firstly, in a large bowl rinse and soak ½ cup rice, ½ cup moong dal for 10 minutes.

in a cooker heat 1 tsp ghee and add soaked dal and rice.

saute for 2 minutes, or until the dal turns aromatic.

now add ¼ tsp turmeric, ½ tsp salt and 3¼ cup water. mix well.

cover and pressure cook for 5 minutes.

in a large kadai heat 2 tbsp ghee. add 1 tsp cumin, 1 bay leaf and pinch hing.

saute on low flame until the spices turn aromatic.

now add 1 onion, 1 tsp ginger garlic paste and saute well.

further, add 1 tomato and saute until the tomato turns soft and mushy.

keeping the flame on low add ¼ tsp turmeric, 1 tsp chilli powder, ½ tsp garam masala and ½ tsp salt.

saute for 2 minutes or until the spices turn aromatic.

now add cooked rice and dal.

also, add 1 cup water and mix well adjusting consistency as required.

cover and simmer for 5 minutes or until the flavours are absorbed well.

finally, add 2 tbsp coriander and enjoy dal khichdi with pickle and curd.

Khichdi recipe made with rice, lentils and spices is a super comforting one pot protein-rich Indian meal. It’s delicious, nourishing and wholesome. Instructions included for stovetop &amp; instant pot.

Khichdi recipe (Dal khichdi)

ghee ((clarified butter) or oil)

bay leaf (or 1 sprig of curry leaves (optional))

ginger

green chili (slit

tomatoes (deseeded & fine chopped or pureed (1 medium))

salt ((adjust

moong dal ((skinless petite yellow lentils) (or any other dal))

water ((more to adjust, for porridge consistency))

asafoetida ((hing) (optional))

ghee (for topping)

carrot

french beans (cut to 1 inch length)

potato (cubed)

Add rice and moong dal to a pot. Rinse them at least thrice &amp; drain water completely. If you do not have a cooker, then soak them for 30 to 40 mins. This will help them cook faster.

Heat ghee in a pressure cooker or pot on a medium heat. 

Saute bay leaf (optional) &amp; cumin seeds on a low flame for 1 min. 

Then saute ginger until fragrant for about 30 to 60 seconds &amp; sprinkle hing.

Add onions and green chilies. Saute them until the raw smell of onions goes away &amp; they begin to turn golden.

Next add tomatoes, carrots, beans, salt and turmeric. Saute for 3 to 4 mins. 

Then add drained daal and rice. Saute for 3 to 4 mins.

Pour 4 cups water for porridge like consistency or 3 cups for mushy consistency.

Stir well &amp; taste the water. Add more salt if needed.

Cover the pressure cook and let it cook for 2 whistles on a medium flame for a mushy khichdi. Cook for 4 to 5 whistles on a medium flame for porridge consistency. 

Let the pressure release on its own, then open the lid and mix well. If the consistency is too thick for your liking, pour about ½ to ¾ cup hot boiling water and simmer for 1 to 2 mins until dal khichdi begins to bubble. Taste test and adjust salt.

How to make khichdi in pressure cooker

If cooking in a pot, bring water to a boil on a high flame. Then reduce the flame to medium to low and continue to cook.

Leave the pot uncovered or partially covered so the froth won&#039;t overflow. Keep checking and add more hot boiling water (about ½ to ¾ cups) as needed until the lentils are fully soft cooked. 

When both are done, mash the khichdi slightly so you get a thicker consistency. Adjust salt as needed.

Transfer to serving plates and pour 1 tsp ghee on the hot khichdi. Serve with papad and pickle.

Khichdi in regular pan or pot

Press saute button (medium) on your Instant pot.  Pour ghee to the steel insert.

As soon as the ghee melts, add bay leaf and cumin seeds.

When cumin begins to sizzle add onions &amp; chopped chili. 

Saute until onions turn transparent. Next add in ginger, hing, tomatoes, all veggies &amp; turmeric. 

Saute for 2 to 3 mins until tomatoes turn mushy. 

Add drained rice &amp; lentils. Saute them for another 2 to 3 mins. 

Next add salt &amp; pour water. Deglaze the pot by scraping the bottom with a spatula to remove bits of food stuck in there if any. Mix well &amp; taste the water. 

Add more salt if needed. Secure the lid &amp; move the steam release handle to sealing.

Press the pressure cook or manual button (high pressure). Set the timer to 8 mins. Or you can also press porridge button &amp; set timer to 9 mins. 

Once it is done, the instant pot beeps, then press cancel and switch off. 

Wait for a natural pressure release for 10 minutes &amp; release the rest manually.

When the float valve drops, open the lid &amp; stir gently.

If you like soupy khichdi, add some hot boiling water to bring to consistency you like. Saute for 1 minute if you prefer.

Top dal khichdi with little ghee &amp; serve with pickle or papad or chutney.

Khichdi recipe is a delicious one pot meal of rice and moong lentils. Moong Dal Khichdi is light and easy to digest healthy food. Stove-top pressure cooker, Instant Pot and Stove-top Pan instructions are included in the recipe card.

Khichdi Recipe (Dal Khichdi)

moong dal ((split and husked mung lentils))

rice (- you can add any rice, regular short or medium grained rice

water (- as required)

Ghee ((clarified butter)

onions

tomatoes (or 1 medium-sized)

serrano peppers

turmeric powder ((ground turmeric))

asafoetida ((hing) - optional)

water (-

Rinse and wash moong lentils and rice together.&nbsp;

Soak both rice and lentils for 30 minutes in water.

