Do you ever have one of those nights where you want just want everyone to sit at the table and happily eat dinner, no complaining? This Instant pot Vegetable Chow mein recipe is my go-to recipe for that night. When I make these noodles everyone gobbles them up. They are so easy to make in this instant pot!

Instant Pot Vegetable Chow Mein

Hakka noodles - 16 oz

Snow peas trimmed - 1 cup

Celery/ chopped - 1/2 cup

Cabbage / thinly sliced - 1 cup

Bell peppers /

garlic

soy sauce

sesame oil

vinegar - 1 tbsp

sriracha sauce / any red chilli sauce

In a medium bowl, add veggie broth, soy sauce, vinegar, ketchup, sriracha sauce, sesame oil, and brown sugar. Whisk until evenly combined. Taste and adjust as needed.

Homemade vegetable lo mein is the perfect replacement when carryout can't get to you fast enough!

Simple “Just Like Takeout” Vegetable Lo Mein

spaghetti noodles (ramen noodles

olive oil

frozen cube garlic

frozen cube ginger

edamame

broccoli

carrots

water chestnuts

cabbage

Lo Mein Sauce

Sauce

Sesame oil

Make the sauce by putting all the ingredients into a jar with a lid and shaking well until combined.  Set aside.

Prepare the noodles according to directions.

In a large skillet over medium high high add olive oil, garlic and ginger cubes

Stir the ginger and garlic until they have melted into the oil (about 30 seconds)

Quickly add in the edamame, carrots and broccoli and let them start cooking, stirring occasionally makin sure everything cooks evenly

After about 8-10 minutes add in the water chestnuts and shredded cabbage.

Once the cabbage begins to wilt and the rest of the veggies are cooked through, add the cooked noodles into the pan.

Pour the sauce over the the entire mixture and over medium low heat toss until everything is thoroughly coated.

Serve and enjoy!

Homemade Takout Lo Mein

Tbsp oil

Ginger, finely chopped

Garlic, finely chopped

Bok Choy or Nappa Cabbage, Stems separated and thinly sliced

Carrot, julienned

Canned baby corn, drained

Tbsp Oyster Sauce or Hoisin Sauce

Tbsp Toasted Sesame Oil

Tsp Sugar

chicken stock*

Mince your garlic and ginger and set aside

Separate out the stems from the cabbage or bok choi and slice thinly. Set aside.

Thinly slice leafy greens and set aside.

Julienne carrots and toss them in with the stems. They will cook together.

Drain the baby corn and toss it in with the stems. They will cook together.

Coarsely chop the scallion whites and toss them in with the leafy greens. They will cook together.

Add all sauce ingredients together and stir until the sugar dissolves. Set aside**

Ingredient Prep 

If you don't have a wok and a power-burner, heat a heavy-bottomed pan or cast iron skillet over high heat.

Add the cooking oil and immediately toss in the garlic and ginger. Allow the garlic and ginger to cook for 20 seconds or so until fragrant.

Add the sliced stems, carrots, and baby corn and stir fry for about 1 minute.

Add the leafy greens and scallion whites and stir fry for about 30 seconds

Turn the heat off. The residual heat will warm the noodles and sauce through without burning them

Add the noodles and toss to separate.

Add the sauce and toss all ingredients together until well combined.

Serve immediately

Lo Mein Recipe with Vegetables: Sumptuous and bold homemade lo mein noodles loaded with crispy vegetables and mixed with a savory sauce.

Homemade Lo Mein Recipe with Vegetables

all purpose flour (plus extra for dusting)

large eggs

pasta dough (recipe included)

coconut oil (or vegetable oil)

red bell pepper

yellow summer squash (small)

green onions

mushrooms

garlic (minced)

Chinese black vinegar rice

fish sauce

water

cornstarch

Pour the flour on a clean work surface. Make a deep well in the middle of the flour and crack the eggs in the center of the well. Using a spoon, gently break the yolks and stir the eggs to collect the flour around the edges. Stir in more and more flour until the entire pile of flour clumps. Then gather the clumps and knead into a ball. Knead aggressively for 5 minutes, until the dough becomes smooth and firm. Wrap the dough in plastic and allow it to rest while you prepare the veggies.

