Keto Meatloaf

80/20 Ground beef

Onion (diced)

Pork

Worcestershire sauce

Garlic powder

Salt

Reduced sugar ketchup

Preheat oven to 350 degrees F.

In a large bowl combine all ingredients except ketchup. Mix ingredients until fully combined.

Press ingredients into a parchment paper lined loaf pan.

Bake for 30 minutes. After 30 minutes add ketchup on top and bake for 25-35 minutes more.

Remove from oven and let rest for 15 minutes.

Low Carb Meatloaf

This keto meatloaf is SO comforting, satisfying, and delicious! It's easy to make, only has 1 NET CARB a slice, and doesn't taste low carb at all. Honestly, it's 100% THE BEST meatloaf recipe for the keto diet. Oh, and you can even wrap it in bacon to take it to a whole different level of deliciousness.

Tbsp (14 grams) Macadamia Nut Oil

Medium Onion (100 grams) chopped

Cup Celery (100 grams) chopped into tiny pieces

Cloves Garlic, minced

Tsp. Oregano

Tsp. Chili Powder

Tsp. Italian Seasoning

Lbs. (907 grams) 80/20 Ground Beef

Cup (112 grams) Shredded Cheddar

Cup (35 grams) Almond Flour

Heaping 1/4 Cup (25 grams) Grated Parmesan

Eggs

Tbsp (30 grams) Liquid Aminos –

Salt & Pepper

Cup (80 grams) Keto Ketchup

Keto Meatloaf | The BEST, Easy, Low Carb Meatloaf Recipe You'll Make

Grease a 9&#215;5 loaf pan with cooking spray and set it aside.

In a large skillet over medium heat, add and heat the Macadamia Nut Oil.

Now, add the onion &amp; celery and cook until soft and translucent.

Next, add the garlic, oregano, and chili powder, and Italian seasoning and cook until fragrant.
Once fragrant, let the mixture cool.

Now, when the mixture cools, use a large bowl to add and combine all of the ingredients &#8211; except for the ketchup.

Shape meat mixture into the size of a large loaf, and add it to the pan. *If using bacon, wrap it in bacon before adding the meatloaf to the pan.

Cook for 40 minutes, remove, and cover with ketchup (if using)

Return to oven and cook for another 15-20 minutes (once the internal temp gets to 165°F).

Let it rest 10-15 minutes before cutting into it.

Garnish with fresh oregano, or more Italian seasoning.

Cover the air fryer basket with tin foil.

Set the air fryer to 380 degrees Fahrenheit, and cook for 20-30 minutes.

Add the keto ketchup if using, and if it&#8217;s browning to quickly cover it with foil.

Cook for an additional 15-20 minutes. *Just make sure the internal temp. reaches 165°F

I must say I make a great meatloaf and was looking for different recipes because I now I subscribe to keto.  Well, I’m not a fan of almond flour but I used it and added some red hot pepper and jalapeños.  This was so delish I can’t tell you.  The cumin, oregano, cheeses....So simple but so tasty. Ty ty!

I have never really cared for meatloaf that much but my husband has always been a meatloaf fan.  I made your keto meatloaf tonight exactly as written and it was INCREDIBLE.  The best flavor - moist - DELICIOUS!!!

This was delicious.  This Meat loaf recipe was very moist and tender which is not the usual outcome for meat loaf.    I thought it was easy to prepare.  Thank you for sharing and all you do.  I usually make your desserts which are also delicious.  I am going to have to investigate more main dishes.

I used green pepper in place of celery because it's what I had on hand and I draped a few optional slices of bacon across the top. The meatloaf was excellent - both flavorful and very moist. I will definitely be using this recipe again!

How does a cheesy meatloaf make you feel?

I'm not even sure if I've commented on this already, but I've made this recipe SIX TIMES already and I love it so much. Such depth of flavor. I sometimes skip the bacon if I don't have it, but it doesn't matter. It's just as good either way. I make it in a square pyrex glass pan and cut it into 9 pieces. I freeze them and just thaw them when I want a piece. If I didn't freeze it, I'd just pick at it all day until it was gone!

This tasted great, actually better than non-keto variations imho. One thing we did differently was use coconut flour instead of almond flour because it's much cheaper. I was worried it would taste like coconut but it wasn't the case. You only need to use 3 or 4 teaspoons of coconut flour because it is significantly more absourbant than almond or wheat flour.

I tried this recipe while changing up a couple of things such as the soy sauce for worchestire and the celery for green pepper; I also skipped on the chili seasoning. It still came out amazing! I def recommend to try! Made this for my bf and he loved it! Will be making again! :)

Made this recipe 2nd time, first time I use celery but tonight I use bell pepper instead of celery and it turn out more moist and juicy, it was GREAT!

