Preheat the oven to 400 degrees F. Place a skillet over medium heat and add the butter, onions, and garlic. Sauté for 3-5 minutes to soften.

In a large bowl mix the sautéed onions and garlic, chopped chicken, sour cream, salsa verde, chopped green chiles, cilantro, and&nbsp;cumin.

Tear the tortillas into rough pieces.&nbsp;Spoon one-quarter of the chicken filling in the bottom of a 3-quart baking dish. Top with 1 cup shredded cheese. Then spread a single layer of torn tortillas over the top. Repeat layering the chicken filling, cheese, and tortillas three layers high, using up all the tortillas. Spread the last one-quarter of chicken filling and 1 cup of cheese over the top.

15-20 corn tortillas (cut in half)

unsalted chicken broth, separated

unsalted butter

olive oil

(14 ounce) can of fire-roasted, diced tomatoes (drained)

green chilis

chili powder

Kosher salt

¾ cup freshly grated Monterrey Jack cheese

Preheat oven to 375° and have ready a 9x13” greased baking dish.&nbsp;Place the halved tortillas in a shallow dish (like a&nbsp;pie dish), and pour over 1 cup of chicken broth. Set aside and allow to soak.

In a large rimmed sauté pan over medium-high heat, melt together butter and olive oil. Add celery, onion, and bell pepper and sauté until softened and onions are translucent, 5-8 minutes.Add mushrooms and sauté until juices have released and they begin to take on a brown color, about 10 minutes. Add the garlic and sauté 30 seconds to a minute.&nbsp;

Sprinkle over the flour and stir until a paste coats the vegetables. Slowly drizzle in the remaining 4 cups of chicken broth, whisking constantly until flour has completely dissolved and no lumps remain.&nbsp;Allow mixture to come to a boil, then reduce the heat to medium and allow to simmer about 5 minutes, or until the mixture has thickened.

Stir in the tomatoes and green chilis and allow to simmer for another five minutes. Add the chili powder, cumin, salt, pepper and 2 tablespoons of cilantro. Stir once more, remove from heat and set aside.&nbsp;

Combine the Cheddar and Monterrey Jack in a small bowl, and set aside.

Spoon a thin layer of sauce on the bottom of the dish and then add a layer of tortillas.&nbsp;Add a layer of sauce over the tortillas, followed by a&nbsp;layer of chicken and then a third of the cheese mixture.&nbsp;Repeat with another layer of tortillas, sauce, chicken, and half of the remaining cheese.

Add one more layer of tortillas, along&nbsp;with the remaining sauce, and cheese. Bake for 25-30 minutes until bubbly.&nbsp;Sprinkle with the remaining cilantro and set aside to cool for at least 15 minutes.

Preheat oven to 350 degrees F. Grease a 9x13 casserole dish.

Dice the chicken in small pieces, season with salt and pepper.

Get prepped

Heat the vegetable oil in a large skillet, cook chicken until browned and cooked through. Remove from skillet, set aside.

Cook the chicken

In the same skillet, melt the butter, and sauté the onion and bell peppers until softened.

Sprinkle the flour over the top and continue to cook briefly.

Add in the chicken stock, canned tomatoes and green chiles. Bring to a simmer and allow to thicken.

Remove from the heat and stir in the sour cream and ½ cup of the cheese.

Make the sauce

Set aside about ½ cup of the sauce for topping.

Spread a little of the sauce mixture in the bottom of a 9x13-inch baking dish.

Layer the dish with half the chicken, top with half the sauce and sprinkle with cheese.

Add a layer of tortillas.

Repeat layer using the remaining chicken and sauce, and sprinkle with cheese.

Layer the rest of the tortillas over the top.

In a large skillet heat the oil over medium high heat. Add in the chopped onion and bell peppers and saute until tender, about 2-3 minutes. Transfer to a large bowl.

Add both cans of condensed soup, diced tomatoes with chile peppers, chicken broth, sour cream, oregano, cumin, ancho chile powder, and chipotle chile powder to the bowl with the cooked onion mix. Stir this until the sauce is well-combined.

In your 9x13 baking dish spread a few tablespoons of sauce in the bottom. Layer 1/2 of the chicken, 1/2 of the sauce, 1/2 of the Cheddar cheese, and 1/2 of the chopped tortillas.

Sprinkle the rest of the chicken over the tortillas. Spread all but 1/2 cup of the remaining sauce over the chicken, then top with another 1/3 of the Cheddar, and the rest of the tortillas.

Spread the remaining 1/2 cup of sauce over the top, and sprinkle the remaining Cheddar cheese evenly to top it off.

Bake the casserole in the preheated oven until bubbling, about 40 minutes.

Let it rest for 10 minutes, garnish with chopped parsley and serve!

Add the canned soup, 1/3 of the tortilla strips, and Rotel. Mix together until thoroughly combined. Add the chicken and mix again. Remove from heat.
