A vegan take on spaghetti bolognese that is cooked in one pot - yes, even the pasta is cooked at the same time as the sauce! This recipe cannot get easier and the result is so delicious as well! Lentils give the dish a boost in plant protein as well as fiber and will keep you full for a long time. Perfect for a quick lunch or dinner and meal prep!

One Pot Vegan Spag Bol

lentils

tinned tomato

spaghetti

water

yellow onion

garlic

tsp salt

tsp Italian herbs

olive oil

red pepper flakes (optional)

Vegan Parmesan (optional)

Heat up olive oil in a large pot (big enough to hold all the spaghetti), add onion and garlic and stir fry until fragrant and slightly golden.

Add tomatoes to pot, and crush tomatoes with your spatula. Let simmer for 1 minute.

Add the rest of the ingredients to the pot and increase heat to high. Bring to a boil then reduce heat back to a simmer, and cook for 8-10 minutes or until the spaghetti is al dente, stirring frequently.

Remove from heat and transfer spaghetti to serving bowls. Top with vegan parmesan if desired. Enjoy!

Lentil Bolognese Recipe

onion,

½ cup carrots, small diced

celery diced

garlic, rough chopped

salt

pepper

¼ teaspoon chili flakes- optional

oregano

tomato paste

splash red wine (optional) ¼ cup-ish

black caviar lentils (or other small lentils- see notes)

tomatoes, tomatoes

veggie stock

hemp seeds, or crushed toasted walnuts or pecans

balsamic vinegar

Heat oil in a large pot or dutch oven over medium-high heat. Add the onion and saute for 2-3 minutes stirring until fragrant. Lower heat to medium, then add the carrots, celery, garlic, salt, pepper, chili flakes, and herbs.  Saute 7-8 minutes, stirring.

Add the tomato paste, browning it just a bit in the pan (this will deepen the flavor), then deglaze with wine if you want, scraping up any brown bits.  Once most of the wine has cooked off add the tomatoes and their juices, cook them down for just a few minutes.

Add the lentils, veggie stock and hemp seeds or walnuts.  Bring to a boil, cover tightly, lower heat to low, and simmer gently 20-25 minutes, or until the lentils are tender. Uncover.

Continue cooking uncovered until most of the liquid has cooked off.  Stir in the balsamic vinegar, taste, and adjust salt, pepper, vinegar and chili flakes to your liking. Keep in mind, you want this just slightly salty if tossing with pasta.

Serve this tossed with your favorite pasta or serve it over this creamy polenta or this Instant Pot Polenta. Sprinkle with optional  pecorino cheese&#8230; or try this Vegan Cheesy Sprinkle!

I've been trying to eat less meat, but not necessarily liking it.  I was prepared to dislike this recipe but ended up eating about 3 bowls of it.  I didn't have walnuts, so I used almonds, and I didn't have black lentils so I used some brown ones.

Lentil Bolognese

Shortcut vegan Bolognese made with lentils and pantry staples. You can have this filling, flavorful, family-friendly meal on the table in under 30-minutes!

Quick &amp; Easy Vegan Bolognese

dry green lentils

(12 ounces) dry spaghetti ((gluten-free, if needed))

½ yellow onion, chopped

garlic, chopped

½ cups (650 milliliters) pasta sauce

chopped parsley, chopped basil, or vegan Parmesan for garnish ((optional))

Pick through the dry lentils to make sure there isn&#x27;t anything there that shouldn&#x27;t be.

Add lentils to a small colander, sieve, or bowl and rinse.

Add lentils and water to a small pot and bring to a boil. Once boiling, lower heat to medium and simmer until lentils are cooked through. This should take about 15-20 minutes. When ready, drain any excess water and set lentils aside.

Prepare the Lentils

While lentils are cooking, prepare pasta using directions on package. Drain and set aside.

Prepare the Pasta

Heat oil in a large skillet over medium heat. Add onions and cook for about 2 minutes. Add the garlic and continue to cook for another 2 minutes, until the onions begins to brown.

Lower heat to medium and add pasta sauce to the skillet and stir. Add lentils to the sauce, stir again.

Add cooked pasta to the skillet and gently toss the pasta using tongs until all noodles are coated with the sauce. Remove from heat and serve.
