This easy, low-carb version of snowball cookies doesn't disappoint! Yum!

Sugar-Free Keto Snowball Cookies

almonds, chopped

almond flour

butter,

vanilla

Swerve confectioners

salt

Swerve confectioners (to roll cookies in after baking)

Powdery cookies are the most wonderful winter treat! Keto snowball cookies only have 1g net carb each and 5 easy ingredients.

Keto Snowball Cookies

Walnuts (finely-chopped)

Almond Flour

Swerve Confectioner's Sugar Substitute (plus 1/4 cup, divided)

tbsp Butter (softened)

tsp Vanilla Extract

In a mixing bowl, combine all of the ingredients, but only a ½ cup of the confectioners sugar substitute. Blend on high until well incorporated.

Chill the dough for 30 minutes to an hour.

Form the dough into 20 evenly sized balls, and place onto a parchment lined baking  sheet.

Preheat the oven to 400 degrees.

Bake for 10 minutes.

As soon as the cookies are cool enough to handle, gently roll them in the ¼ cup of confectioner sugar substitute. Let cool completely, and then roll them in the sugar substitute again before serving.

These Keto Snowball Cookies are melt-in-your-mouth buttery, flakey Mexican weddingg cookies with small pieces of pecans and covered with sugar-free powdered sweetener. Bonus, they are gluten-free and only contain 1.2 grams of net carbs per serving!

Unsalted Butter (soften, not melted equivalent 1 US stick)

Powdered Erythritol (not crystal, not xylitol)

Almond Flour (measure precisely, spoon and sweep method)

Salt

Vanilla Extract

Powdered Erythritol

Line cookie sheets

Line a cookie sheet with parchment paper. Set aside.

Beat butter and sweetener

In a large bowl, beat the soft butter with powdered sweetener until light and fluffy - it takes about 1-2 minutes.

Combine

With a kitchen spatula, stir in almond flour, salt, vanilla extract, and chopped pecans. You may have to use your hands to squeeze the ingredients together to incorporate them well. If the dough is too wet, add more almond flour, 1 tablespoon at a time.

Roll balls

Roll one tablespoon of dough between your hands to form a cookie ball.

Place on cookie sheet

Place each ball 1 inch apart onto the prepared cookie sheet - you will form 12 cookie balls.

Freeze

Place the cookie sheet with the 12 cookie dough balls in the fridge for 30 minutes. This is compulsory, or the cookies will spread too much!

Preheat oven

Bake

Bake for 18-22 minutes at 325°F (160°C) until slightly golden brown on the outside. The cookies will slightly expand and flatten.

Cool

Remove the cookies from the oven, cool down for 10 minutes on the cookie sheet then transfer to a cooling rack for another 15 minutes until lukewarm.

Prepare topping

Meanwhile, prepare a small bowl with the extra powdered erythritol.

Roll into powdered sweetener

Roll the lukewarm cookie balls into the powdered erythritol and return to the cooling rack until they reach room temperature.

Store

Store the cookies for up to 1 week in a sealed cookie jar at room temperature.

I just ate some. Too yummy! I've never made Wedding cookies. Unbelievably good! I made them this AM, but only eat one meal a day so had to wait for supper time. Wow-ie! I had to write again and comment how good they are! I wanna sell them on the street corner. Ha ha.

Wow!  These are absolutely wonderful cookies - so light, melt in your mouth just like you say.  I followed your directions to a tee except I used 1/2 tsp vanilla and 1/2 tsp almond extract. I'm sure I could not find a better keto snowball cookie any where.  They did slightly flatten but only a bit so they don't exactly look like ball-shapes, but doesn't matter to me.  Great Christmas cookie!

I followed the recipe exactly, only I  doubled it, and they came out perfectly! I’m not keto, but family members are, and even I think these are insanely good.