After 30 minutes, drain all the water and set aside.

Soaking rice and lentils

Heat ghee or oil in pressure cooker. Add cumin seeds. When cumin splutters then add onions.

Sauté onions until translucent. No need to make onions light brown or golden brown.

Once the onions become&nbsp;translucent, then add tomatoes, green chilli and ginger.

Mix and add turmeric powder and asafoetida. Mix again and sauté until the tomatoes softens.

Add the rice and moong lentils to the pressure cooker.

Stir and sauté for a minute. Add water and season with salt.

Mix well. Check the taste of the water and it should be slightly salty.

Sautéing onions, tomatoes, spices

Close the lid tightly and pressure cook on a high heat for 7 to 8 whistles or 8 to 9 minutes on medium-high to high heat.

Switch off heat and wait. Let the pressure fall naturally in the cooker.

When there is no pressure in the cooker, remove the lid and check the consistency. If khichdi looks too thick, add some hot water and mix well.

Keep on sim or low heat to simmer for a few minutes until you get the right consistency.

The consistency of khichdi can be adjusted as per your choice by adding less or more water. Some people prefer thick and some thin consistency.

While serving drizzle 1 to 2 teaspoons of ghee on top while serving. Optional step.

Serve moong dal khichdi hot or warm with curd (yogurt) and accompanying salad.

Cooking khichdi

Press the sauté function of your IP. Let the display read &#039;hot&#039;. Add ghee or oil. Fry cumin seeds until they splutter.

Add onions and sauté until they soften. Tip in the tomatoes, ginger, green chillies and sauté stirring often until tomatoes soften. Stir in the turmeric powder and asafoetida.

Add soaked rice and lentils. Stir deglazing if needed.

Pour 3.5 cups water and salt. Deglaze removing any stuck ingredients from the bottom of the pan.

Seal with the IP lid and set the valve to the sealing position. Pressure cook on high pressure for 9 minutes. When you hear the beep sound, wait for 10 minutes and then do a quick pressure release lifting the valve carefully.

Check the khichdi consistency. If it is too thick, add some hot water and sauté for 1 to 2 minutes using the sauté function. If khichdi has a thin consistency, sauté for some more minutes until you get the desired consistency. Serve hot or warm.

Instant Pot Khichdi

To make khichdi in a pan, follow all the directions as listed for the pressure cooker version in a pan until you add the rice and lentils.

After you add the rice and lentils, give a good stir and sauté for a minute. Add 4 to 4.5 cups water and season with salt. Cover the pan and cook on a medium-low to medium flame until the lentils are softened and mushy.

Keep a check while cooking and if the water has dried up with undercooked lentils, add some hot water and combine well. Cover and continue to cook.

When the khichri is cooked, check the consistency. If thick, add some hot water and simmer for 1 to 2 minutes. For a thin consistency, continue too cook for some more minutes.

Dal Khichdi in a Pan (stove-top)

The sides that that pair great and make khichdi a satisfying complete meal are Curd (yogurt), Papad (roasted or fried), Pickle and Ghee - a teaspoon or two drizzled on top of the khichdi

You can also serve it with any raita or salad. I like to to enjoy khichdi drizzled with some lemon juice and served with Eggplant Fries or Potato Fries and with a finely chopped vegetable salad.

Serving suggestions

I always prefer to eat and serve khichdi fresh as it can become dry and lumpy on cooling or after some hours.

If you do end up with leftovers, you can store in the refrigerator in an air-tight container for up to 1 day.

I also prefer to reheat the dish in a saucepan instead of the oven so that I can add some water to thin it a bit and ensure everything is evenly heated before serving.

On cooling khichdi does thicken and becomes lumpy, so you have to add some water to it while reheating.

A simple cleansing recipe for Khichdi ( or Khichuri)   -an Indian, comfort food from the Ayurvedic tradition that helps sooth and heal the body.

Khichdi Recipe -Ayurvedic Detox Bowl

¼ cup split mung beans, split lentils (or whole mung beans

buckwheat (kashi) or (soaked, brown basmati rice)

veggie broth

chopped vegetables

cilantro parsley

lemon

In a medium pot, saute onion in oil over medium high heat for 2-3 minutes. Reduce heat to medium add ginger and garlic, and saute a few minutes, until golden and fragrant.

Add spices, pepper, salt and  stirring, toast for a few more minutes. Add soaked mung beans and buckwheat or soaked brown rice. Add water, broth and 2 cups chopped veggies bring to a good boil. Cover. Turn heat to low, and let simmer for 20 minutes. Check for doneness.

Continue cooking for 5 to 10 more minutes if necessary. Some rice takes longer, and if you do not pre-soak your whole mung beans, or brown rice, you will need to add more water, which will change the recipe proportions and flavor&#8230;so try to soak if possible.

Once it is done, taste and adjust salt and seasonings. If you like a more &#8220;porridge-like&#8221; consistancy add more veggie broth.

Spoon into bowls, top with fresh diced tomato and fresh cilantro or parsley and a pinch of salt and pepper, and a squeeze of lemon or lime.

 A drizzle a little olive oil over the top of the tomatoes is nice too.

Just whipped this up tonight, using some red cabbage, carrots and broccoli - substituted forbidden rice (cooked for 20 minutes, then added it) and used standard lentils - all organic to boot! Threw in some oregano in place of the coriander, and used spicy brown mustard for the seeds. This recipe is going to be a staple from now on - great flavors, wife loved it - now, if I could just get the 16 year son to step away from the chicken and dig into this!