For the Pasta Dough:

Trim and slice all vegetables into thin bite-size pieces. Heat a large pot of salted water to boil the pasta and get a wok (or large skillet) out for the lo mein. Also set out a pan to hold the sauteed veggies.

Flatten the dough ball a little and cut it into 2-inch strips. Place the pasta roller attachment on the KitchenAid mixer and run each piece of dough through the roller to flatten. Lay each piece out on a floured surface. Then switch the attachment to the spaghetti cutter, and run each sheet of dough through the cutter to form thin noodles. Flour the noodles as they come through the cutter and lay them out on a floured surface. *If you don&#x27;t have these attachments you can use a countertop pasta maker, or even roll the dough out flat and cut with a pizza roller.

After the noodles are ready, heat the wok over high heat to stir fry the veggies. Place 1-2 teaspoons of oil in the wok and wait until it smokes. Then place one vegetable at a time in the wok and stir fry for 1-2 minutes moving constantly. Scoop the veggies out and place in the holding pan, then repeat with the next vegetable. You want the veggies to be bright, crisp and barely cooked, not soft and flimsy. This should take 5-8 minutes total.

Once all the veggies are cooked and moved to the pan, turn the heat to medium and place the sesame oil in the skillet, followed by the garlic and ginger. Saute for one minute, then add the soy sauce, black vinegar, fish sauce, water, and cornstarch. Whisk immediately to incorporate the corn starch then allow the sauce to thicken a little.

Start the sauce, then immediately drop the homemade noodles in the boiling pot of water. They should take only 2-3 minutes to cook. Drain well.

Once the sauce thickens, pour the drained pasta and all the veggies back into the wok. Toss and simmer another minute or two to thoroughly coat and season the pasta. Serve warm.

Cook the noodles a little less than stated on the package instructions (until just underdone), then drain, rinse with cold water and set aside.

Heat the oil in the wok over a high heat. Once hot, add the garlic, ginger, and green on onions. Stir-fry for 30 secs.

Add the stir-fry vegetables. Stir-fry for 2-3 minutes.

Add the sherry and allow to almost evaporate before adding any meat you are using and cooked noodles. Toss so that all of the ingredients are combined.

Turn the heat down to medium and add both of the soy sauces, oyster sauce, and pepper.&nbsp;&nbsp;Stir-fry for a further 1-2 then toss to combine and serve.

Shrimp Lo Mein

Combine sauce ingredients in a small bowl and set aside.

Cook noodles according to package directions. Drain well, do not rinse.

Meanwhile heat oil in a large saucepan over medium-high heat. Season shrimp with salt &amp; pepper. Add to the pan and cook just until it begins to turn pink, about 2-3 minutes. Remove from pan and set aside.

Add more oil if needed and add coleslaw mix and bell pepper to the pan. Stirfry 3-4 minutes or until it begins to soften. Add ginger and garlic to the pan and cook 30 seconds more.

Stir in shrimp and sauce. Cook until shrimp is cooked through, about 2 minutes. Add noodles and toss well to combine.

Restaurant-level lo mein, but even tastier!

Beef Lo Mein (牛肉撈麵)

tbsp oyster sauce

tbsp dark soy sauce

tbsp sugar

0.5 tbsp light soy sauce

tsp sesame oil

Prepare vegetables

Take each piece of napa cabbage and cut the stem off with two angled cuts, like an upside-down V.

Prepare beef

Trim away any tough and stringy gristle from the beef. Cut it into smaller chunks. Then, cut perpendicular to the grain of the meat, into 1/8-inch thick slices.

Create sauce

Prepare the sauce for the stir-fry by mixing together light soy sauce, oyster sauce, dark soy sauce, white pepper, sugar, cornstarch, and water.

Parboil noodles

Stir-fry beef

Heat your wok on high. While the wok heats up, add oil to the marinated beef and give it a quick mix.

Plate & serve

Scoop everything out onto a large serving dish, and enjoy!
