Grain-free low carb "oatmeal" cookies, just like Grandma used to make! Okay, not exactly, but a healthy stand in for oats makes these cookies taste like the real thing.

“Oatmeal” Chocolate Chip Cookies

coconut

almonds

almond flour

coconut flour

tsp baking powder

cinnamon

tsp salt

butter (softened)

Swerve Sweetener

egg (room temperature)

vanilla

dark chocolate chips, sugar-free

cranberries

Preheat oven to 325F and line a large baking sheet with parchment or a silicone liner.

In the bowl of a food processor, combine the flaked coconut and sliced almonds. Process until mixture resembles oatmeal. Add almond flour, coconut flour, baking powder, cinnamon, and salt and pulse a few times to combine.

In a large bowl, beat butter with sweetener until creamy. Beat in egg and vanilla extract and then beat in coconut/almond mixture until well combined. Stir in chocolate chips by hand.

Form into balls a little over 1 inch in diameter and place 2 inches apart on prepared baking sheet. With the heel of your hand, press cookies down to about 1/2 inch thickness.

Bake 15 to 18 minutes, until golden brown around the edges and just barely firm to the touch. Remove and let cool on pan.

Keto Oatmeal Cookies

Slightly soft and chewy but with texture and crunch: these sugar free oatmeal cookies are my keto take on the real deal. Naturally, they don&#039;t actually contain oats, but some clever substitutions. Only 2.1g net carbs per cookie!

Keto Sugar Free Oatmeal Cookies

almond flour (or ground almonds)

unsalted butter (melted, then cooled)

coconut flakes

granulated sweetener (So Nourished)

tsp vanilla extract

tsp xanthan gum (optional)

salt (optional)

Preheat the oven to 350F / 180C / 160 fan and line a baking tray with greaseproof paper.

Using a sharp knife, chop 1/2 cup / 50g sliced almonds and the coconut flakes to resemble the size of oats. Option to use a food processor and pulse if you prefer.

Mix all the dry ingredients together in a mixing bowl (almond flour, erythritol, xanthan gum, baking powder, salt, chopped flaked almonds and coconut. Stir to combine.

Add the melted butter and egg and mix to form a dough.

Roll the mix into 9 balls.

Chop the remaining 1/4 cup of almonds.

Place the balls on a baking tray and press crushed almonds into the top.

Flatten the cookies and  shape the edges with your figures to remove cracks. Bake for 12-15 minutes until slightly golden.

Our Keto Oatmeal Cookie Recipe is finally here! Delicious soft sugar-free oatmeal cookies, without the oatmeal, and actually without any grains at all. Easy to make and a real crowd-pleaser, oh and don’t forget the chocolate chips or dried cranberries you can add in as well! 

Sugar-Free Keto Oatmeal Cookies

tbsp softened butter

golden monk fruit

salt

beef gelatin

tbsp oat fiber

½ tsp baking soda

sugar-free chocolate chips (optional)

cranberries (optional)

In a small mixing bowl add the almond flour, unflavored beef gelatin, oat fiber, baking soda, and cinnamon. Stir the dry ingredients together and set aside.

Using the stand mixer, add the butter and sweetener to the bowl. Use the paddle attachment and beat until creamy. 

Add the dry ingredients and beat again. 

Now add the egg and the vanilla. Mix the dough until creamy and all the dry ingredients are fully combined. Set aside for a few minutes. 

In a mini food processor or a blender add the slivered almonds. Pulse a few times, you want the pieces to be small but not ground too finely. It should resemble the size of oats. 

Add the chopped almonds into the cookie dough and stir until well combined. (If you are adding chocolate chips or dried cranberries, add them here.)

Place a silicone mat or parchment paper onto a baking tray. 

Using a cookie scoop, scoop the dough and place it onto a baking tray. 

Roll each one evenly, and then using the palm of your hand lightly press down each cookie dough ball. (The flatter you make them, the crispier they will be.)

Bake for 10 minutes. or until the top of the cookies start to turn golden brown. 

Let the cookies sit on the tray for a few minutes to cool. 

After about 5-10 minutes transfer the keto oatmeal cookies to a wire tray to finish cooling. 

This is a really great cookie I was wondering what else I could use for my Oat flour. Taste really great instead of using the Soucran gold I cheated a little bit and just add a little bit of molasses about 1 tablespoon. Taste great. Larry

Keto Oatmeal Cookies Recipe

Cup Unsweetened Shredded Coconut

Cup Slivered Almonds (Pulsed in a food processor)

Cup Almond Flour

Tbsp Coconut Flour

Tbsp Low Carb Sugar Substitute

tsp Baking Powder

tsp Pink Himalayan Salt

tsp Vanilla Extract

Drops Liquid Stevia

Egg (Room Temperature)

Stick Butter

In a food processor add slivered almonds (and coconut flakes if using). Pulse until almonds are about ⅓ of the original size. Transfer to a bowl and set aside.

Add almond flour, coconut flour, erythritol, baking powder and salt to the processor bowl. Pulse until combined. 

Once mixed, add the vanilla, stevia, and egg, pulsing until combined. Add chunks of butter and pulse until just combined.

Reserve 2 tablespoons of the coconut/almond mixture. Add the rest of the coconut and almonds to the dough and mix until combined.

Preheat oven to 375F. Line a baking sheet with parchment or silicone liners.

Use a cookie scooper to form 12 balls on the lined baking sheet.

Flatten balls a little bit with the palm of your hand, they will spread slightly when baked. Then sprinkle the remaining 2 tbsp of coconut and almonds on top of the cookies. Lightly press in the topping.

Bake for 8-10 minutes until golden brown. You can flatten the cookies more with the bottom of a glass once they come out of the oven if desired.
