Instant Pot Mujadara Lentils and Rice

basmati rice 1 cup, washed

green or brown lentils 1

olive oil 2 tbsp

parsley

water or vegetable broth 2.5 cups

salt

cumin ground 1/2 tbsp

coriander ground 1/2 tbsp

cinnamon ground 1 tsp

chili powder 1/2 tsp (optional)

garlic 2,

bay leaves 2

Soak the lentils overnight.

Heat oil in Instant Pot using the saute...

Heat oil in Instant Pot using the saute function. Add the half moon sliced onions and saute until the onions caramelize. Remove the onions and keep them aside for garnishing.

In the same pot add the remaining oil...

Add the bay leaves, cumin, cinnamon, coriander powder,...

Add the bay leaves, cumin, cinnamon, coriander powder, chili powder. Add soaked, drained lentils and rinsed rice to the pot.

Pour in either vegetable broth or water

Close the load and seal the vent.

Pressure cook for 6 minutes and allow pressure...

Garnish with remaining caramelized onions and parsley.

Instant Pot Mujadara Recipe Lentils and Rice

Mujadara (mujaddara) is a signature Middle Eastern dish of lentils and rice garnished with crispy onions. I am especially excited to share the Lebanese version of this dish from Rose Water and Orange Blossoms (affiliate link.)

Mujadara: Lentils and Rice with Crispy Onions

black lentils,

water, divided

yellow onions, diced (4 cups)

tsp kosher salt, more to taste

rice,

black pepper

Parsley or parsley flakes

Place the lentils in a small saucepan with 2 cups of the water. Bring the water to a boil over high heat, and then reduce the heat and simmer, cover until the lentils are par-boiled (10-12 minutes). Remove from the heat, drain the lentils and set them aside.

In a large saute pan with a lid, heat the oil over medium-high heat. Add the diced onions and cook until the onions are dark golden brown, darker than typical caramelized onions (about 40 minutes), sprinkle the onions with a teaspoon of salt as they cook.

Carefully pour the remaining 2 cups of water, bring the water to a boil over high heat, and then reduce the heat to low and simmer for 2 minutes. Stir the rice and par-cooked lentils into the onion mixture. Cover and bring back to a boil. Stir in a healthy pinch of salt and the black pepper. Reduce the heat to low, cover, and cook until the liquid has been absorbed and the rice and lentils are both cooked through (about 20 minutes). Remove from the heat and season with salt and pepper to taste. Serve the Mujadara hot or at room temperature with a drizzle of extra virgin olive oil and parsley garnish, if you like.

If you are adding the the fried onions, heat the oil over medium-high heat (to 375 degrees F) in a saucepan. When a small piece of onion bubbles vigorously, the oil is ready. Fry the onions in batches until they are golden brown. Transfer the onions to a paper towel-lined plate or try, and then arrange them on top of the Mjuadara.

Add a side of salad like fattoush, if you like. Enjoy!

I second so many people on this recipe. I literally didn’t expect it to be THIS good. I really took my time with the onions and it literally made the dish. So so so good. Thank you!!  One question, my finished product doesn’t have that beautiful brisk color yours has in the photo. Did I do something incorrectly?

We loved the mujadara!  I think the crispy onions added quite a bit of flavor.  I garnished the dish with pomegranate arils for color and flavor and used a bit of sumac with the Greek yogurt. Thanks for a great recipe.

I loved this recipe. If you like fried onions you will love this. The crispy onion topping is a must. Make the Instant Pot Smoky Lentils and Rice recipe (takes about 40 minutes).

Meanwhile, chop the cherry tomatoes and lettuce. Thinly slice the red onion.

Warm the tortillas*, or char them by placing a tortilla on an open gas flame on medium for a few seconds per side, flipping with tongs, until slightly blackened and warm.

Instant Pot Lentil Tacos

This Instant Pot lentils and rice recipe for the pressure cooker is easy, delicious and versatile! Both grains cook together in the pot for simple assembly.

Smoky Instant Pot Lentils and Rice (Pressure Cooker)

vegetable broth

long grain brown rice (do not sub short grain

French green lentils (also known

smoked paprika (pimentón; do not sub sweet)

fennel seeds

onion powder

garlic powder

apple cider vinegar

In the Instant Pot, place all ingredients except the vinegar and give them a stir. Lock the lid and place the vent in the “Sealing” position.

Cook the lentils

Press the Pressure Cook button (making sure the “High Pressure” setting is selected) and set the time for 16 minutes. Wait while the Instant Pot cooks. (Note: It takes about 5 minutes for the pot to “preheat” and come up to pressure before it starts cooking. During cooking, avoid touching the metal part of the lid.)

Wait for natural release

After the pot beeps, use the Natural Release method and wait another 16 minutes to let the pot cool down naturally (we set a timer so we don’t forget!). Then vent any remaining steam by moving the pressure release handle to “Venting”, covering your hand with a towel or hot pad. (Never put your hands or face near the steam release valve when releasing steam.)

Open the lid and stir in the apple cider vinegar. Taste and add additional salt as necessary (veggie broth does vary in salt content, so you may need to add more salt). Serve warm. This recipe makes quite a bit and leftovers can be re-purposed throughout the week. 

