Fluffy Lemon Crinkle Cookies Recipe

unsalted butter, (softened (2 sticks))

sugar

eggs

lemon juice

lemon zest

vanilla extract

yellow food coloring ((optional))

Place the butter and granulated sugar in the bowl of an electric stand mixer. Turn on high to cream the butter and sugar until light and fluffy, about 3-5 minutes. Scrape the bowl with a rubber spatula.

Turn the mixer on low and beat in the eggs, lemon juice, lemon zest, and vanilla. Scrape the bowl again. Then on low, mix in 1 cup of flour, baking powder, salt, baking soda, and food coloring. Once combined mix in the remaining 2 cups of flour, just until smooth. (Do not overmix the dough!)

Cover and chill the dough for at least 30 minutes. (The longer you chill the dough the better for puffy cookies.) Preheat the oven to 375 degrees F. Line several baking sheets with parchment paper and set aside.

Once the dough has chilled, set out a small bowl of powdered sugar. Use a 1 tablespoon cookie scoop to portion the dough into balls. Roll each ball in powdered sugar, then set on the baking sheets, 2 inches apart. (Make sure the cookies have a generous coating of powdered sugar. Do not shake them off.)

Bake for 9-10 minutes, until the edges are just golden brown, and the center looks slightly underbaked. Cool on the baking sheets so the centers continue to bake as they cool.

Lemon Thyme Coin Cookies

c. all-purpose flour

Kosher salt

c. (2 sticks) unsalted butter,

c. sugar

thyme leaves

lemon zest, divided

pure vanilla extract

confectioners' sugar

c. fresh lemon juice

In large bowl, whisk together flour, baking powder, and salt.

In another large bowl, using electric mixer, beat butter and sugar until light and fluffy, about 3 minutes. Beat in thyme and 2 teaspoons&nbsp;lemon zest, then egg&nbsp;and vanilla.

Reduce mixer speed to low and gradually add flour mixture, mixing just until incorporated. Shape dough into two 1 1/2-inch-diameter logs. Wrap between 2 sheets of waxed paper&nbsp;and freeze for 20 minutes.&nbsp;&nbsp;

Heat oven to 350°F. Line baking sheets with parchment paper. Slice into 1/8-inch-thick rounds and place on prepared sheets.&nbsp;

Bake, rotating positions of baking sheets halfway through, until cookies are light golden brown around edges, 10 to 12 minutes. Let cool on sheets 5 min. before transferring to wire racks to cool completely.

In bowl, combine confectioners’ sugar, fresh&nbsp;lemon juice&nbsp;and remaining lemon zest. Spoon over cooled cookies. Sprinkle with additional thyme if desired.

box Vanilla Jello Instant Pudding Mix

Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper.

Place butter and sugars into stand mixer and beat until combined. Add eggs and vanilla mixing to combine. Stir in lemon curd and lemon zest.

Slowly add your flour, salt, baking soda and chips, beating until just combined. Using a medium cookie scoop, scoop dough onto prepared baking sheet about 1 inch apart. Bake for 11-15 minutes, until baked through. Remove from oven and let cool on baking sheet for 15 minutes before transferring. Store in an airtight container for longest lasting freshness.

Put the sugar, butter, and lemon zest in a large bowl and beat using an electric mixer for about 3 minutes until light and fluffy.

Break the eggs into a small bowl and add the lemon juice and vanilla. Gently beat with a fork until blended, then mix into the butter mixture until combined.

In a separate bowl, mix the flour, salt, and baking powder. Add slowly to the butter-egg mixture on low speed until just combined. Avoid overbeating the dough; it will get sticky.

Cover the dough and let it chill in the refrigerator for 30 minutes.

Preheat the oven to 350 degrees Fahrenheit (175°C) and line 2 baking sheets with parchment paper.

Lemon Thumbprint Cookies

Preheat your oven to 350°F. Line a baking tray with parchment paper and set aside.

In the bowl of your stand mixer fitted with the paddle attachment mix butter and 3/4 cups granulated sugar together on medium speed for 2 minutes or until light and fluffy.

Add in the lemon zest and lemon juice and mix until incorporated.

Turn the mixer to low and add in the flour mixing until just incorporated.

Place the remaining 1/4 cup of granulated sugar in a small bowl.

Using a medium cookie scoop (2 tablespoons), scoop the dough out and roll into balls. Place the ball into the granulated sugar and coat.

Place the dough into the prepared baking sheet 2 inches apart, and press dough in the center of each ball with a spoon or your thumb to create a well. Place a 1/2 teaspoon amount of lemon curd or preserves into the well.

Bake for 9-10 minutes, or until the edges are slightly golden. Transfer to a wire rack to cool completely.

Whisk together the powdered sugar and milk until smooth and no lumps remain. Transfer the glaze to a small zip-top bag and snip the corner off the bag with scissors. Drizzle the glaze on top of the cookies.
