The Best Keto Pizza Crust

almond flour

tsp xanthan gum ((optional))

tsp baking powder

tsp italian spices (see recipe here)

salt

1/16 tsp pepper (add 1/4 tsp if you like more pepper)

egg (room temperature, whisked)

mozzarella

Pizza sauce, shredded mozzarella, pepperoni, bacon, olives, peppers, mushrooms etc. (for topping)

Pre-heat oven to 350*F.

Add all of the dry ingredients to a bowl and whisk them together. (This includes almond flour, xanthan gum, baking powder, italian spices, pepper and salt).

In another microwavable bowl, add your shredded mozzarella and microwave for 30s at a time, stirring in-between until fully melted. (It takes me about 1min total but I have quite a terrible microwave, lol so yours may take less time).

Once the mozzarella is well-melted, add your whisked egg and mix (it's okay if these two don't fully combine).

Add your dry ingredients and mix again until a thick dough starts to form.

Use your hands as the dough comes together to continue mixing the mozzarella with the rest of the ingredients. You'll need to knead the dough for a couple minutes to get it to blend together. If you are still having difficulty blending the mozzarella with the other ingredients, see my tips above to help you out!

Once you can form a pretty even dough ball, transfer it to two large greased pieces of parchment or wax paper.

Roll the dough out to be the thickness of your desired pizza crust (~1/4-1/2 inch thick).

I rolled mine into a rectangular shape by gently pressing in the sides with my fingers to make it all even but you can make a classic round pizza instead! (Note in the picture my dough looks smaller, this is because I used a piece of leftover dough about 2/3rds of the size of the amount this recipe makes so you'll get a larger crust than mine).

Using the parchment paper to lift it, gently transfer the pizza crust onto a baking sheet and place in the pre-heated oven.

Bake for ~14-20min or until your your crust becomes golden brown around the edges. It should be firm enough to easily spread toppings on.

Turn your oven up to 400*F.

Next, add whichever toppings you prefer while the crust is still warm. Then place the pizza back in the oven to bake for another 7-10min or just until the cheese is melted/the toppings are warm.

I am new to the Keto Diet and this was a way to get my husband to eat healthier pizza if there is such a thing but I added the Carbs up from what I used which I will make better choices the next time but the 4 cups of mozzarella cheese had 32 carbs the eggs and pepperoni had zero carbs and the Ragu pizza sauce had 4 net carbs for 1/4 cup I used 1/2 cup sauce so total carbs 40 carbs but divided by 8 slices it is 5 total Carbs

Didn’t care for this. Tasted like overcooked eggs.

This Low-Carb Pizza Crust Is Shockingly Good

Easy keto pizza crust recipe that can be used for everything from pizza to garlic knots to cinnamon rolls!

Keto Pizza Crust Recipe

tbsp butter

coconut flour

garlic powder

tsp salt

Sprinkle a clean counter or a large silicone baking mat with almond flour.

In a large saucepan, melt the cheese and butter together over low heat until they are melted and can be stirred together.

Remove the pan from over the heat and add the almond flour, coconut flour, baking powder, garlic powder, and salt. Add the egg and stir everything together until a cohesive dough forms. Use a rubber spatula to really knead the dough together in the pan. It may still contain some streaks of cheese.

Turn the dough out onto the prepared work surface and knead until uniform. This will only take a little kneading. If your dough is still very sticky, add a tablespoon or two more almond flour and work it in.

Dough

Preheat the oven to 350ºF and place an oven rack in the middle position.

Roll the dough out between pieces of parchment paper to a 12 inch circle.  Remove the top piece of parchment and roll up the edge a little to create a crust.

Transfer the bottom parchment with the dough on it to a cookie sheet or pizza stone. Bake 10 to 15 minutes until starting to brown and firm up.

Remove the crust from the oven and top with your favourite toppings. Bake again until the toppings are melted and bubbly.

Pepperoni Fathead Pizza

mozzarella (divided)

cream cheese

Italian seasoning

sugar-free marinara

pepperoni

Preheat oven to 425 degrees.

Add 2 cups of mozzarella and cream cheese to a microwave safe bowl and microwave for 1 minute. Stir to combine and return to microwave until cheese has melted, about 30 more seconds.

Stir in the almond flour, egg, and Italian seasoning to combine.

Place the dough on a large sheet of parchment paper. Top with a second sheet of parchment.

Roll the dough out into a 12 inch diameter circle.

Remove the top piece of parchment and transfer the bottom sheet with the dough on it to a pizza pan.

Bake for 10 minutes or until crust is lightly golden.

For an extra sturdy crust that holds up well, carefully flip the crust over and bake for 3 more minutes.

Remove crust from the oven. Spread the marinara over the pizza crust and sprinkle with the remaining 1 1/2 cups mozzarella. Arrange pepperoni evenly over the top.

Bake the pizza for another 10 minutes. Cool 5 minutes before slicing and serving.

