This Lamb Kofta recipe packs a ton of flavor. The ground lamb is seasoned with a mixture of dried spices and fresh herbs, then grilled to perfection. Serve these Lamb Koftas with basmati rice, or get yourself a spread going and add tomatoes, cucumbers, lettuce, hummus and tzatziki.

Lamb Kofta

vegetable oil, divided

small shallot, minced (about 3 tablespoons)

garlic cloves,

(or ground) ginger

cumin

coriander

lamb

parsley,

mint leaves, finely chopped

salt and black pepper

Place small skillet over medium-high heat. Once skillet is hot, add 1 teaspoon oil. Add shallot, garlic and ginger (if using fresh minced) to skillet and sauté for 4 to 5 minutes.

Add cumin and coriander (and ginger, if using dry ground) and continue to sauté for 1 minute. Lightly season with salt and pepper. Remove shallot mixture from heat and slightly cool, about 10 minutes.

In a large mixing bowl combine ground lamb, shallot mixture, parsley, and mint. Season with salt and cracked black pepper.

Mix together until fully combined.

Divide mixture into 6 equal portions and with wet hands form each portion of lamb into a 1 ½” by 7” log. Press a skewer into the center of each lamb log and form the meat around the skewer until secure, leaving about a 4” handle on the bottom and a 1” handle on top.

Place large grill pan over medium-high heat. Once pan is hot, brush with remaining oil and add skewers, about 1” apart. Grill skewers on each side, for 6 to 8 minutes or until just cooked through, with nice grill marks. Remove from heat, transfer to a platter

Serve with a bed of basmati rice and a romaine, cucumber and tomato side salad and hummus of choice. Serve.

These lamb kofta meatballs in curry sauce are the perfect warming meal for a winter night.

brown onion, coarsely grated

(25 grams) fresh white breadcrumbs

Soak skewers in water for two hours or longer.

If using an outdoor grill, heat to medium heat. Or use a ribbed grill pan on your stove.

In a medium bowl, mix all ingredients except lamb until combined. Then add lamb and mix just enough to combine without over working the meat.

Place two skewers side by side into each. (Two makes it easy to flip on grill).

Gill over medium heat flipping halfway through to a nicely seared exterior and cooked to your liking on the inside. We cooked ours to medium which took about 12-15 minutes.

To serve, place one or two patties on open flat bread and top with shredded lettuce, chopped tomato and a generous drizzle of Tzatziki.

Very delicious but a bit heavy on the seasonings. That definitely didn't stop us from devouring them though! Next time I will halve most of the seasonings. Especially the mint and the garam marsala. But honestly, it wasn't anything to complain about!! Will be making again, with adjustment, of course! ;-)

Great recipe and meal.  We modified the recipe and served these as lamb burgers.  We cut the mint and garam masala in half.  Then we added 2 tbl. roasted garlic (like a paste) and 1/4 cup chèvre goat cheese.  Also, for the shredded onions, we subbed finely chopped scallion bottoms (white part only), which we do in lots of preparations.  We served with tzatziki on lightly toasted from-scratch bialys.  LOVED IT!  Thanks for this!

DIY kofta burgers

1kg lamb mince

onions,

tbsp garam masala

coriander, chopped (optional)

tbsp chilli sauce,

pitta breads

tomatoes,

red cabbage, shredded

red onion, sliced (optional)

Tip the mince into a large bowl (use a clean washing-up bowl if you don’t have anything big enough) with all the other burger ingredients and a good pinch of salt. Roll up your sleeves, get your hands into the mix and squelch everything together through your fingers until completely mixed. Pat the mix into 16 small burgers. These may now be frozen for up to 1 month or chilled up to a day ahead.

To cook, heat grill to its highest setting and lay the burgers in a single layer on a baking tray (you may need to do this in batches, depending on how big your tray is). Grill on the highest shelf for 5-6 mins on each side until browned and cooked through. Pile burgers onto a platter and serve with all the accompaniments, so everyone can construct their own sandwich.

Season the kofta meat:

Season the kofta meat: Add the meat, diced onion, minced garlic, chopped fresh herbs, and spices to a large bowl and mix until combined well. 

Chill the kofta mixture:

Chill the kofta mixture: Cover the bowl with plastic wrap and then place it in the fridge for at least 30 minutes or up to overnight.

Form the koftas:

Form the kofta kebabs: Measure out about ½ cup of the kofta mixture. Now, with damp hands form it into the shape of a cylinder and then skewer it making sure to fit the ground meat cylinder tightly around the skewer. Then repeat this process until there is no remaining kofta mixture. The ground meat really needs to be molded to the skewer for the best results.   

Prepare The Kofta Kebabs

Preheat the grill:

Preheat the grill: Oil the grates of your grill and then heat it to around 450°F (230°C). If you are using a grill pan instead, you will want to add about a tablespoon of oil to it and heat it to medium-high.

Grill the kofta kebabs:

Grill the kofta kebabs: Place the skewered kofta kebabs on the grill to cook for about 5 minutes turning them from time to time so that they evenly brown on all sides. If necessary you will want to cook the kebabs in batches rather than crowd your grill or grill pan.

Preheat air fryer:

Preheat air fryer: Preheat your air fryer to 380°F (195°C).

Air fry the kofta kebabs:

Air fry the kofta kebabs: Place a few kofta kebabs in the air fryer basket, do not over-crowd, and air fry for 7 to 8 minutes, shaking the basket halfway through.

Preheat the oven to 350 degrees F.

Prepare two baking sheets by spraying nonstick spray on them or using a slip mat. Set aside.

Combine all ingredients in a large bowl and mix well with your hands.

Using a cookie scoop or a teaspoon shape the meat into small meatballs and place on the baking sheet.

Bake for 25 minutes or until the meatballs are cooked through and reach an internal temperature to 160 degrees F.

Serve the meatballs as an appetizer with hummus or yogurt sauce, in a hummus bowl, pita sandwiches or alongside Lebanese green beans.

Store the leftovers in an airtight container in the fridge for up to 4 days.
