In a wok or heavy-bottomed skillet, heat the oil over high heat until shimmering.

Add the chopped pork skin and cook until crisp, about 2-3 minutes. Remove from the pan.

Add the garlic to the pan and cook until slightly browned, but not burnt, about 2 minutes.

Add the onion and sauté for 2 minutes, until translucent.

Add the celery and carrot, and sauté for 2 minutes more, until tender.

Add the lechon, longanisa, and soy sauce, and sauté for 2-3 minutes, until liquid is fully absorbed.

Add the noodles and lechon drippings, and cook until the liquid has been absorbed, 2-3 minutes. Season with the salt, pepper, and lemon juice. Remove the pan from the heat.

Serve the pancit lechon in bowls, garnished with the crumbled pork skin, chicharrón, and chives.

This is a recipe for lechon kawali or crispy deep fried pork belly.

Lechon Kawali Recipe

Water

Pour water on cooking pot. Boil

Add the pork belly and 1 tablespoon of salt. Put some pepper pepper and bay leaves. Boil for 30 minutes or until meat gets tender

Remove the meat from the pot and let it cool down for a few minutes

Spread 1 tablespoon of salt on the pork belly. Make sure to distribute it evenly on all sections

Start to deep fry the boiled meat. Heat oil on a cooking pot.

Put each piece of boiled pork belly into the hot oil with extra caution. Fry until crispy. Turn the meat over to completely fry the opposite side until crispy. Note: be extra careful when frying as oil can splatter. You can use the cover of the pot to cover it while oil splatters, but do not cover completely as steam will be trapped. It will cause more splatters.

Remove the meat from the cooking pot. Arrange on a wire rack to cool down.&nbsp; Slice according to desired portions

Slick, crunchy pieces of skin wrapped around tender and flavorful pieces of pork belly--this lechon belly recipe will teach you how to get the most delectable roll of Cebuchon at home.

Lechon Belly (Filipino Roasted Pork Belly / Cebuchon)

tbsp white granulated sugar

lemongrass

garlic (smashed)

tbsp black peppercorn

star anise

½ medium white onion (sliced thinly)

tbsp salt

56 fl oz filtered water

fl oz white vinegar

lb pork belly (with skin intact)

¾ tsp black pepper (ground)

garlic (sliced thinly)

¼ medium white onion (sliced thinly)

green onions

lemongrass (cut in half and cut to fit the width of the pork belly)

fl oz milk (for basting)

In a large stockpot, combine all the brine ingredients (except the vinegar and pork) and stir. Heat to a boil and continue to cook for 10 minutes.

Remove the pot from the stove and let it cool to room temperature. Once it’s cooled add the vinegar and mix.

Turn your pork so the skin is facing down. Use a knife to score your meat in diagonal lines across the pork belly. Aim to score about halfway or ½ inch deep and 1 space in between each line. Turn your pork belly 180 degrees and repeat the scores. You should end up with diamond-shaped scores.

In a container, combine the brine and pork. Make sure it fully covers the pork, then cover with plastic wrap or a lid and brine in the fridge for at least 4 hours or overnight.

Brine

After brining, transfer the pork into a rack-lined sheet pan and pat dry with paper towels. And season with salt heavily, then sprinkle the pepper.

Layer the stuffing ingredients. Place garlic slices in between the folds, layer the onions slices and bay leaves, and add the green onions and lemongrass strips on top.

Cut 4-6 strands of twine about 3-4 inches longer than the width of your pork belly (make sure to measure using the width you will be rolling, not lengthwise). Carefully take each strand and wiggle it underneath the pork so that each strand is evenly spaced out. Try to get as close to the edges as possible (about 1 inch from the edge).

Add your rotisserie rack pole in between, try to make this as even as possible.

Roll the pork belly. Take both ends of your pork belly and roll it tight, the ends of the pork should touch or be close to touching when fully rolled. Then wrap each twine strand and tie firmly. Repeat with all the strands until you end up with a roll. Add the clamps on either side to secure your pork belly (if your rotisserie comes with them).

Stuffing

Place your belly on the grill and turn on the rotisserie and add a drip tray below to catch all the fat. Baste with milk.

Grill at 180 °F for 2-3 hours. For my grill, I only needed to turn on 1 burner at the lowest heat and it maintained 180 °F, use a thermometer since yours may be different. Check the meat and grill temp, and baste with milk every 30 minutes to make sure things are staying on track. Here&#039;s what it should look like at the end.

When the meat’s internal temperature hits about 125-130°F, turn up the heat to about 350-375 °F for another 45 minutes. Baste every 15 minutes, and check to make sure the grill temperature is not too hot or cold. When the skin is crisp and the meat reaches a minimum internal temperature of 145 °F, you’re done! Do not leave the grill unattended especially towards the end of grilling to ensure the belly does not burn. Here&#039;s how it should look when the skin is finished crisping up.

Let it cool for 5-10 minutes, remove from the rotiserrie rod, slice then chop, and serve.

Grilling

The best lechon recipe, easy to follow and cook/roast. Sorry ate finished product before taking a picture. Did not burn pork lechon as I have followed different recipes including Chinese style and it didn’t turn out as delicious as this recipe. Thank you for sharing this outstanding recipe. I will definitely take a picture before eating next time!

Slow Roasted Mojo Pork Shoulder (Pernil)

Two days before roasting, clean pork shoulder with cold water and pat dry.  Then only on the flesh side, slit deep cuts into the meat.  Add a garlic clove into each slit.  This will give flavor and help the marinade penetrate the meat.

Pour the mojo marinade all over the pork.  Add 3 tablespoons of salt all over the pork. Add the sazon only to the bottom part of the pork. You want to avoid adding the sazon to the skin because it can burn.

Leave in the fridge at least one night. But- two nights is ideal.

The day you are ready to roast, remove the pork from the refrigerator 2 hours before roasting time.Preheat the oven to 350 degrees.

Prepare a large roasting pan.  Cover the bottom with the onions and bay leaves. Drizzle the remaining marinade all over the onions. Place the marinated pork on top.

Scrape any marinade off the pork shoulder’s skin and season with the remaining salt all over. Add the olive oil just over the skin. Remember- you don’t want anything on the skin because it can burn.

Roast for 4 hours.

Every hour move the pork around to be sure it is evenly cooking. ***Do not baste with the juices. The skin can become soggy.mmIf the skin gets too much color, lower the heat to 300 degrees or very loosely cover the most cooked area with aluminum foil.

The roast is ready when the skin is crispy. The meat will easily pull apart and the juices run clear.
