cookies to my daughter and the recipe and she makes them now too. I have 10 bags of Lily’s chips in my closet cause they were on sale 2for1. The best fat bomb recipe, we eat them as snacks.

These are now my "go-to" for something sweet! So very good! Let the cookies cool on the cookie sheet until all the oil is re-absorbed into the cookies. These are Keto so you want those fats. My husband insists on something "sweet" after dinner and this does the trick. Plus, they're very filling!

I went to pull them out of the oven and it was a hot mess.  I think I am going to cut down on the chips along with the eggs and do 2 eggs instead as whole and not just yolks.  Will try this one more time....I will say that it smelled yummy but the outcome was not so yummy....

Magic Keto Cookies Will Blow You Away

These dark Chocolate Coconut Macaroons have a rich dark chocolate and coconut flavor. They&#039;re made with unsweetened coconut and almond butter, and without condensed milk or eggs. Plus you can bake or no-bake them - your choice! Healthy, delicious, Gluten-free, Vegan and Paleo.

Chocolate Coconut Macaroons

(92 grams) unsweetened shredded coconut

almond butter

cacao powder

(23 grams) coconut oil

(5 grams) vanilla extract

fine himalayan salt

(69 grams) semisweet mini chocolate chips (or chocolate bar chopped into small pieces)

(100 grams) semisweet mini chocolate chips

Mix all ingredients listed in a large bowl until well combined. But if you live in a warm, humid climate, mix the chcoolate chips into the dough after it&#039;s formed so the chips don&#039;t melt.

Using a 1 1/2 tbsp cookie scoop, scoop the mixture onto a baking sheet lined with parchment paper.

Baking is optional - If you&#039;re baking these, preheat the oven to 350°F and bake for about 10 minutes or until the bottom and edges start to turn darken. Allow them to cool on a wire rack, then refrigerate for 20 minutes to chill. If you&#039;re not baking them, place the baking sheet in the fridge to chill the macaroons for about 20 minutes.

If dipping the macaroons in chocolate, melt chocolate using a double boiler or microwave. Dip the bottoms in the melted chocolate and return to the lined baking sheets, then drizzle some more on top. Place the macaroons in the refrigerator for about 10 minutes to allow the chocolate to set.

The BEST Chocolate Coconut Macaroons you have ever tasted (Easy & Healthy!)

These Keto Coconut Macaroons are deliciously sweet, coconutty and good to the last bite. Best of all, they're gluten free and low carb!

Keto Coconut Macaroons

Flour

Unsweetened Shredded Coconut

vanilla extract

Butter

Swerve

Preheat  an  oven  to  400F.  Line  a  9  x  13  cookie  sheet  with  parchment  paper  and  set  aside.&nbsp;

In  a  large  bowl,  mix  together  almond  flour,  coconut,  coconut  oil  or  butter,  and  vanilla  extract  and  set  aside.&nbsp;

Using  the  whisk  attachment  on  your  stand  mixer,  beat  together  the  egg  whites  and  Swerve until  stiff  peaks  form.&nbsp;

Gently  fold  the  egg  whites  into  the  almond  flour  mixture.&nbsp; &nbsp;

Spoon  the  mixture  onto  the  cookie  sheet  to  get  10-12  scoops.&nbsp;

Bake  for  15-16  minutes  until  the  coconut  tops  start  to  brown  lightly.&nbsp; &nbsp;&nbsp;

Remove  from  oven  and  let  cool  before  removing  from  the  cookie  sheet.&nbsp;

Keto Coconut Macaroons 32 seconds

These easy No Bake Keto Macaroons are little bites of chocolate coconut heaven. Sweet, tender, and just this side of chewy, and they have only 1.5g net carbs per serving!

Chocolate Keto Macaroons Recipe

heavy whipping cream

Swerve Granular

granular allulose

cocoa powder

tsp vanilla extract

tsp salt

coconut

dark chocolate chips, sugar-free

coconut oil

Line a baking sheet with parchment or waxed paper.

In a medium saucepan over medium heat, combine the heavy cream and the sweeteners. Cook, whisking continuously, until the sweeteners dissolve in the cream.

Whisk in the cocoa powder, vanilla extract, and salt until there are no lumps, then bring to a low boil and cook for 1 minute. Keep a close eye on it to make sure it doesn&#39;t boil too vigorously.

Remove from heat and stir in the coconut well to combine. Let cool a few minutes to thicken.

Roll the mixture into 1-inch balls or use a small (1 tablespoon) cookie scoop to make small mounds, packing it in tightly. Place on the prepared baking sheet and place in the freezer until firm, about 30 minutes.

In a microwave safe bowl, combine the chocolate chips and coconut oil. Melt on high in 30 second increments, stirring in between until smooth.

Dip the bottom of each macaroon in the melted chocolate and place back on the lined baking sheet. Refrigerate a few minutes to set the chocolate.

I made them with coconut milk (didn't have coconut cream) and they turned out great. I might up the salt a bit next time and use a bit less sweetener, but that's just personal preference. the recipe is great, thank you Carolyn!

Coconut and chocolate a a GREAT mix of flavours!
