Easy recipe and instructions for baked chicken leg quarters with a simple Italian herb and garlic seasoning. Whole leg quarters include drumstick and thigh.

Baked Chicken Leg Quarters

tsp black pepper

thyme

oregano

tsp basil

cayenne pepper

garlic powder

Preheat oven to 375F

Trim the chicken legs of any excess fat.

Mix spices together in a small bowl. Generously rub the seasoning all over the chicken leg quarters.

Place the chicken on a baking sheet with a rack.

Bake for 75 minutes.

Take out of the oven and let rest 5 minutes before serving.

These air fryer chicken drumsticks and thigh cutlets are a healthier version of Southern fried chicken. They have all of the flavour with none of the extra oil.

2.50 gm smoked paprika

red cabbage, thinly shredded

green cabbage, thinly shredded

carrot,

green onions, finely chopped

82.50 ml coarsely chopped mint leaves

82.50 ml light Greek-style yoghurt

Dijon mustard

garlic clove, crushed

Grilled frog legs on my nomad grill with a simple brushing marinade

Grilled frog legs

white wine

olive oil

garlic

parsley (chopped)

cayenne pepper flakes

lemon (juiced)

salt

tsp pepper

Preheat

For this recipe, i used the portative nomad grill lighted up with hot charcoal and with maple kindling wood.

Baste

Mix all the baste ingredients together in a small bowl.

Grilling and basting

Place the frog legs on the grill and brush the upper side with the basting mixture.

Grill

Turn over

Turn over the legs and brush the other side with the baste mixture.

Grill for another 4 minutes or until the internal temperature is at 160°F.

Remove

Remove from the grill and serve hot with some extra baste mixture.