If you love leftover pizza for breakfast, you love this keto breakfast pizza with fresh crumbled bacon, basil and a creamy garlic sauce. Even a few eggs are cracked on the top for the ultimate slice of heaven first thing in the morning!

Keto Breakfast Pizza

Preheat oven

Melt the cheese

Place 3 cups of mozzarella in a microwave-safe glass bowl. Microwave until cheese is melted - about 2 minutes. Remove from microwave and let the mixture cool while combining the remaining ingredients. If you don't want to melt the cheese in a microwave, you can add it to a non-stick skillet and melt over the stovetop over medium heat.

Food process it

To a food processor, add almond flour, one egg, baking powder, xanthan gum, and salt. Scoop in melted mozzarella cheese. Pulse until a dough ball forms. If you don't own a food processor, you can mix the ingredients using an electric mixer or knead by hand until a dough is formed.

Flatten it

Place the dough in between two pieces of parchment paper. Using a rolling pin, roll out dough to desired thickness - about 1/8 to 1/4 inch thick. Remove top parchment layer and place the pizza dough and bottom parchment paper on top of a baking sheet or pizza stone.

You will need a small bowl

In a small bowl, combine ricotta cheese, garlic and 1/4 teaspoon of salt. Set aside.

Sprinkle evenly

Sprinkle 1 cup shredded mozzarella cheese and crumbled bacon evenly over the rolled out keto pizza dough.

Dollop and bake

Add dollops of garlic ricotta cheese mixture evenly over the pizza. Sprinkle red pepper flakes and grated parmesan cheese over the pizza. Bake at 400 degrees for 4 minutes.

Create some divots

Remove from oven. Use the back of a large spoon to make 4 divots on the pizza and crack remaining eggs into each divot. Return pizza to oven and bake for an additional 6-8 minutes or until egg white are almost set. Set oven to broil and broil pizza until eggs are cooked but yolks are still runny (about 30 seconds to 1 minute).

Finish with basil

Remove pizza from oven. Sprinkle basil over pizza.

In a large separate bowl, mix together the almond flour, baking powder, xanthan gum, salt and seasonings, if using. Set aside.

Mix dough

To a food processor, add melted mozzarella cheese, egg and dry ingredients. 

Knead pizza dough

Once combined, form a big dough ball. Knead the dough a couple of times on a lightly almond floured surface to ensure the dough is uniform in appearance and all ingredients are fully combined.

Layer between parchment 

Place the ball in between two pieces of parchment paper. You can also just use a silpat mat if you have one of those, but having that top layer of parchment paper keeps the dough from sticking to you and your rolling pin. Plus it allows you to roll out a nice thin pizza crust.

Roll out crust

Roll out dough to desired thickness. Remove top parchment layer and place on top of a baking sheet.

Bake

Bake in a 400 degree oven for 12 to 15 minutes or until crust is golden and cheese is bubbling.

Fat Head Dough Recipe (almond flour or coconut flour)

Mix the shredded/grated cheese and almond flour/meal in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute.

Heat

Stir then microwave on HIGH for another 30 seconds.

If you don&#39;t have a microwave, you can heat the shredded cheese and cream cheese in a medium saucepan over a low-medium heat. Make sure to mix and stir continuously to prevent the cheese from burning and sticking to the saucepan. Remove from the heat and add the almond flour or coconut flour.

Season

Add the egg, salt, rosemary and any other flavourings, mix gently.

Roll

Place in between 2 pieces of baking parchment/paper and roll into a circular pizza shape (see photos above). Remove the top baking paper/parchment. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or you will cook the egg.

Make fork holes all over the pizza base to ensure it cooks evenly.

Slide the baking paper/parchment with the keto pizza base, on a baking tray (cookie tray) or pizza stone, and bake at 220C/425F for 12-15 minutes, or until brown.

Turn

To make the base really crispy and sturdy, flip the pizza over (onto baking paper/parchment) once the top has browned.

Serve

Once cooked, remove from the oven and add all the toppings you like. Make sure any meat is already cooked as this time it goes back into the oven just to heat up the toppings and melt the cheese. Bake again at 220C/425F for 5 minutes.

I left out the egg (really I forgot it haha) but it was still dang delicious and one of the better keto pizza crusts I’ve had! Super simple too!

I found fathead dough well before I was aware of keto food blogs, and the place I got my original recipe from was very wordy and confusing.  Your explanations are clear and concise.  I definitely plan to use your recipe next time I want a fathead pizza.  I especially liked seeing the note about flipping the crust over halfway through baking.  Also, putting the almond flour in with the cheese at the start.  I think that will solve some of the issues I've had with baking (one side coming out darker than the other, for example).  One thing I would like to point out is that everyone's microwave is different, and as i recall, with my microwave I only need to nuke my dough for 60 seconds.  That gets it to where it needs to be, but it's not uncomfortably hot to handle and makes it easier to add the egg and work the dough.
