These easy, Indian-style puff gunpowder potato puffs are almost too good to share&#8230; but they do make fab party canapés. Or, try these simple yet sensational sausage rolls, fired up with &#8216;nduja.

Gunpowder potato puffs

floury potatoes, peeled and chopped into 2cm pieces

butter

tsp crushed cumin seeds

fennel seeds

tsp crushed coriander seeds

spring onions, chopped

green chilli, chopped

coriander

block ready-made puff pastry

flour,

egg, beaten

nigella seeds

Mango chutney, to serve (optional)

Put the potatoes into a pan of salted water, then boil for 5 minutes or until just tender. Drain and leave to steam dry.

Melt the butter  in a pan and gently fry the cumin, fennel and coriander seeds  until fragrant. Add the potatoes and mix to a rough mash, then leave to cool. Stir in the spring onions,  chilli and fresh coriander and season with plenty of salt and pepper.

Roll out the puff pastry on a floured surface to about 3mm thick, then stamp out 15-16 x 10cm circles, re-rolling as needed. Put 1 tbsp potato mixture in the centre of each one, brush the pastry edges with the beaten egg, then fold in half to enclose the filling. Press the edges with a fork to seal. Brush with more egg and sprinkle with the nigella seeds. Chill for 20 minutes, then bake at 200°C/180°C fan/gas 6 for 20-25 minutes until golden and puffed. Serve with mango chutney for dipping.

Mashed potato soup is one of the best ways to use up leftover mashed potatoes. It’s creamy, cheesy, delicious, and ready in under 30 minutes.

Mashed Potato Soup

onion,

all-purpose flour

stock

Italian seasoning

potatoes

Parmesan cheese,

salt and pepper (to taste)

cheddar cheese, shredded (optional, for topping)

In a large stockpot melt butter over medium-high heat, until it starts to bubble, about 1 minute. Add onion and sauté until soft and tender and starting to brown, about 3-4 minutes.

Add flour and mix well until evenly combined with the onion mixture and continue to cook for another minute. Pour in stock and Italian seasoning and mix well. Bring the mixture to a simmer, about 3-4 minutes,

Add in mashed potatoes and Parmesan cheese. Mixing until all the potatoes have broken up and the cheese has melted. Season with salt and pepper to taste. Let the soup simmer over medium heat for 8-10 minutes until thickened to a desired consistency, stirring occasionally.

Ladle into bowls and top with shredded cheddar cheese.

These crunchy tender fried mashed potato cakes will have you making extra mashed potatoes just to enjoy the leftovers.

Easy Crispy Pan-Fried Mashed Potato Cakes

cold left-over mashed potatoes

egg (lightly beaten)

flour (or as needed to make a sticky dough)

parsley

onion

Salt and pepper (to taste)

(or as needed, Panko bread crumbs)

olive oil

butter ((optional))

Place the potatoes in a bowl and add the egg along with the flour, parsley, and onion. Mix well, until a sticky dough has formed, adding small amounts of flour as needed. (The amount of flour will vary slightly depending on how dry your potatoes are, wetter potatoes will require more flour). Add a small amount of salt and freshly ground pepper and mix well. 

Place the panko in a wide bowl or on a plate. 

Using a 1/4 measure; take a scoop of the potato mixture, then using your hands form into a patty cake; you can make them thicker or thinner as you prefer. Dip both sides of the cake into the panko, pressing lightly to make the crumbs adhere. Set aside. Proceed until all the potato is used.

Heat your skillet over medium heat; add the oil, when hot add the pat of butter if using. Swirl this around to mix. Carefully add the potato cakes to the skillet and cook, turning once, until both sides are nicely browned and the center is hot. If the cake is browning too quickly and the center is not hot, place the pan into a 350ºF oven for about 5 minutes.
