Leftover Meatloaf Soup

tbsp butter

Over medium-low heat melt butter and whisk in flour. Cook for 1 minute whisking the whole time.

Continue to whisk while adding in milk, salt, and pepper. Cook until soup base thickens, about 10-15 minutes.

Add in potato, cheese, scallion, yogurt and sour cream and stir. Cook until soup begins to bubble. Add in meatloaf (or cooked ground beef if you don’t have any leftover meatloaf on hand) and cook about 5 minutes to heat the meatloaf crumbles.

Top with shredded cheddar cheese for garnish.

Gnocchi With Leftover Meatloaf

Warm

In a large skillet over medium heat, warm the oil. When it’s hot, add the meatloaf and garlic. Stir to combine and cook until heated through, 2 to 3 minutes.

Cook

Stir in the cream, tomato sauce, and basil. Cook until thickened, 4 to 5 minutes.

Boil

While the sauce is cooking, bring a large pot of water to a boil over high heat. Drop in the gnocchi and cook according to package directions, or until they float, 2 to 7 minutes.

Season

Drain the gnocchi quickly and add to the sauce. Stir, season with salt and pepper to taste, and serve garnished with parsley.

Turn that leftover meatloaf into something extra special (and tasty!) with this cheesy leftover meatloaf sandwich. With a barbecue mayo, a thick layer of melty cheese, thinly sliced red onion and tangy yellow mustard, this hearty sandwich is made in minutes and is so incredibly delicious!

Leftover Meatloaf Sandwich

sandwich bread (use your favourite variety)

leftover meatloaf (about an inch

cheese (I used "thick" processed cheese slices (or use your favourite variety))

water

red onion (to taste)

yellow mustard (to taste)

In a small mixing bowl, whisk together the mayonnaise and barbecue sauce until combined. Set aside.

Heat olive oil in a skillet over medium low to medium heat. Add the slices of meatloaf and cook for about 3 to 5 minutes on each side until it&#39;s slightly golden brown on the outside and heated through.

Fold over each slice of cheese so it&#39;s thick. Place a slice of cheese on top of each slice of meatloaf. Add 1 tablespoon of water to the skillet and cover with a lid for about 30 seconds to a minute just to warm/melt the cheese. Set the slices of meatloaf aside on a plate while you prepare the toast.

Toast bread to desired doneness and spread the barbecue mayo over one side of all four bread slices.

To assemble each sandwich, top one of the slices of bread with meatloaf, then layer on red onion and drizzle with mustard. Top with the remaining slice of bread (with the barbecue mayo on the inside) to form the sandwich. Serve and enjoy!

In a small bowl, mix together the ketchup, apricot jam, chipotles, and mayonnaise.

Make the sauce

In a large nonstick skillet over medium-high heat, cook the meatloaf slices until heated through and starting to get crisp, about 2 to 3 minutes.

Flip

Flip the slices of meatloaf, divvy the cheese between them, and cook until the cheese begins to melt, 2 to 3 minutes more. Slide the meatloaf slices onto a plate.

Toast

Add the bread to the skillet and cook until just toasted.

Spread

Spread about 1 1/2 tablespoons of the sauce on two slices of the toasted bread. Top each slice with arugula, half of the cheese-topped meatloaf, and the final slice of bread.