Storage info: Leftovers can be stored in the refrigerator; they do become more dry as they cool, so make sure to reheat them before serving again. Depending on the texture, consider adding a glug of olive oil for moisture.

Mujadara is a simple Lebanese lentil and rice dish with crispy onions that&#039;s packed with flavor. This lentils and rice recipe calls for only a few ingredients and is very easy to make.

Mujadara Lebanese Lentils and Rice with Crispy Onions

onions (thinly sliced)

Heat olive oil over in a pan over medium heat. Cook onions until brown and golden. Set aside.&nbsp;

Caramelized onion

Heat olive oil in a pot over medium heat. Saute onion until golden brown.

Add in lentils and cook for two to three minutes.&nbsp;

Add rice, cumin and cinnamon to the lentils. Stir well so everything is completely combined.&nbsp;

Pour water into the pot with salt, bring to simmer and let it cook for about 30-40 minutes until the lentil and rice is completely cooked.&nbsp;

Mix the lentils and rice with caramelized onion and serve with plain yogurt and salad.&nbsp;

Mujadara Lentils and Rice Recipe - This hearty vegan dish, also known as Lebanese Rice, is a favorite classic meal from the Middle East. Mujaddara is an easy and flavorful make-ahead meal, loaded with fabulous spices and topped with fried caramelized onions!

Mujadara Recipe (Lebanese Rice)

green lentils (or brown)

basmati rice

vegetable broth (or water)

coriander seeds

cumin seeds

turmeric

onions

all-purpose flour (or GF flour mix)

vegetable oil

cilantro and lemon wedges

Set a large 6 quart pot over medium heat. Add the olive oil and all spices. Sauté the spices for 2-3 minutes.

Add the dried lentils and vegetable broth. Stir well. Then cover the pot and simmer the lentils for 15 minutes.

After 15 minutes, stir in the dried rice. Cover and simmer again for 15 minutes, or until the rice is soft.

Meanwhile, set a large sauté pan over medium heat. Add the oil.

While the oil is heating, toss the sliced onions with the flour. Once hot, add the onions to the oil.

Stir and sauté the onions until they are soft, with dark crispy edges, about 15 minutes. (Shoot for medium brown. Not too dark or they will taste burnt.)

Once the rice is cooked and the onions are brown and crispy, move the lentils and rice to a serving bowl and top with the caramelized onions.

Sprinkle with fresh chopped cilantro and lemon wedges.

Mediterranean Lentils and Rice

brown lentils, (rinsed)

tomato cucumber salad, (recipe follows)

4-6 radishes, (thinly sliced)

avocado, (thinly sliced)

kalamata olives, (pitted and halved (optional))

cherry tomatoes, (quartered)

green onions, (thinly sliced)

parsley, (chopped)

juice of 1 small lemon

salt and pepper, (to taste)

Combine rice and lentils in a medium pot with 2 1/4 cups of water. Bring the water to a boil then reduce heat to a simmer and simmer until the water has evaporated and the rice and lentils are cooked all the way through. 

While rice and lentils are cooking, prepare your vegetable and set aside. 

In a small bowl, combine the ingredients for the Tomato Cucumber Salad and refrigerate until ready to use.  

Once the rice and lentils are cooked, divide into 4 bowls or plates. Top with Tomato Cucumber Salad. Add cucumbers, radishes, avocado, and olives then top with a spoonful of hummus. Serve immediately.

Recipe for Koshary: an Egyptian National Dish

chickpeas

oz ditalini (cooked according to package instructions)

tsp kosher salt

cornstarch

Vegetable oil

tbsp onions

garlic

tomato paste

tomato sauce

salt and pepper

tbsp white vinegar

cayenne pepper (optional)

vermicelli (see notes)

HOT water

cumin (optional)

salt (more

tsp black pepper

Slice onions thin. Sprinkle salt and cornstarch. Toss together. 

Add vegetable oil to a large deep pan to cover the bottom by 1-inch. Fry at 350 degree F. stirring every now and then, onions should be nice and golden brown,  Approximately 10-12 minutes. Reserve oil!

Line a plate with a paper towel. Add onions in a single layer and let drain on the paper towel. Set aside to harden.

Fried Onions

In a saucepan on medium heat add oil, and garlic. Sautè until fragrant. approximately 1-2 minutes. Be careful not to burn the garlic!

Add onions, tomato sauce, tomato paste, water, salt and pepper. Bring to a boil, reduce heat to medium-low and cover, let simmer for 15 minutes.

Tomato Sauce

In an enameled dutch oven or heavy pot on medium high heat, add oil with the fried onions, lentils, and 1 tbsp salt. Stir for 1-2 minutes. Add 4 cups water and bring to a boil. Keep heat on medium high, (it should be a gentle boil) for approximately 12-15 minutes or until the lentils are al-dente. *DO NOT DRAIN WATER.

Stir in rice, vermicelli, hot water, and additional tablespoon salt.(Option to add Cumin*) Bring to a boil, cover and reduce heat low for 12-15 minutes or until pasta is tender. Fluff with a fork.

Cumin Sauce

Koshary is all about the layering! Add the rice with lentil mixture as the base, top with cooked pasta, chickpeas, and fried onions. Drizzle with tomato sauce and cumin sauce.

A great option for serving: Arrange all the ingredients on the table and everyone can assemble with all there favorite toppings!
