Quick and easy, grilled Greek lamb souvlaki skewers are marinated in a simple Mediterranean marinade for just 30 minutes. Serve with some tzatziki sauce. 

Greek Lamb Souvlaki Skewers

lb. lamb leg

olive oil, divided

tablespoon lemon juice, freshly squeezed

garlic, minced

Italian seasoning

cumin powder

salt (or

black pepper

Marinate the lamb. Add cubed lamb into a zip-loc bag, and add 1/4 cup olive oil, lemon juice, minced garlic, Italian seasoning, cumin, salt and pepper. Press the air out of the bag and seal tightly. Press the marinade around the lamb to coat. Place in the fridge to marinate at least 30 minutes or overnight, to infuse all the seasoning and spices into the meat.

Skewer the lamb

. Thread the lamb onto skewers, and lightly brush some olive oil.

Grill the skewers

. Preheat a grill pan over medium high heat for 4-5 minutes and lightly brush the grill with remaining olive oil. You should notice the oil shimmer and sizzle when it's hot and ready. Grill the lamb skewers for 8-10 minutes on each side or until the internal temperature for the lamb reaches 155 F. For well done, cook 1-2 more minutes on each side or until the internal temperature reaches above 160 F.

Whilst the marinade is good, the salt content is way way waaay too much! I put in less than a tablespoon and it was still far too much. 
Highly suggest anyone trying the recipe to add salt to taste, not to recipe.

Marinated Greek Lamb Souvlaki recipe (Skewers) with Pita and Tzatziki

1kg lamb leg

olive oil (approx. 5-6 tbsps)

garlic,

lemon

red onions, roughly chopped

oregano

tsp dried thyme or some fresh thyme, chopped

tsp smoked sweet paprika (optional)

tsp cumin (optional)

salt and pepper

cucumber

garlic, minced

extra virgin olive oil

yogurt (18 ounces)

red wine vinegar

salt

pita breads

olive oil

To prepare this Greek lamb souvlaki recipe, cut the meat into equal sized (3 cm) chunks and set aside.

Prepare the marinade for the lamb kebab. In a large bowl add the olive oil, garlic, lemon juice, the herbs and spices and season with freshly ground pepper &#8211; don&#8217;t add salt yet. Whisk all the ingredients to combine. Add the meat and the chopped onions and blend to coat. Cover the bowl with plastic wrap, chill and let marinade for at least 4 hours. It&#8217;s best to leave the meat for the lamb souvlaki marinade overnight, to soak up all the wonderful flavours. (If you are at home blend the marinade once in a while).

In the meantime prepare the tzatziki sauce. Pour in a blender the olive oil and grated garlic and blend until combined. Remove the skin and the seeds of the cucumber and grate it into a large bowl. Season with salt and pepper and leave aside for 10 minutes. Wrap the grated cucumber in a towel and squeeze, in order to get rid of the excess water. In a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 tbsps of red wine vinegar, a pinch of salt and blend, until the ingredients are combined. Store the tzatziki sauce in the fridge and always serve cold.

To assemble the lamb kebab you can either use wooden or metal skewers. For this lamb souvlaki recipe, you will need about 10 skewers, depending on the size of each souvlaki. If using wooden skewers, cut them to fit your griddle pan and soak them in water. (This will prevent them from burning.) Lift the chunks of lamb out of the marinade and thread the pieces, comfortably, on the skewers. At this point don&#8217;t forget to season your lamb souvlaki with salt.

Heat a grill, barbecue or griddle pan and cook the lamb kebab for about 10-15 minutes, until cooked to your liking.

In the meantime prepare the pita breads. Preheat the oven to 250C. Use a cooking brush to lightly oil the pita breads on both sides and season with salt and oregano. Place a large oven tray at the bottom of the oven and place the pita breads on top of the tray. Bake for 2-3 minutes. (Alternatively barbecue the pita breads, until nicely coloured on both sides).

Easy Lamb Souvlaki, Greek Style! Get the fire started because you&#39;re in for a treat with this tender and succulent Lamb Souvlaki, also known as lamb kebab! Perfectly seasoned lamb, grilled to perfection, this souvlaki will simply melt in your mouth!

Lamb Souvlaki

lamb (trimmed of fat and cut into 1 inch pieces)

lemon juice (from 2 lemons)

½ teaspoon freshly ground pepper

garlic (minced)

onion

Make the marinade. In a big bowl, mix together the olive oil, lemon juice, salt, pepper, oregano, garlic, onion, and ground cumin.

Marinate the meat. Place the lamb cubes in the bowl and toss together so that the meat is fully covered in the marinade. Cover and chill for at least 2 hours and up to 24 hours. Prep the grill. Heat a grill, or a grill pan. If using a grill pan, add some olive oil to avoid the meat from sticking.

Thread the meat. Thread the meat onto metal skewers. If using bamboo skewers, make sure to soak them in water for about 30 minutes before using.

Grill the meat. Grill the skewered meat for about 8 to 10 minutes or until cooked to your liking.

Serve. Serve with pita bread, tzatziki sauce and Greek salad.

Souvlaki is a popular Greek 'fast food' made of cubes of marinated lamb, threaded onto skewers and usually grilled or barbecued. Some people like to thread vegetables between the meat cubes but this recipe is all about lamb!

Lamb souvlaki

Recipe video above. The bold garlic-oregano Greek marinade works wonders to tenderise and infuse incredible flavour into the lamb! The flavour when this is cooking is out of this world. Eat them straight off the skewer while still hot or bundle up into warm pita bread with fixings.

Mix marinade ingredients in a bowl. Add lamb and toss to coat.

Marinate in fridge for 12 - 24 hours.

Marinate lamb:

Skewer - Remove meat from marinade and thread 3 to 4 pieces on each to make 12 skewers, or 5 to make 8 larger skewers (pictured in post).

Sprinkle the meat with the salt and pepper. (This really makes a difference to the finished dish, better than just in the marinade).

Cook - Heat 1 tbsp olive oil in a large non-stick pan over high heat. Cook half the skewers for 3 minutes, turn then cook the other side for 3 minutes until nicely seared (target internal temp 60°C/140°F for medium rare, optimum juiciness).

Transfer to a plate and loosely cover with foil to keep warm while you cook the remaining skewers.

Skewer & cook:

Soak skewers - Soak wood/bamboo skewers in water for 30 minutes if planning to cook on the BBQ (prevents burning). My skewers are 18cm/7” which fit in a pan (stove cooking).

Preheat BBQ to medium high. Flat iron hot plate is safer for wooden skewers (so they don&#39;t catch fire) else use metal skewers on the grill side.

Skewer, oil &amp; season - Skewer per above. Drizzle with the oil (so it doesn&#39;t stick to the BBQ) then sprinkle both sides with the salt and pepper.

BBQ cook for 3 minutes on each side.

BBQ cooking (Note 2):

Pile Souvlaki onto a serving platter for DIY wraps with tzatziki (from this recipe), toasted pita bread and Greek salad (chopped small), or shredded lettuce and tomato slices. Else, make plates with lemon rice and a Greek Salad!
