Love meatballs but worry about the fat content? This low-fat version will be a real treat

Creamy Swedish meatballs

onion, finely chopped

minced pork (or lamb)

dill,

vegetable oil

soured cream

Mix together the onion, pork, egg yolk and half the dill in a bowl. Lightly wet your hands, then shape the mixture into 12 balls, each about the size of golf ball.

Heat the oil in a large frying pan. Tip in the meatballs and fry, turning often, for about 12-15 mins until golden all over. Mix together sour cream and remaining dill, then spoon over the meatballs. Serve with mashed potato or tagliatelle.

Blanda gr&amp;auml;dde, mj&amp;ouml;lk och str&amp;ouml;br&amp;ouml;d i en bunke. L&amp;aring;t det sv&amp;auml;lla ca 10 minuter.

Blanda f&amp;auml;rsen med salt. R&amp;ouml;r ner &amp;auml;gg, peppar och socker.

Blanda l&amp;ouml;ken med str&amp;ouml;br&amp;ouml;dsblandningen och r&amp;ouml;r ner den i f&amp;auml;rsen.

Rulla f&amp;auml;rsen till k&amp;ouml;ttbullar eller forma till biffar som l&amp;auml;ggs p&amp;aring; en vattensk&amp;ouml;ljd sk&amp;auml;rbr&amp;auml;da. Stek dem i omg&amp;aring;ngar i en stekpanna med matfett.

Servera med till exempel kokt potatis eller potatismos, gr&amp;auml;dds&amp;aring;s och inlagd gurka.

Swedish Meatballs with Creamy Sauce and Homemade Lingonberry Jam

breadcrumbs breadcrumbs

60 ml (1/4 cup) double cream (heavy whipping cream)

500 g (1 lb) ground beef (minced beef)

sea salt

pepper

allspice

Herbs de Provence or dried oregano

parsley,

garlic, finely minced

red onion, finely diced

250-375 ml (1 beef stock

ml (1/2 cup) double cream (heavy whipping cream)

soy sauce,

(cornstarch),

parsley, finely chopped

chives, finely chopped

500 g (1 lb) fresh lingonberries

100 ml (1/3 cup plus 1 tablespoon) water

300 g (1 1/3 cup) caster sugar (superfine sugar)

Soak the breadcrumbs in the cream in a large mixing bowl to which you will add everything else later.

Once the breadcrumbs have softened (this will take just a few minutes), add the remaining ingredients for the meatballs into the bowl.

Mix everything together with your hands until it is well combined.

Shape the meatballs. I prefer to keep the meatballs small, but make them as small or as large as you like.

Heat some oil in a large frying pan which you will also use later to make the sauce.

Fry the meatballs until they are golden brown all over. You may need to do this in batches. Don&#8217;t worry if the meatballs are not cooked through completely, as you will continue to cook them later.

Pour the stock into the saucepan and use a wooden spoon to scrape any brown bits from the pan.

Return the meatballs to the pan, and simmer gently on low heat for about 20 minutes.

Slowly whisk in the cornflour (cornstarch) mixture to thicken the sauce to your desired consistency (you may not need all of the cornflour mixture).

Taste for seasoning. If the sauce tastes too concentrated, add a bit of water.

Return the meatballs to the saucepan, and garnish with parsley and chives before serving.

For the Swedish Meatballs with Creamy Sauce

Wash the lingonberries and remove any spoilt berries, leaves and stems.

Place the lingonberries in a medium saucepan, together with the water.

Turn the heat down to medium-high, and continue simmering until the lingonberries have softened and broken down, and the mixture starts to thicken.

If the mixture looks too thick, thin it with a dash of water.

Make sure you stir frequently to prevent the jam from sticking to the bottom of the pan where it can burn easily.

The lingonberry jam is ready when most of the berries have burst and you have a thick, jam-like consistency. If you like your lingonberry jam to have more texture, try not to squash the berries too much as you are stirring.

The lingonberry jam will continue to thicken as it cools.

Serve the lingonberry jam warm or cold with the Swedish Meatballs.

Store any unused lingonberry jam in a sterilised jar and in the fridge.

In a large non-stick skillet, sauté one grated onion in ½ tablespoon butter until translucent. Remove from the pan and place in a bowl. Set aside.

To the mixing bowl with onions, add the ground beef and pork, breadcrumbs, egg, nutmeg, allspice, salt, and pepper.

Mix, using your hands, until the meat mixture appears fully incorporated. Roll the meat into medium-size balls, approximately an inch in diameter.

Heat the remaining butter until melted and sizzling in the pan. Fry the meatballs, often turning, until they&#039;re golden brown. Transfer to a plate lined with a paper towel.

Swedish Meatballs (Köttbullar)

Over medium heat, whisk 2 tablespoons flour in the remaining butter until lightly browned, about 1 minute. Gradually stir in beef broth and milk, constantly whisking, until slightly thickened.

Add soy sauce, Worcestershire Sauce and heavy cream. Return to simmer and cook for a couple of minutes until the gravy thickens to your liking.

Season with salt and pepper the stir in 1 tablespoon of lingonberry jam until well mixed.

Return the meatballs to the skillet with the sauce and stir to cover and warm thoroughly.

Garnish with parsley and serve with quick dill pickles, mashed potatoes and lingonberry jam.

Swedish meatball pan drippings

Salt and pepper (to taste)

Preheat your oven to 350º F

Place the bread and cream in a small bowl, mix, and let stand about 10 minutes until absorbed.

Melt the teaspoon of butter in a large, shallow skillet and cook the onion for approximately 10 minutes, until lightly browned. Transfer browned onion to a large mixing bowl and add the meats, brown sugar, salt, spices, and egg, then mix until nearly combined. Add the moistened bread and mix gently until combined.

Melt the tablespoon of butter in the skillet over medium heat. Form meatball mixture into 1 1/2 tablespoon-sized balls and cook in batches until the outsides are evenly browned, approximately 5 minutes. The meatballs will still be pink inside. Transfer to a baking dish when browned and add more butter to the skillet as needed to cook all of the meatballs.

Pour 1/4 cup of broth into the baking dish, cover with foil, and bake for 40 minutes, until the meatballs are fully cooked and tender.

Transfer meatballs to a serving dish and pour gravy over (recipe follows).

After making the Swedish meatballs, transfer their drippings to a saucepan over medium heat. Whisk in flour and cook until light gold in color, then slowly pour in stock while whisking constantly.
