Kislo zelje, pikantna klobasa in svinjski kotleti tvorijo osnovo te okusne in za pripravo zelo preproste domače jedi, ki se speče v pečici. Zraven se priležejo številne priloge, od kuhanega krompirja do kruhovih cmokov, ko se vam mudi ali ne ljubi kuhati, pa je odlična izbira tudi kruh, ki vam bo v veliko pomoč pri mazanju krožnikov in pekača.

	Kislo zelje stresemo na cedilo in ga poskusimo. Če se nam zdi prekislo, ga na hitro splaknemo pod tekočo vodo in dobro odcedimo. 



	Čebulo olupimo, drobno sesekljamo in posteklenimo na segreti maščobi. Dodamo odcejeno zelje in ga na hitro popražimo, da se malo zmehča. Začinimo s kumino in lovorjevim listom ter odstavimo. 



	Kotlete operemo, osušimo ter začinimo s poprom in soljo. Na obeh straneh jih na hitro popečemo v ponvi na segretem olju. Klobase poljubno narežemo na rezine ali kolobarje. 



	Pečico segrejemo na 180 stopinj Celzija. Pekač namastimo z mastjo ali oljem. Po dnu razporedimo tretjino popraženega zelja in nanj položimo popečene kotlete. Po mesu razporedimo tretjino zelja in po njem potrosimo narezane klobase. Sledi še zadnja plast zelja. V pekač prilijemo 2 dl vode, potem pa ga za 1 uro potisnemo v ogreto pečico. Če se nam zdi potrebno, vanj med pečenjem prilijemo še malo vode. 



	Ko je jed pripravljena, mora biti zelje po vrhu rahlo rjavo obarvano, v pekaču pa ne sme biti tekočine. Postrežemo s krompirjem, kruhovimi cmoki (recept TUKAJ) ali kruhom.

Meat Patties Kotlety with Wild Mushroom Sauce

lbs beef (5% fat)

lbs pork (5% fat)

onion (medium)

white bread (stale)

/125 ml whole milk

salt

tsp pepper

olive oil

onion (chopped)

garlic

mushrooms

/500 ml double/heavy cream

salt and pepper

flat leaf parsley

Preheat the oven to 400F/200C. Soak a slice of stale white bread in milk for 10 minutes.

Meanwhile combine ground pork and beef in a large mixing bowl. Process a medium onion in a food processor with two tablespoons of water until you have a paste or grate it using a vegetable grater, add to the mixture. Add soaked bread together with milk, salt and pepper and mix well with your hands.

Scoop the meat mixture with a 1/3 cup and form an oval shaped patty, flatten it with a palm of you hand. Continue until all mixture is used up.

Heat the oil in a large frying pan and brown patties in batches to avoid overcrowding and steaming. Fry patties on both sides over medium heat for approximately 5-7 minutes, resist the temptation to flatten your puffed up patties for even cooking.

Put your browned patties in an oven proof pan in a single layer and cook in the preheated oven for additional 10 minutes.

For the meat patties

While the meat patties are cooking in the oven it's time to make the mushroom sauce.

Heat the olive oil in a saucepan and cook the chopped onion over low heat for 7-10 minutes, add minced garlic, and minced parsley stems but reserve the leaves for garnish. Add chopped mushrooms, salt and pepper and cook for 10 minutes.

Add cream, bring to a boil, then reduce the heat to low and let it simmer for 5 minutes. Taste and add more salt and pepper if necessary.

Blend into a smooth sauce in a food processor or a blender or leave it chunky.

Serve meat patties with hot wild mushroom sauce and sprinkled with parsley.

beef (85%)

onion (finely chopped)

black pepper

red pepper flakes

dry bread crumbs

vegetable oil

unsalted butter

In a large bowl, mix together ground beef, chopped onion, an egg, and seasoning (salt, black pepper, and red pepper flakes).

Using a 3 tbsp scoop, scoop the mixture and form into oval patties. Dip them into dry bread crumbs, so they are covered with it from all the sides.

Preheat a large skillet on a medium heat, add a tablespoon of vegetable oil and a tablespoon of butter. Depending on diameter of your skillet, you might want to add one extra tablespoon of oil. Sauté the cutlets for about 5 minutes on each side, covered with a top lid.

To make sure they are cooked inside, just cut one of the cutlets with a knife. It should be still juicy but without blood.
