Teriyaki Chicken Lettuce Wraps are made with fresh veggies, rotisserie chicken, quinoa, and Teriyaki sauce. They&#039;re nutritious, festive, and meal-prep friendly. This chicken lettuce wrap recipe is a breeze to make and fun to eat!

Teriyaki Chicken Lettuce Wraps

Avocado Oil (or preferred oil)

Carrot (grated)

Snap Peas (chopped)

Green Onions (sliced thin)

Teriyaki Sauce

Rotisserie Chicken (shredded)

Quinoa

Lettuce Leaves (see footnote for type)

Peanuts (chopped, for garnish)

Cilantro (chopped, for garnish)

Prep the lettuce wrap leaves by removing them from their core, washing, and patting them dry.

For the lettuce

Heat OIL in a 10” nonstick skillet over medium flame; add CARROTS, SNAP PEAS, and GREEN ONIONS; sauté until fragrant and tender; stirring as needed (3-5 minutes).

Fold in TERIYAKI SAUCE, ROTISSERIE CHICKEN, and (if using) COOKED QUINOA; continue heating until filling is warmed through, stirring as needed.

For the lettuce wrap filling (yields 3 cups)

Remove the filling from the heat source and allow to cool slightly.When ready, scoop about 1/4 cup filling into prepared lettuce wraps and topping with CRUSHED PEANUTS and CILANTRO.

Alternatively, you can allow the filling to cool completely and refrigerate in an airtight container until ready to use.

Assemble the lettuce wraps

Simple and so flavorful, these Thai turkey lettuce wraps have a tangy and slightly spicy peanut sauce. Spoon the filling into crisp romaine lettuce leaves for an easy and lower in carbs dinner option.

Thai Turkey Lettuce Wraps

peanut butter (all natural)

soy sauce (see note 1)

rice vinegar

water (see note 2)

sesame oil

lime juice

olive oil

onion (finely chopped)

garlic (minced)

curry

lb turkey (see note 4)

carrots (shredded)

romaine lettuce leaves

green onions

Sauce

Mix up peanut sauce- In a small jar or salad dressing shaker, add the peanut butter, soy sauce, rice vinegar, water, sesame oil and lime juice. Shake it up until smooth.

Filling

Cook the aromatics- (1) Heat oil in a large pan and add the onions, garlic and Thai red curry paste. Stir until red curry paste is heated through and mixed in evenly with the onions (2-3 minutes).

Turkey

Turkey- Add the ground turkey and cook, breaking it up with a spatula, for 5-7 minutes, until no pink remains and the turkey is cooked through.

Carrots &amp; sauce

Carrots &amp; sauce- Stir in the shredded carrots, then the peanut sauce. Stir to combine. Toss until everything is evenly coated, then set aside to cool slightly.

Serve

Serve- Spoon the filling into romaine lettuce leaves. Sprinkle with green onions and/or peanuts, and enjoy!

My whole family loves this! It is requested very often. I had never used curry paste before this, but I am so glad I went for it. The peanut butter sauce was very thin and I thought it would be watery, but it isn't at all. Trust the process! Thank you for my new family's favorite.

I used chunky peanut butter for the crunch and left it thicker sine I had moisture in the pan from the turkey and veggies. It turned out delicious!

Thanks Ben, the additional of garlic chili sauce and a couple of tablespoons of  Sriracha and an extra tablespoon of red curry paste, turned the flavor and heat up to a nice balance with the creamy richness of the peanut sauce. Definitely a keeper.

Nice recipe with a tasty sauce. Only change I will make next time I make it is to give it a little zip... Maybe some Sriracha?

Made this recipe for dinner last night and LOVED it! It was quick and easy to pull together. My meat-loving hubby liked it just as much as I did. This was my first time using red curry paste, but it definitely won’t be the last. We didn’t have as much left over as I hoped, so I’m making it again tonight 😂

Omg! Made this for dinner tonight. Amazing! So good! So healthy. (I used to the fresh ground peanut butter from fresh thyme)  Thank you for sharing this! Also, for those who don't like really spicy food (like us) do not shy away from the red curry paste. It was not spicy at all, but added an incredible depth of flavor.

This is a really great dish! Easy to make, super flavorful, and healthy. I never used to like lettuce wraps because I always thought they were boring. These ones are awesome. I'll definitely make them again and am checking out other recipes from this site. Thanks!

I made this tonight and it's good!   I liked that it's different than anything else I've eaten in a while.
I made the recipe as written except I used 90/10 ground beef (since I don't like ground turkey or chicken).  I also added some green peas near the end that I needed to use instead of carrots.  I used low carb flour tortillas because I didn't have the lettuce.   I think next time I'll try it with cabbage and make it a full meal without the wrap and maybe add some chilis or something.  It wasn't quite spicy enough for me.  But overall very customizable and tasty.  Thank you!
