Kielbasa Potato Soup

Tablespoon Olive Oil

lb Kielbasa Sausage

Onion (finely diced)

Carrots

Ribs Celery (diced)

Garlic

All Purpose Flour

Chicken Broth

Frozen Cubed Hash Brown Potatoes

Red Chili Flakes

Milk

Salt

Pepper

Shredded Cheddar Cheese

Heat the oil in a large stock pot over medium high heat.  Add in the sausage and cook for approximately 3-4 minutes to brown the sausage.  Remove from the pan to a separate plate (leave the grease in the pan).

Add the diced onions, carrots and celery to the pan and sauté until soft (3-4 minutes).  Then add in the minced garlic and cook for 1 minute until aromatic.

Add the flour to the pan and whisk together with the onions.  Cook for 1 minute and then slowly add in the chicken broth (whisking it in as you add it). Make sure to scrape off any browned bits from the pan to add flavor to the soup.

Add in the cooked sausage, potatoes, red chili flakes, milk, salt and pepper.  Stir to combine all the ingredients.

Bring the mixture to a boil.  Then cover and reduce the heat to low.  Cook for 8-10 minutes until the potatoes are fork tender.

Remove the pan from the heat.  Stir in the cheddar cheese until melted and combined.

Taste test the soup and add in more salt if needed.

Then the soup is ready to serve and enjoy!

This Kielbasa Potato Soup recipe has juicy slices of savory Kielbasa with pillowy potatoes, kale, bacon, green onions, and a hint of cream!

¼ lbs. Yukon gold potatoes (or red potatoes)

kale (roughly chopped)

cheddar cheese (shredded)

¼ teaspoon EACH: dried thyme, paprika, pepper

Cut the bacon strips in half and fry in a large soup pot over low heat. Measure out the remaining ingredients while the bacon cooks.

Once cooked, transfer the bacon to a paper towel lined plate. Roughly chop once cooled. Leave the bacon drippings in the pot.

Set the heat to medium and add the whole kielbasa. Brown on each side for 2-3 minutes, increase the heat slightly if needed. Remove and set aside. Let it rest for 10 minutes, then cut into slices of desired size.

Turn the heat off. Wipe away any black spots and remaining bacon drippings but leave the brown fond in the pan, this will add more flavor to the broth.

Add the wine and set the heat to medium. Use a silicone spatula to “clean” the bottom and sides of the pot. Reduce by half, about 3-4 minutes.

Add the onions, celery, and butter. Soften for 5-6 minutes. Add the garlic, soy sauce, hot sauce, Dijon mustard, and seasonings. Cook for 1 minute.

Add the flour and cook for 2 more minutes, stirring continuously. Add the chicken broth in small splashes, stirring to incorporate. Slowly stir in the heavy cream and add the bay leaf.

Peel the potatoes and cut into ¾-inch pieces, then add them to the soup. Bring to a boil, then reduce to a simmer.

Add the sliced kielbasa and simmer uncovered until the potatoes are just fork tender, about 20 minutes.

Add the kale and let it wilt for 3-4 minutes. Reduce heat to low and gradually stir in the cheddar cheese. Remove from heat and garnish with bacon and green onions. Serve!

Absolutely delicious! I made this for our dinner the other night. I’ve made several of your soup recipes and really enjoy the combination of soy sauce and hot sauce in your recipes. I’ve started using them in other soup recipes. The addition of Dijon mustard to the mix…YUM! I used additional chicken broth in place of the wine since I didn’t have any on hand.
