This Kimchi Jjigae is quick &amp; easy to make, yet loaded with rich and comforting flavors to warm you up on a cold day. This delicious stew is incredibly savory and calls for a handful of ingredients to make the best kimchi stew in the comfort of your home. 

Easy Kimchi Jjigae (Kimchi Stew)

tbsp sesame oil

onion

garlic (minced)

kimchi

tsp sugar

rice water (anchovy stock, dashi, or water)

kimchi juice (from the kimchi)

Gochugaru (Korean red chili flakes) (to taste)

tbsp Doenjang (Korean soybean paste) (or soy sauce)

tuna (drained, can be skipped or subbed with pork or

tofu

tsp Dashida (Korean soup stock) (optional, to enhance flavor)

Add sesame oil to a pot over medium heat. Add onion, garlic, kimchi, and sugar, and cook for about 3-4 minutes, stirring often to ensure even cooking. Add rice water and bring to a boil.

When the stew starts boiling, add kimchi juice, Gochugaru, and Doenjang (or soy sauce). Cook for about 8 minutes, or to your desired consistency.

Add tuna and tofu and cook for another 2 minutes, and season with salt to taste, and add in Dashida if using. Garnish to your preference and enjoy!

Kimchi stew, or kimchi jigae, is a fiery red stew served in a served in a stone pot. Use store-bought broth, add tofu and a protein to make this at home!

Kimchi Stew (Kimchi Jigae Recipe)

onion ((thinly sliced))

kimchi ((450 grams, with juices, chopped))

chicken stock ((700 ml, can substitute fish or beef stock))

In a large pot, heat the oil over medium high heat. Add the onion, garlic, and pork belly, and cook for about 5 minutes, until the pork is lightly browned and the onions start to soften.

Add the kimchi and fry for 2 minutes. Then add the salt, sugar, chili flakes, gochujang, and broth. Stir until combined. Bring to a simmer, cover, and cook for 10 minutes.

Uncover and lay the tofu over the top. Replace the cover and simmer for another 10 minutes. Uncover for the last time and stir in the sesame oil. Garnish with the chopped scallion and serve immediately with steamed rice!

Warm and spicy kimchi jjigae is a beloved Korean dish. This version uses 100% plant-based ingredients, and is so yummy and flavorful!

Kimchi Jjigae - Vegan

Boiled the water, then pour the boiled water into a big bowl. Add the kombu and let sit for 15 minutes.

Slice the onion into chunks and mince the garlic cloves.

On a pot on medium heat, add the cooking oil and sesame oil. Add in the onion and garlic and stir for 1-2 minutes until the onion becomes transparent.

Add in 1 tbsp gochujang, 1 tbsp soy sauce, the kimchi and stir for 3 minutes.

Add in kimchi juice and kombu stock. Bring to a boil

Meanwhile, thinly slice the cabbage, mushroom and tofu.

Add the cabbage and mushroom to the pot and simmer for 7-10 minutes until softened.

Add in the tofu and sprinkle with some green onions and sesame seeds.

Serve the kimchi jjigae with a warm bowl of rice and enjoy!

Kimchi pork ribs (Deungalbi-kimchijjim: 등갈비김치찜)

ginger, minced

onion (about 8 ounces), sliced

green onions,

gochu-garu (Korean hot pepper flakes)

rice syrup

gochujang (Korean fermented hot pepper paste)

black pepper

garlic cloves, minced

Prepare the pork ribs

Soak the ribs in cold water for 1 to 2 hours, changing water a couple of times. Drain. Bring a large pot of water to a boil and add the ribs. Cover and cook for 5 minutes until some brownish foam and smelly fat floats to the surface. Rinse the ribs in cold running water and drain. Put them into a large bowl and wash the large pot that the ribs were in. Add all the ingredients for seasonings into the bowl with the ribs and mix it all together by hand. You can wear a rubber glove for this if you want. Place the onion on the bottom of the pot and add the seasoned ribs over top. Then lay the kimchi on top of the ribs. Cut the stem of the kimchi with a kitchen knife or scissors so that the kimchi will be cooked nicely. Add 5 cups of cold water.

Cook

Cover and cook for 1 hour over medium high heat until the meat is falling off the bone. Open the lid and turn the kimchi over. Add 2 cups more water and the green onion. Reduced the heat to medium and cook for another 10 minutes with the lid on. 

Serve

Serve right away with rice. You can serve it in the large pot or transfer it to a large platter for a more refined presentation. Cut the kimchi stems with scissors or a kitchen knife and serve with rice. You can also serve with and a few more side dishes if you want to. You can refrigerate it up to 1 week and just reheat it before serving.

When I eat the kimchi, I don&#039;t cut it into bite size pieces, instead I tear it into long strips. Then I put it over some rice on my spoon and eat it. Then I add some leftover broth to my rice bowl, mix it together and eat it. The way the ribs and kimchi season and complement each other to make this dish special. It&#039;s best to use baby back ribs for this recipe, which are shorter, leaner, and more tender than spare ribs. They also take less time to cook. I posted another kimchijjim recipe years ago where I used pork belly and kimchi. Both dishes are great but they have different flavors and they have their own unique taste even though they have similar ingredients. You can try both! Enjoy the recipe! Ingredients. Spicy, sweet &amp; sour kimchi stew with chewy tofu that comes together in less than 30 minutes! SO warming and flavorful! Vegan + just 6 ingredients!

Tofu Kimchi Stew

tbsp oil

tbsp coconut sugar (or white sugar)

kimchi (about 12 ounces)

tsp gochugaru (Korean chili powder) (optional, for extra spiciness)

water

Fry the tofu: Cut the tofu into bite-size rectangles of about 1/2-inch thick. If using medium tofu, press it between a few sheets of kitchen paper towel to remove excess moisture. Heat a few tablespoons of oil in a non-stick skillet and fry the tofu until golden brown on both sides, about 5 minutes. You can also deep-fry the tofu or use an air-fryer. The goal is to have golden brown tofu. Transfer the fried tofu to a plate lined with a kitchen paper towel to remove excess oil.

Heat a tablespoon of oil in a deep saucepan or clay pot. Once hot, add the minced garlic and cook for 2-3 minutes or until fragrant.

Next, add the fried tofu, soy sauce, coconut sugar, and a tablespoon of water. Stir to coat and let the tofu simmer in the sauce for 2-3 minutes. This will allow the tofu to absorb the sweet and salty sauce.

Add the kimchi with its juice to the pot, as well as the Korean chili powder and water. Let simmer covered for about 10 minutes. Taste and adjust saltiness if needed, and serve!
