This spicy king oyster mushroom stir-fry recipe is incredibly tasty and also completely vegan. All you need is 8 ingredients!

Spicy King Oyster Mushroom Stir-Fry (Vegan!)

oyster mushrooms ((450 grams))

vegetable oil ((divided))

ginger

garlic ((sliced))

spicy bean sauce

soy sauce

sugar

peppers

Spicy King Oyster Mushroom Stir-fry (Vegan!)

Cut each oyster mushroom in half lengthwise. Place each mushroom half flat side down, and score with your knife lengthwise. Make the slices deep, without slicing completely through the mushroom. Then make perpendicular cuts across the lengthwise cuts, again making sure not to slice all the way through. Every third cut, slice through the mushroom to create ½ inch pieces.

Heat 4 tablespoons oil in a wok over high heat. Fry the mushrooms lightly in the oil until golden brown on one side. Flip and fry on the other side until golden. Continue frying until the mushrooms are tender. Remove the mushrooms from the oil.

Reduce the heat to medium low. Add another tablespoon of oil to the wok. Add the ginger, and cook for 1 minute. Add the garlic and cook for another 30 seconds. Stir in the spicy bean sauce and cook for another 30 seconds.

Add the mushrooms back to the wok, along with the light soy sauce and ½ teaspoon sugar. Add the peppers to the wok and stir-fry everything together for another 2 minutes. Serve!

This miso-enriched brothy soup is pleasing on many levels. You get complex flavor with minimal effort, especially if you make the dashi in advance. All the little garnishes are optional.

dried shiitake mushrooms, crumbled

white or red miso

Enoki mushroom tips

scallions

shiso leaves, slivered

Sunflower sprouts

nori

red pepper

sesame seeds

Make the dashi: Put kombu, dried shiitakes, soy sauce, mirin, sake and sugar in a large soup pot. Add 6 cups cold water. Place over medium heat, allow the liquid to barely reach a boil, then reduce heat to low and let cook at a very slow simmer for about 30 minutes. Skim foam as necessary. Let cool to room temperature. Strain through a fine-mesh sieve and add salt to taste. (Dashi may be prepared up to 2 days in advance.)

Put the sliced mushrooms in a bowl and drizzle with sesame oil and soy sauce. Add garlic and ginger and season with salt and pepper. Toss and let marinate for 10 minutes.

Put dashi in a large soup pot over medium-high heat and bring to a simmer. Add mushroom mixture and cook gently for about 5 minutes, until the mushrooms are just tender.

Remove 1/2 cup hot broth from pot and place in a small bowl. Stir in miso to dilute, then return miso-broth mixture to the pot. Taste and adjust seasoning. Once the miso has been added, do not let the soup boil.

To serve, cut the tofu in half and place a 3-ounce chunk in each of two large bowls. Ladle 2 cups of hot soup over the tofu. Sprinkle with enoki mushroom tips, scallions, shiso, sunflower sprouts, nori, red pepper and toasted sesame seeds as desired.

Pan-Fried King Oyster Mushrooms

mushrooms

kosher salt and black pepper

nutmeg

parsley leaves

lemon, zested

unsalted butter

Preheat a large cast-iron skillet over medium-high for 5 minutes.

Slice large mushrooms in half lengthwise, leave smaller mushrooms whole.

Reduce heat to medium and add oil; swirl to coat pan. Arrange mushrooms in an even layer, as best you can, cut side down. Cook, without moving, for 3 minutes.

Season mushrooms with ¼ teaspoon each kosher salt and pepper; toss and continue cooking until golden brown all over, about 5 minutes.

Reduce heat to medium-low, add butter, garlic, and nutmeg and cook 2–3 minutes until garlic is toasted.

Remove skillet from heat and add parsley leaves and ½ teaspoon zest.

Stir to combine then season with additional salt, pepper and lemon zest to taste.

This Vegan Teriyaki Chicken features king oyster mushroom cutlets wrapped in tofu skin and simmered with a sweet and savory teriyaki sauce.

Vegan Teriyaki Chicken

oyster mushrooms

yuba (tofu skin)

tbsp corn starch

salt

tsp black pepper

tbsp sugar

water

Cut the heads off the king oyster mushrooms. Use the heads for another recipe.

Boil the king oyster mushrooms for 10 minutes, it should turn a darker color. Then transfer the mushrooms to an ice bath.

Use a knife to cut around the king oyster mushroom in a spiral motion until you get a large cutlet. Repeat with the remaining mushrooms, you’ll have 4 cutlets.

Combine all the ingredients to make the marinade ingredients.

Rub the mushroom cutlets with the marinade on both sides and add a thin layer of cornstarch.

If using dry yuba (tofu skin): rehydrate the tofu skin by letting it soak in hot water for about 5 minutes. Drain the water.

If using fresh or frozen yuba, this step is not needed.

Wrap the mushroom cutlets in the tofu skin.

Fry the tofu skin-wrapped mushroom in oil until golden brown on both sides.

Make the Teriyaki sauce by combining soy sauce, sugar, mirin, and water in a bowl and mixing well.

Drizzle the sauce on top of the mushrooms until it comes to a low simmer. Flip occasionally so both sides can absorb the sauce.

When the vegan chicken gets a nice brown glaze and most the sauces are absorbed, remove from heat and transfer to a plate.

Cut the vegan chicken into slices. Enjoy with rice and/or veggies of choice!
