Smoked Chicken Leg Quarters

marinade (we used Lawry’s Zatarain’s Cajun)

Traeger pork & chicken rub

Apple BBQ Hardwood Pellets

Marinade chicken in the fridge for at least 30 minutes. (we marinade our chicken overnight) 

Once chicken is marinated, sprinkle both sides with the rub.  

Prepare the Traeger grill on smoke according to directions. Set the temperature to 225 degrees and preheat, lid closed for 15 minutes. 

Place a small stainless steel pot of water or apple juice in the inside corner to help keep moist.

Place chicken in grill skin side up with lid closed. 

Smoke for 2 hours or until instant &#8211; read meat thermometer reads 165 degrees. ( insert thermometer into thickest part of the thigh, not touching the bone)

Remove chicken and let rest 5 minutes before serving. (we don&#8217;t add barbecue sauce.)

Preparation

Using a paper towel, pat the chicken leg quarters dry. Season generously with dry rub

Light a fire in the smoker and adjust the fire to achive a steady temperature from 250F to 325F

Cook

Place the leg quarters into the smoker and cook to desired doneness (175 to 180F). If a sauce is desired, add your favorite BBQ 15 to 30 minutes before the leg quarters are done.

Serve

When the leg quarters are done, remove from the smoker and let rest 10 minutes before serving.

Simple BBQ’d Chicken Leg Quarters

chicken leg quarters (skin on)

garlic powder (to taste)

salt

black pepper (to taste)

cooking spray

sweet BBQ sauce

Prepare the outdoor grill for indirect grilling over medium heat; the internal grill temperature should read 350ºF. You must maintain this temperature the entire time the chicken is cooking.

Season the chicken leg quarters on both sides with garlic powder, seasoned salt with no msg, and freshly ground pepper to your own taste.

Before placing the grill grate in grill be sure to prepare the surface with cooking spray so that your chicken won’t stick to the metal.

Place the chicken pieces on the grill over the direct-heat area and sear, turning once, for 2 minutes per side.

Move the chicken pieces to an indirect-heat area, cover the grill, and cook for 45-50 minutes. If you will be using a charcoal grill, bank the lit charcoals on either side of the grill bed area, leaving an open portion in the center without heat, and place a drip pan in the center. If you will be using a gas grill, preheat the burners, then turn off 1 or more of the burners to create a cooler zone. (You must maintain this temperature the entire time)

Note: Start brushing the chicken with the Homemade Sweet BBQ Sauce about 20 minutes into the chicken cooking, turning and brushing the pieces every 5 minutes, for about 18 to 20 minutes longer. The chicken is ready when it is firm to the touch and the juices run clear when a thigh is pierced with a knife tip. (cook time is about 45-55 minutes or until eternal temperature  reads 165°)

Grill

Preheat oven to 350ºF.

Prepare a large metal baking sheet with tin foil, and spray lightly with cooking spray.

Place chicken leg quarters on the metal baking sheet that has been covered with tin foil.

Place in 350ºF oven and bake undisturbed for 45-55 minutes.

Brush chicken leg quarters evenly with Homemade Sweet BBQ Sauce.

Cook for about 10 more minutes or until the chicken is ready when it is firm to the touch and the juices run clear when a thigh is pierced with a knife tip.

Baked BBQ Chicken Leg Quarters

unsalted butter

c ketchup

bourbon

Tbsp apple cider vinegar

Tbsp light brown sugar

Tbsp honey

tsp chipotle chile powder ((or 1 chipotle chile))

In a medium saucepan, melt the butter at medium heat. While the butter is melting, blitz your onion and garlic in a food processor until very finely chopped (or your desired consistency). Add chopped onion and garlic to the melted butter and cook for 1-2 minutes, to a lightly golden caramel color.

Add the ketchup, bourbon, apple cider vinegar, light brown sugar, honey, chipotle powder (if using chipotle chile in adobo, blitz the chipotle chile as well and add adobo sauce for more heat if desired), and cayenne powder, then stir to combine. Reduce heat and simmer on low for 20 minutes, or until thickened to your desired consistency.

Honey Bourbon Chipotle Sauce

Preheat your oven to 350 degrees F (175 degrees C). Brush the honey bourbon chipotle sauce onto your chicken leg quarters and arrange, skin side up, on a parchment paper lined baking sheet. Reserve some of the barbeque sauce for brushing onto the cooked chicken before serving, if desired.

Oven bake the coated chicken leg quarters for 45 minutes (up to an hour, depending on the size of your chicken pieces) at 350 degrees F (175 degrees C). Remove from the oven when done with a minimum internal temperature of 165 degrees F (74 degrees C). Brush more of the honey bourbon chipotle sauce onto the cooked chicken, or serve on the side (optional).

BBQ Oven Baked Chicken

Perfectly crispy air fryer chicken leg quarters lathered in barbecue sauce that are tender inside. Your perfect healthy dinner has arrived.

Air Fryer Chicken Leg Quarters

chicken (leg quarters)

tbsp barbecue sauce (2 tbsp each)

olive oil spray

Preheat air fryer to 400 degrees F for 5 minutes.

Spray or brush olive oil on meat and season leg quarters with salt and pepper all over.

Spray air fryer basket with non stick spray and lay chicken in with skin side facing down.

Close basket and cook for 25 minutes, then flip both of them over and cook an additional 10 minutes at the same temperature. Ensure internal temperature at thickest part of the meat is at least 160 degrees at this time.

Use a brush to add 2 tbsp bbq sauce to the top of each one. Close basket and set to 375 degrees F for 3-5 minutes until skin is crisped and sauce is browned.

Remove leg quarters and allow to rest for 5 minutes before serving so they stay moist.

Chicken Leg Quarters with Mushrooms

Meat Thermometer

poultry seasoning

mushrooms (sliced)

Start by adding your flour, salt, pepper, and 1/2 tablespoon of the poultry seasoning in a bowl or plate. Mix until combined.

Now you will dredge your chicken quarters in the flour.

Place oil in a skillet and let it heat to medium-high heat. Place the chicken skin side down and let cook 4-5 minutes to sear the chicken to golden color. Flip and repeat the other side. You want a nice sear.

Now remove the chicken from the skillet. Toss in your garlic and sliced mushrooms and saute 5 minutes, on medium heat.

Whisk in the chicken stock and add the chicken back to the pan. Bring to a bowl then lower heat and simmer 20 minutes or until chicken is fully cooked.

Increase heat, remove chicken, and bring to a boil. Whisk in the heavy cream and remaining poultry seasoning. Once creamy and thickens, place chicken in and top with the mushroom cream sauce.

Serve the chicken with musrhoom gravy on top.