Very tasty when finished but after an hour of cooking the meatloaf was not cooked all the way under the bacon, and that side of the bacon wasn’t cooked all the way...I ended up peeling back the bacon and cooking longer then it got all nice and crispy and completely cooked

Very good. Macros come out to 473 calories, 31.2g fat, 3.8g carbs, 42.6g protein when I import the recipe into MFP and set it to 6 servings.

Just made it for dinner and finished eating. The best meatloaf I have ever had and my partner (who is not eating keto) agreed!! So delicious, juicy and rich flavor!! Served it with fresh sliced tomatoes and my partner had sweet potato fries as well with his.

Love this recipe. The bacon imparts so much flavor. I use ground turkey instead of the beef. It's so juicy, I don't feel the need for the beef. Leftovers reheat nicely. So delicious; this is a keeper!

Super delicious!! My whole family loved it.  I also love how easy it is to make.

I made a half recipe and left off the celery, Parmesan and oregano and added bell pepper and dry ranch dressing and it was very good and filling. I would make it again.

Incredibly good!  Very moist.  Not crumbly and didn't fall apart.  Definitely recommend.

This Keto Meatloaf Is Unbelievably Flavorful

Lean Ground Beef

Flour

Tomato Paste

Worcestershire Sauce

Onion Powder

Garlic Powder

Kosher Salt

Black Pepper

Stevia

water

Dijon mustard

Preheat oven to 350F.

In a large bowl, mix together ground beef, egg, almond flour, half and half, tomato paste, Worcestershire sauce, onion powder, garlic powder, salt, and pepper. You will get a loose mixture.

Form into four individual patties. Place a grill rack on to a sheet pan or in a square baking dish. Place the meatloaves on top of this so that the grease can drip down into the baking sheet. If you don’t have fancy contraptions like grill racks that fit into baking pans, don’t worry about it.

Bake at 350F for 20 minutes.

Meanwhile, make the glaze: Mix together tomato paste, water, Stevia, and Dijon mustard and set aside.

Remove the meatloaves from the oven and turn on the broiler. Move the oven rack about 6 inches away from the broiling element.

Cover the tops of the meatloaves with the glaze. Broil for 5-6 minutes until a thermometer inserted into the meatloaves registers 145F and the glaze has browned a little. Serve hot.

I’m loving this Italian Meatloaf with Marinara Parmesan Crust. There’s no fillers in this recipe, just high quality ingredients.

Italian Meatloaf with Marinara Parmesan Crust

onion (finely diced)

garlic (minced)

egg (lightly beaten)

basil

thyme

salt

tsp pepper

parmegiano reggiano (finely grated)

marinara sauce

Preheat your oven to 350 degrees.

Place all ingredients (except the marinara sauce and parmegiano reggiano cheese) into a large bowl. Mix thoroughly with your hands until all of the ingredients are well combined.

Place the meatloaf mixture into a loaf pan, gently pushing down until the top is flat.

Spread one cup of the marinara sauce evenly on the top of the meatloaf. Sprinkle the cheese on top.

Place in the oven and cook for one hour. When done, remove the meatloaf. You'll notice juice has pooled along the sides of the pan. Simply tilt the meatloaf while still in the loaf pan to drain the juice before serving.

Pizza Meatloaf

Preheat oven

Mix ingredients

In a large bowl, mix onion, ground beef, ground pork, pork panko, red pepper, oregano, parsley, egg and garlic.

Put meatloaf in pan

Place into a 7” round cake pan, loaf pan or casserole dish. Push down to mold meat to fit the loaf pan or dish.

Marinara time

Add of the marinara to the top of the meatloaf and spread to cover evenly. Cover with aluminum foil and place into the oven at 375 degrees for 30 minutes.

Pepperoni

Remove foil, add remaining sauce and ½ of the pepperoni slices. Replace foil and place back into the oven for 20 minutes. 

Finish your pizza

Add cheese and remaining pepperoni to the top of the meatloaf. Place back into the oven for 5-7 minutes, or until cheese is melted. Serve pizza pie style.

Rosemary (finely chopped)

Preheat

Preheat oven to 190C/375. Line an 8in loaf tin with parchment paper and set aside.

In a large bowl, add all ingredients, reserving a ½ cup of cheddar and 1 tablespoon of rosemary. Mix well.

Press

Press the mixture into your prepared loaf tin.

Bake for 30 minutes, then remove from the oven and top with the reserved cheddar and rosemary.

Bake

Bake for another 25-30 minutes until browned and cooked through.

Serve

Cut into thick slices and serve with a side of Broccoli Mash.

This has been my GO TO recipe while on Keto. It’s simple and absolutely delicious. The only thing I changed was omitting the rosemary (I’m not a fan). Otherwise, its the perfect comfort food, especially with the colder months coming. I pair it with cauliflower mash and a side salad. Yum, yum, YUM!

We had never made a chicken meatloaf before. We doubled the recipe and used pepper jack cheese and a few spoonfuls of diced tomatoes with green chilies in the recipe. It was so delicious I could eat the whole thing.
