This quick Salmon Fried Rice for one is made with with frozen brown rice and riced cauliflower for a quick meal you can whip up for lunch or dinner.

Salmon Fried Rice 

salmon

sesame oil (divided)

rice ( preferably brown short grain)

cauliflower rice

soy sauce (or gluten-free Tamari)

Sriracha or Chile-garlic sauce (optional

Cook salmon in a skillet over medium-high heat about 5 minutes on each side. Set aside and flake the salmon into small chunks with a fork. Wipe the skillet.

Heat 1/2 teaspoon of the oil in a medium nonstick skillet over medium-high. Add scallion whites and cook, stirring, until fragrant, about 1 minute.

Add the rice in an even layer. Cook, without stirring, 2 to 3 minutes, or until the bottom becomes slightly crispy. Add the cauliflower rice, continue to cook, stirring occasionally, 2 to 3 minutes, or until combined.

With a spoon or spatula, push the rice to one side of the skillet. Crack the egg onto the other side.

Cook, constantly stirring the egg, 30 to 60 seconds or until cooked through. Mix the rice, cauliflower and egg to thoroughly combine. Stir in the soy sauce and sesame oil.

Gently fold in the reserved salmon and toss, serve immediately garnished with scallion greens. Serve with sriracha sauce, if desired.

Whenever I make salmon for dinner, I usually cook an extra piece for lunch just to make this arugula salmon salad with capers and shaved Parmesan – loaded with good fats and omegas!

Arugula Salmon Salad with Capers and Shaved Parmesan

baby arugula

oz cooked sockeye wild salmon (skin removed)

capers

tsp red wine vinegar

tsp extra virgin olive oil

salt and fresh pepper

I used leftover salmon, but if using raw salmon, simply season it with a little salt and pepper and bake it for about 10 minutes 400F, or in a pan lightly sprayed with oil. You can also air fry salmon 400F 6 to 8 minutes.

To make the salad, place the arugula on a dish, sprinkle with salt and fresh cracked pepper and top with salmon and capers.

Drizzle a little oil and vinegar on top and finish off with fresh shaved parmesan.

Perfect for a weeknight meal, these salmon patties are easy to make and oh so delicious!  Why not make a bunch and freeze them for another night,

Easy Salmon Patties

salmon (I used Pacific wild caught Sockeye)

onion

red peppers (or raw red peppers)

Italian parsley

bread crumbs (more if needed. Seasoned, unseasoned

bay seasoning

mayonnaise

dijon mustard

lemon

Worcestershire sauce

hot sauce (optional)

vegetable oil (to saute the salmon cakes)

chili sauce (optional)

lemon juice

scallions (chopped)

parsley

green olive

sweet pickle relish

capers (chopped)

Preheat the oven to 350 degrees

place salmon skin side down on a baking dish. Brush salmon with olive oil ( do not salt salmon). Add a little water to the pan and roast salmon for 12-14 minutes. Salmon should be just barely cooked, so it stays moist.

Remove from the oven and allow it to cool for about 10 minutes then cover and chill until salmon is completely cooled.

When salmon has completely cooled, flake the pieces into a small bowl, add in chopped onion, roasted red pepper, and chopped parsley. Gently mix and return to the refrigerator until needed.

In another bowl add mayonnaise, mustard, old bay, lemon, Worcestershire, hot sauce and egg. Mix ingredients together until well blended. This is the imperial style sauce that you will use as a binder.

Add imperial sauce and bread crumbs to salmon mixture and mix together until well blended. Try not to break up the salmon too much. (if the mixture looks too wet you can add little additional bread crumbs)

Cover mixture and chill in the refrigerator for 30 minutes. Shape into salmon cakes.

Dredge the salmon patties in breadcrumbs.

heat a frying pan, add olive oil and gently place the salmon patties into saute pan and cook on both sides (about 2-3 minutes per side) until they are a nice golden brown.

Place the salmon patties on a baking sheet lined with parchment paper and bake for 20 minutes at 350 degrees or until an internal temperature of 165 degrees F has been reached.

mix all the ingredients together and allow to sit for an hour or longer to build the flavors.

What a great recipe! Tried it today for our family dinner, didn’t have peppers but added a lot of fresh spinach and some dill, too. My husband and twins loved these salmon cakes and made me promise to make them more often. :) Thank you all the way from Sweden!

I’ve been making salmon cakes/burgers for years. I have a kick-ass recipe. After finishing these, my husband announced that these are even better! I would love to make them again (soon). Is there any way to freeze these? Before cooking? After cooking?

No fishy taste, added 3 sticks of celery to the recipe for the salmon cake mix.  Food processed the onions, celery, and red pepper, finely chopped the Italian parsley into the mix and did everything else the recipe required. I just finished dinner and am writing this review, wife is currently still eating and on her second helping of salmon cakes and we are overly Please with the outcome of this dish. Huge Hawaa from us in Vancouver B.C. Canada! Meal was paired with a grilled seasoned flank steak w homemade truffle butter; Sunday dinner complete!

We made these last night and they were so good!  We also use wild caught salmon because it is healthier for my husband who has rheumatoid arthritis.

Air Fryer Salmon Patties

old bay seasoning

panko

Place a piece of air fryer parchment in the air fryer basket, or spray with oil.

In a medium bowl combine the egg, onion, dill, mayo, mustard and Old Bay spice and mix. Add the salmon and panko and mix to combine.

Freeze for 10 minutes, to help the mixture hold together. (If it’s too wet you can add another tablespoon panko)

Form into 6 patties, tightly and transfer to the air fryer basket.

Air fry them at 400F 8 to 10 minutes, flipping halfway until golden brown.

Serve over a bed of greens, on potato buns or in bowls with a squeeze of lemon over the top. Makes 6 patties.

We're newly addicted to the air fryer and this recipe gave us excellent salmon patties. We loved the dill/Dijon combo! We previously had cilantro in the mix which was also good.

These were easy to make and very tasty. As an added bonus, they held together very well and didn't crumble apart when using a fork to cut them on my dinner plate. Mine weren't crunchy but not sure if they were supposed to be. I've already shared this recipe with my sister and will make again!

This was delicious! Made exactly as written except used 2 tsp of Old Bay. This will be my go to for canned salmon!

I made a balsamic syrup to go with it.......reducing the volume by 30-40%
over low heat
and adding sugar to taste

Very nice recipe. Modified slightly with what was on hand to use regular onions, mayo and mustard. Also added some lemon, cilantro and parsley to the prep and some different seasonings. Came out well in the air fryer.  Loved it
