Every New Year’s day,  Koreans make Dduk Guk/Tteok Guk and share it with their family and guests who visit their homes. During the New Year holiday, many Koreans travel back to their hometown. 
You can use chicken stock or beef stock instead of anchovy stock.

Tteok guk (떡국) – Korean rice cake soup

lb rice cake slices/ovalettes for soup ((떡국떡 Tteok guk tteok))

anchovy stock

green onions ((sliced thin))

Tbsp chopped garlic

Tbsp soup soy sauce ((guk ganjang 국간장))

tsp salt

black pepper

seaweed

beef beef ((optional))

soy sauce ((jin ganjang 진간장))

tsp sugar

Tbsp rice cooking wine

Tbsp sesame oil

Tbsp minced garlic

tsp black pepper

Prepare the anchovy stock - see My Tips page (under Korean Ingredients menu) on how.

Rinse and soak rice cake in cold water (especially if the rice cake is frozen) for 5 to 10 minutes.

Whip 2 eggs in a bowl and season with some salt and pepper.

Drizzle oil in a non-stick frying pan and heat on medium high heat. Pour egg into the pan and immediately lift the pan off the heat. Swirl egg around the pan to spread it evenly to make a thin crepe like pancake. Put the pan back onto the heat, lower the heat to medium and when the egg is almost cooked like the picture below, turn it over.

When the egg is all cooked, take it out of the pan and let it cool on your cutting board. When it is cool enough to handle, fold it into overlapping thirds (tri-fold).  This way, you can cut the strips more uniformly.

If you are working with a piece of brisket or stew meat, slice the meat into thin strips and season it with soy sauce, sugar, mirin, garlic, pepper and sesame oil. Mix it well.

You can also use ground beef instead – this will save you the extra work of slicing the beef.  Cook the beef in a frying pan on medium high heat until fully cooked. No need to add any extra oil.

Heat anchovy stock in a pot over medium high heat. Season soup by adding salt, gook kanjang and chopped garlic. You can also add sliced onions and carrots to the soup to add some color and additional nutrients. Bring to a boil.

Drain rice cake slices and add to the boiling soup. Cover pot and cook for few minutes. When rice cakes float to the top, they are now cooked and ready to eat. Turn off the heat, sprinkle some black pepper and add sliced green onions.

Taste soup and adjust seasoning if needed. Add more salt if needed. Ladle rice cake soup into a bowl.&nbsp;

Garnish with beef, egg, green onions and roasted seaweed. Sprinkle some sesame seeds and extra black pepper if you’d like and there you go!

Japchae is a classic Korean Glass Noodle dish that has beef, carrots, spinach, mushrooms and onions. Great dish to serve at dinner parties or pot luck. Omit beef for a wonderful vegan version.

Japchae - Korean Glass Noodles

Tbsp canola oil or vegetable oil

carrot (, julienned (approx 1 C))

onion (, sliced thin)

spinach

oz Korean glass noodles

wood ear mushroom ((목이버섯 mokibeoseot) OPTIONAL)

mushrooms

beef

soy sauce

tsp sesame oil

tsp rice cooking wine

garlic powder ((or 1/4 tsp fresh chopped garlic))

Tbsp sugar

sesame oil

soy sauce (Jin Ganjang)

Tbsp sesame seeds

Cut beef into thin strips, against the grain.

Make beef marinade in a large bowl.  Add the beef, mix and let it sit for a few minutes.

BEEF

Boil 8-10 C of water in a pot and cook the dangmyeon according to package instructions(e.g.6 min) or until the noodles become clear and is soft all the way to the center of the noodle.

Drain cooked noodles. While noodles are still warm, season with soy sauce, sugar and sesame oil. Cut the noodles with scissors a few times.

Glass Noodles

Boil salted water  (6 C water + 1 tsp salt). Quickly blanch spinach in boiling salted water. Do not cook the spinach more than 40 seconds. Spinach should be still a bit chewy and not too mushy.&nbsp;

Shock cooked spinach in cold or ice water, drain and squeeze gently to remove excess water.

Season the blanched spinach with some salt (1/2 tsp) and sesame oil (1 tsp). Set aside.

If using dried shitake and/or wood ear mushrooms: soak them in some warm water for 10-20&nbsp; min or so until they are fully hydrated.&nbsp;

Clean the fresh or rehydrated mushrooms by rubbing each mushroom under cold running water.

Cut shitake mushrooms into thin strips. Cut wood ear mushrooms into wide strips. Set aside.

Julienne carrots and onions and set aside.

Carrots and Onions

Saute each of the ingredients separately and let them cool. Saute ingredients one by one in the following order: onions -&gt; carrots -&gt; mushrooms -&gt; beef. Just wipe off any excess oil and crumbs with a paper towel after cooking each ingredient and you should be good to go!

- Add 1 T oil in frying pan on medium heat. Add onions and sprinkle a pinch of salt. Saute until onions become transparent but not brown. Remove

- Add 1 T oil in same pan. Add carrots and a pinch of salt. Saute carrots until they are soft and tender. remove.

- Add 1 T oil. Add mushrooms and a pinch of salt. Saute for 3 mins or so and the mushrooms should be done.

- Add 1/2 T oil in frying pan on medium-high heat. Saute the beef until they are fully cooked. If there are any extra juices in the pan, cook a little more until it's evaporated.

Transfer each of the onions, carrots, mushrooms and beef to a plate and let them cool.

Saute Ingredients

Add all the cooked vegetables and beef to the noodles and mix them altogether. Sprinkle some toasted sesame seeds. Adjust the seasoning with more soy sauce and sugar as needed.

Unless you like things really bland,&nbsp; it will taste much better if you add more soy sauce, (1~2 Tbsp), sugar (1~2 tsp) and sesame oil (1 Tbsp) as the final finishing touch. Amount is based on 200g dangmyeon.
