Sis köfte er grillspyd med kjøttdeig. De kan også kalles kofta kebab.  De er gjerne kraftig krydret og servert i ferske pitabrød eller lefser.

Sis köfte - tyrkisk kebab

800 g kjøttdeig av lam

stk. løk

båter hvitløk

ss hakket bladpersille eller koriander

ts paprikapulver

ts malt spisskummen

0,5 ts kajennepepper

ts salt

0,5 ts kvernet pepper

stk. trepinne

ss olje til pensling

Finhakk løk og hvitløk og bland det godt inn i kjøttdeigen sammen med finhakkede urter, krydder, salt og pepper. Sett kaldt i ca. 1/2 time.

Del deigen i åtte like store deler. Form hver del til en oval kake og stikk et grillspyd gjennom hver.

Varm en stekepanne med olje eller varm en grillpanne/grill. Stek/grill köftene i 5-6 minutter til de har fått fin farge og er gjennomstekte. De kan også brunes og stekes ferdig i stekeovn.

Server köftene som her, i ferske lefser med salat og tzatziki eller yoghurtdressing, eller med sitronbåter, stekte poteter og salat.

I always feel the kofte made with lamb meat are the best coz lamb has that moist texture and intense taste. The baby veal ones are equally good. But the beef ones are dry, so whenever I make the beef kofte I add the egg white to keep them moist. It also helps them bind so they don't break when you are frying them

Fried Lamb Kofte

lb lamb/veal/beef

channa dal (bengal gram)

onion

garlic

green chillies

cilantro

cloves

green cardamoms

turmeric powder

vegetable oil

Clean, wash the channa dal, meat and peel the onions and garlic. You don't need to soak the channa dal at all.

Add all the above ingredients in the list to the pot and bring to boil. Pound the cloves and green cardamom before adding them to the pot. The moisture in the meat and dal is enough to steam the meat and dal mixture. If it is too dry then add 2 - 4 tbs of water. Close the lid lightly and steam for 2 minutes or until the meat colour is no longer pink. You don't need to use the pressure cooker or instant pot. You can even just cook it by turning over the dal and meat till the colour changes.

Let the mixture cool for 5 to 10 minutes while you prepare your other food - rice, curry, salad to eat with it.

Using an all purpose wet grinder, grind the dal, onion and green chillies first, remove set aside. Sometimes I don't cook the green chillies and add them raw to the grinder to get that sting and green chilli flavour.

Add all the meat pieces and chopped fresh cilantro to the grinder and pulse them till they get shredded.

Mix the shredded meat with the ground channa mixture. Knead it with your hands, adjust the salt, shape into diamonds or flat rounds and deep fry them to crisp light brown. You can serve them with mint chutney as an appetizer or eat it with rice, dal, curry etc. Enjoy!

Easy & Delicious Adana Kebab Recipe

minced lamb

parsley leaves (washed & finely chopped)

chilli flakes (hot red pepper flakes)

sweet paprika

cumin

salt & pepper (to season)

garlic (peeled & crushed (or grated))

green peppers (optional)

flatbreads (optional)

parsley leaves (finely chopped)

Add Ingredients

Except for the green peppers and the flatbreads, place all of your ingredients in a large mixing bowl.

Mix them altogether and knead the mixture for a couple of minutes to make sure all the kebab ingredients are well mixed.

Separate

Wet your hand with cold water and take one of the balls of minced lamb mixture.

Mould

Now take your wide skewer in the other hand and, starting at the pointed end, mould the meat mixture around the skewer, teasing the meat along the length of the skewer as you go.

Leave gap

Leave a gap at the end so that you can turn your kebabs easily.

Fridge

When you have completed all of your kebabs, place them in the fridge for a minimum of one hour to rest.

Accompaniments

Meanwhile, you can make your sumac onion salad and prepare any other accompaniments.

Onions

Place your onions in a small bowl and add your sumac and salt.

Coat

Give them a good mix so that the sumac coats all the onions.

Brush

Place your griddle pan (cast iron skillet) on the hob and lightly brush with olive oil.

Heat

Heat the pan over a high heat for a couple of minutes and then turn the heat to medium.

Add kebabs

Carefully lie your Adana kebabs flat in the pan and leave them in place for 5 minutes.

Green peppers

If you are cooking long green peppers, add these to the pan also.

Turn kebabs

After 5 minutes, turn them over and cook the other side. Your kebabs shouldn&#39;t stick but if they do need a little help, gently tease them away from the griddle by sliding a spatula under them.

Turn peppers

Turn your peppers at the same time and cook for a further 5 minutes.

Flatbreads

Remove your cooked kebabs and peppers from the pan and place your flatbreads on the griddle to warm.
