Add shredded chicken, mayonnaise, onion, celery, curry powder, honey, lemon juice and mustard to a medium bowl.

King Ranch Chicken

olive oil

onion,

red bell pepper, diced

garlic,

sour cream ((about 2 cups))

green chiles

cilantro, chopped

tsp chili powder

tsp cumin

Mexican cheese blend

corn tortillas

Preheat oven to 400 degrees. Add olive oil to a medium skillet and heat over medium high heat. Add in onion and bell pepper and saute for 3-4 minutes or until softened and golden brown. Add in garlic and cook for an additional minute.

To a large bowl add sautéed peppers, onions and garlic, chicken, sour cream, salsa, green chilies, cilantro, chili powder and cumin.

Cut the tortillas into smaller pieces.

Spoon 1/4 of the chicken mixture into the bottom of a 13 x 9 baking dish. Top with 3/4 cup of the cheese and a layer of cut tortillas. Repeat two more layers. Spread the last 1/4 of chicken filling and remaining 3/4 cup of cheese on top.

Bake for 25 minutes or until golden brown. Serve warm and enjoy!

Go ahead, just make it!  I have been wanting to make this recipe for some time and I’m glad I did. The directions were easy to follow and the video was helpful.   This casserole was a creamy and delicious blend of Mexican flavors.   I will be making this king ranch chicken recipe again.

my whole family loved this! Question for next time though.  The directions make it sound like there are 4 layers - bottom, two middle, and the top with mixture and cheese.  But the video only shows 3 layers (1 middle). I did my own thing, but wondered what it is "supposed" to be :)
