King Ranch Chicken Casserole

Preheat the oven to 400 degrees F. Place a skillet over medium heat and add the butter, onions, and garlic. Sauté for 3-5 minutes to soften.

In a large bowl mix the sautéed onions and garlic, chopped chicken, sour cream, salsa verde, chopped green chiles, cilantro, and&nbsp;cumin.

Tear the tortillas into rough pieces.&nbsp;Spoon one-quarter of the chicken filling in the bottom of a 3-quart baking dish. Top with 1 cup shredded cheese. Then spread a single layer of torn tortillas over the top. Repeat layering the chicken filling, cheese, and tortillas three layers high, using up all the tortillas. Spread the last one-quarter of chicken filling and 1 cup of cheese over the top.

Bake for 20-25 minutes, until golden and bubbly. Wait at least 5 minutes before cutting. Serve warm!

Baked Ranch Chicken with Bacon (Chicken Bacon Ranch)

boneless (skinless chicken breasts)

Ranch dressing

Parmesan cheese (divided)

Kosher salt

black pepper

bacon crumbles

fresh parsley

Heat oven to 375°F and spray an 8 x 11-inch baking dish with cooking spray.

If the breasts are uneven in thickness, pound them to an even 1” thickness using a meat pounder.

Sprinkle both sides of meat with half the grated Parmesan cheese, salt and freshly ground black pepper. Place the chicken in the prepared baking dish.

In a medium bowl, whisk together Ranch dressing and sour cream. Pour the mixture over the chicken breasts and sprinkle with remaining Parmesan cheese.

Bake at 375°F for 20-30 minutes or until a meat thermometer inserted in the thickest part of the breast reads 150°F.

Set oven to broil and broil the breast an additional 2-4 minutes or until the chicken turns golden. It will burn quickly so watch closely.

The chicken is cooked through when the thermometer reads 160°F when inserted in the thickest part of the middle breast.

Remove from the oven and sprinkle with cooked bacon crumbles. Allow the chicken to rest a few minutes before serving.

Garnish with diced parsley, if desired.

King Ranch Chicken Casserole is a classic recipe using chicken layered with a creamy sauce studded with peppers and onions, then baked in a casserole dish with cheese and corn tortillas.
This is a great family meal that everyone will enjoy!

Tbs vegetable oil

lb boneless (skinless chicken breast)

Salt and pepper

Tbs taco seasoning

Tbs butter

onion

green bell pepper (diced)

red bell pepper (diced)

Tbsp all-purpose flour

chicken broth

tomatoes with green chiles

corn tortillas

cheddar cheese (divided, about 12 ounces)

Preheat oven to 350 degrees F. Grease a 9x13 casserole dish.

Dice the chicken in small pieces, season with salt and pepper.

Get prepped

Heat the vegetable oil in a large skillet, cook chicken until browned and cooked through. Remove from skillet, set aside.

Cook the chicken

In the same skillet, melt the butter, and sauté the onion and bell peppers until softened.

Sprinkle the flour over the top and continue to cook briefly.

Add in the chicken stock, canned tomatoes and green chiles. Bring to a simmer and allow to thicken.

Remove from the heat and stir in the sour cream and ½ cup of the cheese.

Make the sauce

Set aside about ½ cup of the sauce for topping.

Spread a little of the sauce mixture in the bottom of a 9x13-inch baking dish.

Layer the dish with half the chicken, top with half the sauce and sprinkle with cheese.

Add a layer of tortillas.

Repeat layer using the remaining chicken and sauce, and sprinkle with cheese.

Layer the rest of the tortillas over the top.

Spoon over the reserved half cup of sauce, and sprinkle with the remaining cheese.

Bake the casserole in the oven for 15 minutes or until the cheese is melted and the casserole bubbles up around the edges.

Devour.

Spray a 13 x 9-inch baking dish with cooking spray and set aside.

In a large skillet over medium-high heat, sauté bell pepper and onion until tender (about 5 minutes). 

In a large bowl, stir together chicken, condensed soups, tomatoes and chilies, and sautéed bell pepper and onion.

Arrange half of the tortillas in an even layer in the bottom of the prepared baking dish. I like to cut the tortillas in half so that it’s easier to cover the dish. It’s fine if they overlap some, too.

Spread half of the chicken mixture over the tortillas. Sprinkle with half of the cheese.

Repeat layers with remaining ingredients, finishing with cheese on top.

Bake, uncovered, for 25-30 minutes (or until heated through and bubbly).

Preheat the oven to 350 degrees Fahrenheit and grease a 9x13-inch baking dish with cooking spray.

In a medium skillet, heat the oil over medium high heat, add in the green bell pepper, red bell pepper, and onion. Season with salt and pepper and sauté until the vegetables are tender.

In a large bowl mix together the sauteed vegetables, shredded chicken, tomatoes, green chiles, cream of mushroom soup, cream of chicken soup, garlic powder, chili powder, salt and pepper.

In a separate bowl, mix together the cheddar and pepper jack cheeses.

In the bottom of the baking dish layer enough tortilla chips to cover the dish in an even layer. Pour ½ of the chicken mixture on top of the tortilla chips and ½ of the cheese mixture on top of the chicken.

Repeat these layers 1 more time for a total of 2 layers of chips, chicken, and cheese, ending with the last layer of cheese.

Bake the casserole until the top is bubbly and golden about 20-30 minutes. Remove the casserole from the oven and let it rest for at least 10 minutes before serving.
